trying out this fine offering from one of the first web-based (provincial) roaster. seriously, local coffee farms are really stepping up... and i won't be be surprised if we are able to compete internationally in the near future. 🙂 coffee notes: similar to the BACOFA lot, these beans are pleasantly fragrant. the initial pour gave off a rather nutty/slightly fruity aroma, resulting in a black tea-like cup, quite sweet and reasonably bright, with dried fruits and prune notes. the cup ends with a smooth finish with a tinge of tobacco aftertaste. 👍 This Week's Local Beans: Bagobo Tagabawa Farmers Association - BATAFAMA processed by Paramount Coffee (Natural), Sitio Neptune, Bansalan, Davao del Sur, Philippines from @arabigocoffeeroastery https://www.instagram.com/p/CFdaiernR65/?igshid=vey24ovbllxj

one of the most exquisite beans to grace my brewbar... thanks to @uggycafe for this brewdol. 😅 coffee notes: these beans are fragrant - with dried tropical fruit scent. the initial pour gave off a light fruit aroma that produced a complex tea-like cup, very sweet and silky, with a pleasant honeydew/watermelon, jasmine, and caramel notes. the notes are sustained 'till the cup cooled, and the cup ends with a silky finish. a lovely elegant cup. 😻 This Week's Special Beans: Hacienda la Esmeralda Private Collection (Geisha Natural), Palmira, Boquete, Chiriqui, Republic of Panama from @kaffa_oslo https://www.instagram.com/p/CFLX-iXHxGu/?igshid=imuh7vukeolv

opening one of the my coffee tonya stash... and i have two nicaraguan beans at the brew bar right now. 🙂 coffee notes: i forgot that as with most japanese roasters, coffee tonya tends to roast on the darker side. 😅 so even though already a week old, the initial bloom gave off a noticeable amount of co2. the resulting cup was rather heavy but surprisingly bright and quite sweet, with prune/raisin and cocoa notes, and with a lingering bittersweet finish. a nice well balanced cup. 🙂 This Week's Guest Beans: Finca Buenos Aires COE (Washed), Dipilto Region, Nueva Segovia, Nicaragua from @coffeetonya.philippines https://www.instagram.com/p/CE-pHK-nS-r/?igshid=4evzbq4zqas4

so there was an interesting discussion on kalitas at the chb forum, and @kayocosio was kind enough to offer me some brewing tips for these wedge-shaped drippers (particularly to prevent stalling). this morning i gave my least favorite dripper, the bonmac, a go. the result? 3:30 total drawdown (for a 27gm/400ml brew) which resulted in properly extracted cup - similar to what i'd usually get in a cone shaped brewer. nice! 🙂 ps. still not loving the bonmac. haha. 😂 https://www.instagram.com/p/CE8AgsAH_n6/?igshid=x4pbnvt3xvrr

good morning from the land of the longest covid lockdown on the planet, philippines! 😑 and to make the start of new quarantine period (and "official" ph christmas season) more bearable, let's try these special beans selection from @henryandsonsph - processed in partnership with 2015 world barista champion sasa sestic. coffee notes: while the initial pour gave off a rather cocoa aroma, the resulting cup is balanced and quite refined - almost tea-like (darjeeling), with milk chocolate and lychee notes (coffee notes on point), and quite sweet and reasonably bright. the flavors become more pronouced as the brew cools down, and then ends with a smooth, slightly tobacco-ish finish. yep, these are definitely not your traditional atok beans. 😻 This Week's Special Local Beans: Bathala Series Wave 1: Sampaguita (Lot TP 3, "Designer Maceration" Washed), Sitio Hartwell, Itogon, Benguet, Philippines from @henryandsonsph https://www.instagram.com/p/CEktUZln-6u/?igshid=8159spf0f2cx
