In the spirit of giving I have decided to share with you all my secret clam chowder recipe. It's quite good, and I hope some of you try it and tell me what you think of it.
Required equipment:
A large pot (at least 6 1/2 quarts)
A heavy bottomed sauce pan (at least 6 cups)
Long flat stirring tool
Ingredients:
5-8 potatoes (~2 pounds)
5 stalks celery (~0.5 pounds)
5 cloves garlic
1 whole onion
1 lb bacon
~40oz/1100grams canned clams
3 1/2 cups water
1/4 cup chicken bullion
3/4 cup flour
1 1/2 sticks butter
4 cups half and half
Ground black pepper
Step 1: Chop the potatoes and celery into bite sized pieces and put them in a large bowl for later. Skin and dice garlic and onion, that goes in a separate small bowl. Finally chop the bacon and put it directly into your pot.
Step 2: Cook bacon at 270 F (medium) in the pot until crispy. While this is happening, start straining the clams into a container. You will need both the clams and the juice.
Step 3: Remove bacon (set aside for later) and pour out most of the grease (not into the sink if you don't know that already) dump in garlic and onions, cook at 210 (medium-medium-low) until onions are semi-translucent.
Step 4: Add veggies, clam juice, water, and bullion to the pot. Turn to 425 (high) and wait for it to come to a boil while stirring every so often. Once at a boil, turn to 350 (medium-medium-high) until the veggies are tender and no longer crunchy (test with a fork). Then cut the heat and set the main pot aside.
Step 5: In the saucepan add butter and melt completely at 200 F. Then add flour and mix and melt until there are no clumps. Finally add half and half and turn to 250 and mix often until it's homogeneous and about the consistency of melted cheese. The end result is a roux if you want to look up what it's supposed to look like.
Step 6: Dump roux into main pot and mix at 250 about a minute until it's fully incorporated. Add clams and heat for another 5 minutes. Finally add the bacon and generously add pepper to taste.
I personally just eat a bowl or two of this stuff on it's own but if you wish I'm sure it would pair well with some crackers, perhaps some sort of bread.
The chowder can just be kept in the fridge and leftovers can be reheated easily in the microwave.
Important safety addendum: Do not make this if you are allergic to any of the ingredients. Also do not add corn to this dish because that will mark your sould for eternal damnation in the afterlife.

Side Salad
What we have Cooking
:Chicken Thigh:
Cooked in a pan over medium/high heat w/ a small amount of Vegetable Oil & Butter
Season w/ Salt & Black Peper {You can add whatever seasonings you wish, I wanted to keep this chicken simple for the Mushy Peas is the fresh spring flavor I am going for w/ his dish.}
Cook on both sides till 165 ℉/ 75℃. { I like to finish it off in the air fryer just to be safe. }
:Mushy Peas:
In a pot, Cook Frozen Green Peas w/ just enough chicken broth to hardly cover the peas.
Add in Garlic {2-4 Cloves} Cook until Soft.
W/ a hand immersion blender { Or a regular stand blender} Blend together in the pot.
Slowly add Heavy Cream until desired consistency.
Blend in Salt, Black Pepper, & Ground Parmesan Cheese.
:Roasted Red Potato:
Wash Potatoes
Cut potatoes into medium size chucks.
Add to pot filled w/ water & salt {This is ONLY to cut cooking time down, it will be more crispy & flavorful if you skip this step.} Boil till semi-soft.
Drane Water, Transfer into Pan w/ a small amount of Vegetale Oil.
Dice up 1/2 a Yellow Onion & 2-4 Garlic Cloves. {Cook till translucent}
-: If you want it to be crispier, try transferring it to the air fryer and cook @ 400℉ / 204℃ for 10-18 minutes :-
:Side Salad:

I tried out Meal Prepping this week. I think this is a great way to NOT order off of Delivery Apps for everyday food.
I find myself forgetting to pack/make a lunch when I go to work. I work long days & this is hurting both my wallet & my body.
I don't know if I will have the spoons to do this every week on routine, but I am going to try.
I find it hard at times to remind myself to eat. Not because I'm avoiding food, but because I get distracted easily & tunnel focus on tasks & nothing else can be done before this one is.
I made up a small menu for myself.
Stuff I ACTUALLY want to eat.
This Chicken Dish is one of the three meal options I made, just to give myself some variety to choose from.
I am hoping this can help feed my body in nutrition & flavor.
It is hard to juggle ever day things, including feeding yourself. So, whatever you need to do to get that task done, do it! Try different things out!

Another custom set, this one for a Kalashtar character with a homebrewed subclass. Client sent me some really beautiful character art that served as inspo for the colour theme, along with their character's story. We went for strong on the iridescence alongside a gold, aqua and cool purple colourway. I ended up really loving the aqua particularly in this set, which isn't a colour I've used much in the past. It's a semi-translucent pigment which can be tricky alongside more translucent colours, but used sparingly it still lets the iridescent inclusions shine through. Helpy's Cheesy Beef Empanadas
Ingredients: - 1 pound ground beef - 1 tablespoon olive oil - 1 small onion, finely chopped - 2 cloves garlic, minced - 1 teaspoon ground cumin - 1 teaspoon paprika - 1/2 teaspoon chili powder (adjust to taste) - Salt and pepper to taste - 1 cup shredded mozzarella cheese (or any melting cheese) - 2 packages refrigerated pie crusts (4 crusts total) - 1 egg, beaten (for egg wash)
Instructions: 1. Preheat your oven to 375°F (190°C). 2. In a skillet over medium heat, add olive oil and sauté the onions until translucent. Add garlic and cook for another minute. 3. Add the ground beef to the skillet and cook until it's browned, breaking it up as it cooks. 4. Stir in the cumin, paprika, chili powder, salt, and pepper. Cook for a few more minutes until the flavors meld. Remove from heat and let it cool slightly. 5. Unroll the pie crusts and use a round cutter or a small bowl to cut out circles. 6. Place a spoonful of the beef mixture on one half of each circle, leaving space around the edges. Sprinkle some shredded cheese on top. 7. Fold the dough over the filling, creating a semi-circle shape. Use a fork to press and seal the edges. 8. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish. 9. Bake for about 20-25 minutes or until they're golden brown. 10. Allow them to cool slightly before serving. Enjoy!
Feel free to adjust the seasonings or add extra ingredients like diced peppers or olives for more flavor!

Salmon, Courgette and Pea Risotto

The ceaseless rain and grey skies which has consistently been the weather this past weeks made me crave hearty, comforting, and even yes, warming meals. And this Salmon, Courgette and Pea Risotto is comforting, but also lighter as I was out of cream and thus used milk instead! A tasty, heartwarming dinner for your rainy Summer nights! Happy Friday!
Ingredients (serves 3 to 4):
1 tablespoon unsalted butter
1 tablespoon olive oil
1 large shallot
1/2 teaspoon dried dill
1 small courgette, rinsed
1 garlic clove, minced
1 3/4 cup arborio rice
1/3 cup dry white wine (such as Chardonnay or Sauvignon Blanc)
1/2 teaspoon coarse sea salt
1 teaspoon freshly cracked black pepper
2 cups Octopus Broth, warmed
2 cups semi-skimmed milk
1 cup frozen green peas
Parmesan
200 grams/7 ounces fresh salmon fillet
In a large pot or saucepan over a medium-high flame, melt butter with olive oil.
Peel and finely chop shallot. Add chopped onion to the pot when the butter is foaming. Cook, a couple of minutes.
Stir in dried dill. Cook, 1 minute.
Halve and dice courgette.
Add diced courgette to the pot, and cook, about 3 of minutes, until browning. Stir in minced garlic, and cook, 1 minute more. Then, stir in arborio rice and coat well in fat and herbs until translucent. Deglaze with Chardonnay. Season with coarse sea salt and black pepper.
Cook, stirring often, and gradually adding warmed Octopus Broth, and then milk, until rice is cooked and most of the liquid is absorbed, about 25 minutes. Stir in frozen green peas.
Grate in about 1/2 cup Parmesan, stirring until melted, and coating the rice beautifully.
Remove the skin from the salmon fillet, and cut into chunks. Add salmon chunks with the last of the milk. Cook, stirring often, about 5 minutes more, until salmon is cooked.
Serve Salmon, Courgette and Pea Risotto hot, with a glass of chilled Chardonnay.

In 2022 we shared our new #BrailleDice design created with Die Hard Dice for mass production. We’re excited to say after 2 years filled with countless tests & quality checks, they’re officially done 🤩
#AccessibilityInTabletop is about to change in a big way! So what’s next?

Now that we have fully approved samples in hand we are ready to start mass production. We will not be utilizing any type of crowdfunding platform, instead choosing to create different charity based fundraising initiatives that connect us with the TTRPG community more directly.

In the next few weeks we will share information about our upcoming partnerships, fundraisers, community events, and more! Once we hit our minimum fundraising goal of $20,000 we will be able to get our first batch of both acrylic AND hollow metal dice in production!

Our initial offerings will be for two styles: Acrylic dice in a color called Molten Bronze; metallic bronze (brownish-gold) with swirls of pearlescent dark bronze. The other is hollow metal dice in Silver Ingot; a silver metal with a semi-translucent black antiqued finish.

Both the acrylic and the hollow metal sets are about the same size and weight as a standard plastic set, the d20 being the only one that is about twice the size. All sets will come in a metal tin, similar to how Die Hard Dice sells their metal sets.

Should we surpass our minimum fundraising goal for mass production, we will have the option of producing more colors! We intend to have many standard single-color pearl acrylic colors as well as a few different hollow metal colors. Let’s see what we can do!

Once the dice are produced, they will be available for purchase through our website as well as Die Hard Dice. We will also be working to make them available to wholesale customers if we have appropriate quantities in stock.

Japanese Curry Bolognese
Ingredients
Curry
6 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 tablespoon Japanese curry powder
1/2 teaspoon ground cumin
1 teaspoon ground cinnamon
1 tablespoon kosher salt
2 teaspoons light brown sugar
2 teaspoons white or yellow miso
3 tablespoons tomato paste
1, 13 oz can of coconut milk (about 1 2/3 cups)
1 teaspoon rice vinegar
1/2 cup water
1 large carrot (or two small to medium carrots), finely diced
1 large onion (or two small to medium onions), finely diced
1 pound ground pork
Pasta
1 pound dry spaghetti or noodle of your choice
Toppings
Scallions, finely chopped
Dill (optional)
Sesame seeds
Extra flaky salt and pepper for seasoning
Prep
Prep curry
In a large pot on medium heat, melt butter then add flour to the butter and mix until smooth and lightly browned, around 2-3 minutes or so. Add the remaining Japanese curry powder, cumin, cinnamon, kosher salt, sugar, miso, tomato paste, coconut milk, rice vinegar, and water
Continue to cook and stir until all the ingredients are incorporated and the curry mixture is smooth, then pour curry into a separate container and set aside. Wipe down the pot so you can use it for cooking the vegetables next.
Make curry bolognese
In a clean pot on medium high heat, sauté diced onions and carrots in a generous drizzle of olive oil. Cook until the onions are semi-soft and translucent, about 5-7 minutes. Add in ground pork and continue to cook until the pork becomes light brown in color. Add the curry sauce back into the pot and stir until incorporated. Bring the pot to a boil, then reduce the heat and let it simmer covered for 20 minutes.
Make pasta and assemble
Cook pasta according to package instructions. Strain the pasta place into bowls. Once the curry bolognese is ready, remove from heat adjust any seasonings like salt or acid. Ladle sauce onto the bowls of pasta and mix. Top with scallions, dill (if using), sesame seeds, and serve

Punjabi Dhabha Style Kadai Paneer Step by Step Recipe

Kadai Paneer is a spicy, semi dry restaurant style curry that goes well with roti, naan, paratha or khatti rolls. Make it at home with my step by step recipe and impress your guests! To get the authentic restaurant-style smoky flavour, do not skip smoking the onions and bell peppers. This method is easy and quick as mentioned below. 1. Marinate the Paneer Wash 8 oz (250 g) paneer and cut it into 1-inch cubes. Peel and dice 1 large onion. Finely chop 2-3 green chilies. Dry roast coriander seeds and kashmiri red chilli until nice aroma releases, for around 1 minute on medium flame. Add these to a blender or food processor and grind to make a fine powder. This is your kadai masala. Toss the marinaded paneer and veggies in a large bowl and mix well to coat all pieces evenly. Cover and keep it in the refrigerator to marinate for 30 minutes. 2. Saute the Onions and Bell Peppers For a semi dry kadai paneer add 3 to 4 tbsps of fresh cream towards the end. This will make the dish richer. In a kadai heat 2 tbsp oil and add 1 bay leaf, 2 pods cardamom, 1 inch cinnamon and 2 cloves. Saute until the spices become aromatic. Now add chopped onions and green chillies slit. Saute until the onion turns golden brown. Add the prepared kadai masala and salt. Saute on a low flame for a few minutes. Then add tomatoes and saute till they are soft. Lastly, add turmeric, chilli powder and garam masala. 3. Add the Tomatoes A blend of aromatic spices including panchpuran, coriander, cumin, red chili, turmeric, fenugreek and garam masala lend a distinct flavour to this dish. If using store-bought paneer, make sure to soak it in water until soft before adding it to the gravy. Heat oil in a kadai (or a pan) and saute the onions until they are light pink or translucent. Add the ginger and garlic paste and cook until the raw smell goes away. Now, add the tomatoes and salt. Mix well and cover the kadai and cook for 3-4 minutes. Garnish with fresh cilantro leaves and serve with naan or paratha. 4. Add the Paneer Paneer is a firm, non-melting cheese. It’s best to use homemade paneer, but if you’re short on time, you can also buy frozen paneer cubes. Add the paneer and saute on a medium flame until it becomes tender (should take less than 2 minutes). Adding the paneer at this stage helps to retain its texture. Toss it well with the vegetables. Add crushed kasuri methi and ginger julienne (1 inch piece) towards the end and turn off the heat. This infuses the dish with a fresh, zesty flavour. Serve kadai paneer with naan, roti or pudina paratha to enjoy it in all its glory. 5. Add the Kadai Masala Kadai Paneer is a semi-dry Indian dish made with Indian cottage cheese (paneer) and mixed peppers in an onion tomato gravy that has a freshly ground spice mixture known as Kadai Masala. It is one of the easiest restaurant style paneer recipes to make at home. Tip – Use fresh paneer to get the best flavor and texture for this recipe. If you don’t have any at home, then frozen paneer works just fine too (refresh it in hot water before using). Dry roast all the spices in a skillet for 3-4 minutes on medium heat until lightly browned and fragrant. Let them cool down and then grind to a powder. 6. Add the Fresh Cream Kadai Paneer is a semi-dry curry that's mildly spicy and uses a special kadai masala powder. The whole spices are dry roasted and ground to make this unique masala which gives this dish its distinct flavor. Adding fresh cream makes it creamy and adds to the overall taste of this recipe. You can also use butter or ghee instead of the cream if you prefer. Toss in the fried paneer cubes, garam masala and crushed kasuri methi (fenugreek leaves). Mix well and switch off the heat. Serve this kadai paneer with phulkas or parathas. Enjoy! If you want a smoky flavor to this recipe then smoke the onions and bell peppers on high flame before using them. 7. Add the Ginger Juliennes To finish the dish add some chopped coriander leaves and ginger juliennes. This gives it a nice freshness and the flavours are rounded out well by this addition. Then serve the kadai paneer gravy with some roti or naan and enjoy the taste of dhaba style restaurant quality kadai paneer at home. This kadai paneer recipe uses freshly ground kadai masala but you can also buy the spice powder at stores if you don't have it on hand or want to save time. However, dry roasting the spices at home and grinding them yourself gives it a much richer flavour. 8. Add the Coriander Leaves Paneer Kadai is a spicy curry that uses a lot of spices to give it its authentic and robust flavor. It also includes a little bit of ghee, which adds to the richness of the dish. For best results, use homemade paneer. However, store-bought paneer works just fine in this recipe as well. It just may need to be soaked in hot water for a few minutes before using. To prepare the kadai masala, dry roast coriander seeds and red chilies in a frying pan. Once roasted, grind them into a coarse powder. This will give the kadai masala its distinctive, restaurant-style flavor. 9. Add the Garnish If you want to enjoy kadai paneer in a restaurant style, try giving it a slight smoky flavor by adding some charcoal dhungar. It adds a wonderful aroma and enhances the taste of the dish. Dry roast the spices mentioned under ‘Kadai Masala’ over low heat until aromatic and lightly brown. Let them cool down and grind to a coarse powder in a spice grinder. Do not skip this step as it adds the key flavor to this recipe! Use homemade paneer if possible, but store-bought works fine too.
