ALMOND LOVE KNOTS COOKIE RECIPE

Ingredients
1 ½ cups all-purpose flour
½ cup almond flour
½ cup confectioners' sugar
¼ teaspoon salt
¾ cup cold butter, cut into small pieces
1 large egg, separated
½ teaspoon vanilla extract
¼ teaspoon almond extract
3 tablespoons ice water
3 tablespoons turbinado sugar (such as Sugar in the Raw®)
Directions
Blend all-purpose flour, almond flour, confectioners' sugar, and salt together in a food processor. Add butter; pulse until mixture resembles coarse crumbs. Add egg yolk, extracts, and ice water and pulse just until a smooth dough forms.
Turn dough out onto a work surface, divide in half, form into disks, and dust each disk with flour. Wrap disks in plastic wrap and refrigerate until firm and cold, at least 1 hour to overnight.
Preheat oven to 325 degrees F (165 degrees C). Line 2 baking sheets with parchment paper.
Roll 1 dough disk out onto a floured surface with a floured rolling pin to 1/8-inch thickness. Use a floured 1 1/2-inch round cookie cutter to cut dough into rounds. Cut out the center of each round with a 1/2-inch floured round cookie cutter to form rings. Repeat with remaining dough disk.
Cut through side of 1 dough ring and slip it around another to intertwine rings, pressing cut pieces together to seal ring. Place interlocked rings on prepared baking sheets.
Beat egg white until frothy. Gently brush each "love knot" with egg white and sprinkle with turbinado sugar. Bake in the center of the preheated oven until lightly browned on the edges, 15 to 18 minutes. Carefully transfer cookies to a wire rack to cool completely.

Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 1/2 cups chopped dates. 1/2 cup chopped walnuts or pecans.
Instructions: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then add the vanilla extract and mix well. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Fold in the chopped dates and chopped walnuts or pecans. Cover the cookie dough and refrigerate for at least 1 hour or overnight. Preheat the oven to 375F 190C and line a baking sheet with parchment paper. Roll the chilled dough into 1-inch balls and place them on the prepared baking sheet. Using your thumb or the back of a spoon, make an indentation in the center of each cookie. Fill each indentation with a small amount of date filling see note. Bake the cookies in the preheated oven for 10-12 minutes or until lightly golden. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Red Velvet Valentine Cookies
Makes 20 cookies
Ingredients
1/2 cup + 1 tbsp unsalted butter (125g) *room temp
1/2 cup brown sugar (100g)
1/3 cup sugar (75g)
Large egg
1 tsp vanilla extract
1+1/2 tsp or more of red food coloring
1+2/3 cups flour (200g)
1/2 to 1 tbsp cocoa powder (9 to 15g)
1 + ½ tsp baking powder
½ tsp baking soda
A pinch of salt
White chocolate for the “hearts” or white chocolate chips
Instructions
Using a stand mixer or an electric hand mixer, cream butter and sugars until fluffy.
Add in the egg, vanilla and a little bit of red food coloring, and mix until combined, remember to scrape the bowl down and mix again.
Mix in the flour, cocoa powder, baking powder, baking soda and salt. *If you’re JUST using white chocolate chips (not making the hearts) mix them in the dough in this step*
Roll the dough into 20 cookie dough balls (around 1+½ tbsp each one).
Let the cookie dough balls rest in the freezer for about an hour or in the fridge overnight.
Preheat the oven to 356F/180C.
Carefully transfer to a baking sheet with parchment/wax paper and bake for 9-12 minutes.
While the cookies are baking, make the chocolate hearts using melted white chocolate and a heart shaped silicone mold, leave them in your freezer (I found these silicone molds on amazon and they have the one I used).
Once baked, leave them to cool on the tray for about 15 minutes and after that you can add the heart chocolates.
Let them cool for 10 minutes more and ENJOY!
