Seared Scallops with Lemon Garlic Butter Indulge in the delightful taste of perfectly seared scallops drizzled with a zesty lemon garlic butter sauce. This dish is a quick yet elegant option for any seafood lover. Ingredients 1 1/4 lb sea scallops side muscle removed 1 1/2 tablespoons olive oil or canola oil 3 tablespoons butter 1-2 cloves of garlic minced 2 tablespoons fresh lemon juice 2 teaspoons chopped fresh parsley or other fresh herbs Salt and fresh ground black pepper Instructions Pat the scallops dry with paper towels and sprinkle with a pinch of sea salt just before cooking. In a large sauté pan or cast iron skillet, heat olive oil and 1 tablespoon of butter over medium-high heat until hot and nearly smoking. Add the scallops and sear for 1 1/2 to 2 minutes on each side until they develop a golden crust. Avoid overcrowding the pan; cook in batches if necessary. Once cooked, remove scallops to a plate. Carefully wipe out the skillet, then add the remaining 2 tablespoons of butter over low heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the lemon juice and return the scallops to the pan. Warm the scallops for 1-2 minutes, turning several times to coat them in the lemon butter. Sprinkle with parsley, salt, and pepper to taste, and serve immediately.

These vegan black bean burgers are a quick and tasty way to eat during the week. They are tasty and full of protein, so both vegans and non-vegans can enjoy them for dinner.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 1/4 cup finely chopped bell pepper. 2 cloves garlic, minced. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste. 2 tbsp olive oil. 4 whole wheat burger buns. Lettuce, tomato, and vegan mayo for garnish.
Instructions: In a large bowl, mash the black beans with a fork or potato masher. Add breadcrumbs, chopped onion, bell pepper, minced garlic, cumin, paprika, salt, and pepper. Mix well to form a thick mixture. Divide the mixture into four equal portions and shape them into burger patties. Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side, or until they are golden brown and crispy. Toast the whole wheat burger buns in the pan until they are lightly browned. Assemble your vegan black bean burgers with lettuce, tomato slices, and a dollop of vegan mayo. Serve hot and enjoy!

Ingredients: 4 boneless, skinless chicken breasts. 1/2 cup honey. 1/4 cup soy sauce. 2 tablespoons minced garlic. 1 tablespoon olive oil. 1/2 teaspoon black pepper. 1/4 teaspoon salt. 2 tablespoons chopped parsley optional, for garnish.
Instructions: Preheat oven to 375F 190C. In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, black pepper, and salt. Place chicken breasts in a baking dish. Pour honey garlic mixture over the chicken, making sure it's evenly coated. Bake in the preheated oven for 25-30 minutes, or until chicken is cooked through, basting occasionally with the sauce. Ingredients: 2 tablespoons vegetable oil. 1 pound boneless chicken breasts, sliced into thin strips. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 cup broccoli florets. 1 cup snap peas. 1/4 cup soy sauce. 2 tablespoons oyster sauce. 1 tablespoon honey. 1 teaspoon ginger, minced. 1 teaspoon cornstarch dissolved in 2 tablespoons water. Salt and pepper to taste.
Instructions: Heat the vegetable oil in a big skillet or wok over high heat. Cook the chicken slices for two to three minutes, or until they begin to brown. Add the ginger and minced garlic, stir, and cook for an additional minute. Add the onion, snap peas, broccoli, and sliced bell peppers. Stir-fry the vegetables for 34 minutes, or until they are crisp-tender. Combine the soy sauce, oyster sauce, honey, and cornstarch mixture in a small bowl. After pouring the sauce over the stir-fry, combine all the ingredients. Cook until the sauce thickens and coats the ingredients, about 2 more minutes. To taste, add salt and pepper for seasoning. Serve hot atop noodles or cooked rice. Savor your tasty and quick 10-minute stir-fry!
