Thai food in Fairbanks
For anyone who ever visits Fairbanks Alaska (or you already live here and don't know) LemonGrass Thai Cuisine is one of the best places to go for vegan food! Seriously, it's amazing. They have three pages of vegetarian food and they are willing to make anything vegan. It even says in big, capital letters that they will. Not only do they have vegetables and organic tofu as options, they also have textured vegetable protein. They clearly list which foods contain fish sauce and/or shrimp seasoning so you can ask them to keep it out and they put the word 'egg' in bold letters whenever it's listed in the ingredients. One of my favorite things about the place is that they use locally grown vegetables. Above all, the food tastes. I hadn't been there in a very long time and when I went there for dinner tonight, I was highly impressed. Just wanted to share because it's so hard sometimes to find good vegan food when eating out.

Found these big white button mushrooms at the store and made a yummy gravy with them to go over fresh mashed potatoes. I left some of them whole and ate them like little mushroom steaks.  I'm a huge fan of putting cracked black pepper and fresh dill in my mashed potatoes. What about you? Also, am I the only person who peels my mushrooms?

I think I have an addiction.
Broccoli.
I've been eating it at least once a day. Steamed or raw. Tonight's dinner was steamed broccoli over couscous made with diced portobello mushrooms. I sprinkled red pepper flakes on top which is my favorite way to eat broccoli.

Buying car parts today wasn't the best experience of my life. At one store I was called "cute" for fixing a car. A, I'm not the one fixing it, and B, if I were, why would that be "cute"? At another store Iw as told that I would be a very pretty person if it wasn't for my nose ring. I promptly told the guy he'd be a very person if he wasn't such an asshole. At least I have car parts and I can hopefully get my car fix.
Anyone else go through this kind of stuff?

Do people other then us Alaskans use Ulu knifes? I love this tool. The board has a slight dip to it and you rock the knife back and forth. It’s really sharp and great for cutting veggies. Works fine with a regular chopping board as well and I even use it to cut small personal sized pizzas!
So, do you use one and if so, what for?

Last night's dinner from Lemongrass in Fairbanks Alaska. Green Thai curry with zucchini, red peppers, greens, and tofu with mango on coconut sticky rice for dessert. Divine!

Not the healthiest dinner, but very tasty. Homemade mashed potatoes seasoned with black pepper and dill on top of lightly oven toasted sprouted grain bread and smothered in homemade mushroom gravy.

I used soy sauce in place of amino acids and an organic no-chicken broth in place of the veggie broth.

Ohio?
Recently found out I am headed to Ohio for two weeks at the end of December/beginning of January. I have never been there and don't know anything about the vegan scene. I will be about 40 minutes away from Cleveland (Chagrin Falls) and we plan to go into the city often. I will be staying with my roommate and his mom who are both non-veg. But she is greatly looking forward to trying new things and going out to some places. He is not quite as adventurous. So I am looking for places that might have something he can eat too. But I am sure her and I will go out a few times on our own, so any ideas would be appreciated! While I am there, any fun non-food places I should try to visit?
