I think the most hilarious place to put Post-Canon Sokka would have been the university at Ba Sing Se. I think he would have made a great unhinged professor. Also, in true Sokka fashion, he should have completely dodged fame. Momo is more famous than he is.
He wants to demonstrate to the class how this thing called electricity works, so he's going to be bringing in a Firebender, so everybody be cool, we're all friends here... and in walks Princess Azula of the Fire Nation. One-time conqueror of the city. One of the students is currently writing an essay on how her brief rule of the city affected fruit trade. She says she considers the class to still be her subjects as she doesn't acknowledge any pretenders to any of her thrones, but for now you're exempted from bowing and "Your Highness" will do. It's a really interesting lecture.
"Okay, guys - hey, listen up, everyone - I won't be here next week, me and Aang are going to-" yeah right, sure, Professor Sokka knows the Avatar. Except, of course, the Avatar walks in sheepishly and says that Appa might have gotten into Sokka's hybrid crops, and then you all have to sit there and watch your professor chase the Avatar around with a sword.
One postgrad student is specializing in Water Tribe Cultures. She's currently studying the massive cultural shift that happened in the Northern Water Tribe at the end of the war - oh, and Professor, I absolutely know that you're from the Southern Water Tribe, but it's just that the shift started with Master Katara, and of course I don't think that every person from the South knows one another haha it's just that I need to ask her some questions and I thought maybe you could help me write a letter or write a letter of introduction or...
Sokka looks at her blankly and goes "yeah, she's my sister. KATARA!" which is followed by a faint answering "fuck you!" from Somewhere and to the horror/elation of our postgrad, Master Katara bursts in and is promptly beaned in the head with a rock by Professor Sokka. Her brother. her hero and her professor are siblings and currently brawling on the floor.
Sokka does not teach or study history, but he does sometimes sit in on lectures about recent history. Whenever he does, several doctoral students flock in to sit near him (even if it's an intro course) so that they can eavesdrop on his grumbling. (No matter how they try, an "overheard utterance" is not a valid source according to their professors. No, we have no sources on the Avatar's bison taking part in combat - sky bison are not war animals and...)
He gets regular deliveries with the Beifong family crest on them, and he goes "sweet, Toph must have found some new minerals" and at this point nobody needs to ask which Toph. He seems to have friends everywhere, literally everywhere. Wang was headed out to this massive swamp to study if it's one big organism, and Sokka told him to find some guy named Hue and "don't mind the loincloth." One time the university gets shut down because the Earth King wants to visit. Oh, visit the University? What an honor- Of fucking course not, he wants to visit Professor Sokka, who yells at him and his royal guards for interrupting his day. The Earth King and his many, many royal guards then sheepishly say sorry and file out.
The last straw is when - not a week after he yelled at the Earth King - the assistant head of the Political Science dept walks in to the faculty lounge to find Sokka having tea with a nice normal man dressed in Earth greens for once, and can't resist a little joke. "Let me guess, you're having tea with the Fire Lord." And then she can instantly tell that she fucked up, because both of them go stock still.
So when the two men awkwardly stand up and proceed to introduce the Fire Lord whose portrait she has in her office because she is the assistant head of Political Science as Li, a server at the Jasmine Dragon, she just says "hello Li" and leaves to find a bottle of something strong.

A wizard that regularly breaks into the gem shop where magical gemstones are cut from rough stone into their more commonly known sparkly faceted shapes - but he doesn't steal any of them. He sweeps the floor. Bags the stone crumbs and shards and dust he sweeps up. Breaks out again. The goblins who run the gem shop never bother to investigate why the floor just cleans up on its own, they assume that they've got a house elf or something.
So the wizard takes the shards and all, and grinds them all into evenly sized teeny tiny crumbs, and mixes them all together. The magic gemstone chips and crumbs become something new: magic pocket sand. Nobody knows what it'll do to you if he throws it at you. Least of all him.

I need to sit down and actually watch this show at some point
crazy that gravity falls was like, hey what if we made twin brothers, and one of them is the worse one. he gets bad grades, he likes to punch his problems, everyone thinks of him as “the other one.” he’s engulfed in a shadow that’s shaped like him. he doesn’t even have his own name—it’s derived of his brother’s name, the only one his parents planned on having and using. everything about him is derivative—imitative of another person (his twin brother) (the one everyone likes and wants) and is disapproved of for that reason (he isn’t just “bad at this thing,” he’s “not as good as his brother”). and then he ruins his brother’s science fair project (the one next to his own—no one noticed it because it’s not good, it’s almost stupid next to a “perpetual motion machine” made by a high schooler) (he tried to fix it) (he doesn’t know how; he’s not as smart as the guy who made it) and he gets kicked out. the potential of the money his twin could’ve made is enough to throw him onto the street, and he can’t go home until he makes that money back (the money that was never gained and therefore was never lost. he never had a chance of making enough). he took every job he could (his brother went to school). he got banned from multiple states (his brother bought a house). he traveled internationally and went to prison and had people try to hunt him down and kill him because he couldn’t make enough money (his brother’s house has three basements. he made them himself, as secure as can be). and when his twin finally summons him for help, things go wrong (he messed up this machine like the last one) (he doesn’t know how to fix it. he isn’t as smart as the guy who made it) (he tries to fix it) (he was never any good at reading and these blueprints are impossible, coded and fragmented and in a science that he didn’t know existed) (he tries to fix it). the townspeople ask who he is, and he doesn’t even say his own name (it was hardly his to begin with). and he invites them to a house that isn’t his to show off experiments that aren’t his because he needs to make money that can’t be his. everything he does for the next 30 years is in his twin’s name, for his twin’s sake. he had two funerals for himself and it isn’t even his body in the casket; he had to wear his brother’s name to both of them. if he had died before he fixed the portal, that funeral wouldn’t have been for him. we meet him as a funny and unique character, but in-universe, he’s only ever been defined by someone else.
and then they went, this is entirely in the background btw. most of that is going to be revealed in one episode and won’t be addressed again. he’s a primary comic relief, even. I’m ill about this.

Whenever I think about students using AI, I think about an essay I did in high school. Now see, we were reading The Grapes of Wrath, and I just couldn't do it. I got 25 pages in and my brain refused to read any more. I hated it. And its not like I hate the classics, I loved English class and I loved reading. I had even enjoyed Of Mice and Men, which I had read for fun. For some reason though, I absolutely could NOT read The Grapes of Wrath.
And it turned out I also couldn't watch the movie. I fell asleep in class both days we were watching it.
This, of course, meant I had to cheat on my essay.
And I got an A.
The essay was to compare the book and the movie and discuss the changes and how that affected the story.
Well it turned out Sparknotes had an entire section devoted to comparing and contrasting the book and the movie. Using that, and flipping to pages mentioned in Sparknotes to read sections of the book, I was able to bullshit an A paper.
But see the thing is, that this kind of 'cheating' still takes skills, you still learn things.
I had to know how to find the information I needed, I needed to be able to comprehend what sparknotes was saying and the analysis they did, I needed to know how to USE the information I read there to write an essay, I needed to know how to make sure none of it was marked as plagerized. I had to form an opinion on the sparknotes analysis so I could express my own opinions in the essay.
Was it cheating? Yeah, I didn't read the book or watch the movie. I used Sparknotes. It was a lot less work than if I had read the book and watched the movie and done it all myself.
The thing is though, I still had to use my fucking brain. Being able to bullshit an essay like that is a skill in and of itself that is useful. I exercised important skills, and even if it wasnt the intended way I still learned.
ChatGTP and other AI do not give that experience to people, people have to do nothing and gain nothing from it.
Using AI is absolutely different from other ways students have cheated in the past, and I stand by my opinion that its making students dumber, more helpless, and less capable.
However you feel about higher education, I think its undeniable that students using chatgtp is to their detriment. And by extension a detriment to anyone they work with or anyone who has to rely on them for something.

A good rule of thumb for AI is "would you trust a trained pigeon to do this?"
"We trained a pigeon to recognise cancerous cell clusters and somehow they're really good at it" okay great, that's something that could plausibly be a thing.
"We trained a pigeon to recognise good CV:s and left it in charge of sorting through all our job applications" uh perhaps consider not doing that.

So I've been playing modded Minecraft and I added the Vampirism mod to it, and for the most part it's great.
I sleep in a coffin
I am awake overnight and sleep in the day
I can feed on villagers or creatures
I can level up as a vampire and get stronger but things like sunlight hurt more the more powerful I get
But dear god.
DEAR GOD.
I do NOT like the horrendous fucking SLURPY SOUNDS it makes when I have to feed on random villagers
