2 × large courgettes, cut in half and then into wonky triangles
8-10 cloves garlic
5 tbsp good quality extra virgin olive oil
Salt and pepper
2 × 400g tins of pre cooked organic butterbeans + their stock (the water in the can)
For the cashew cream, blend:
1 cup of soaked cashews or sunflower seeds
3 tbsp nooch
Juice of one lemon
1/2 tsp salt
Ground black pepper
2 garlic cloves
Around 60-80ml of water for blending consistency
To serve:
Crunchy nutty breadcrumbs (1 slice of bread and 1 handful of almonds whizzed up in a blender, fried in olive oil, salt and garlic powder until crispy. Let rest on a plate lined with kitchen roll until ready to use)

i saw you liked my vegan shawarma post so i assume this is about vegan cheese
i fucking love this stuff its like crack to me its particularly good on pizza bagels and melts really well but its also good enough to eat on its own or like on crackers/baguettes
if you want like deli cheese or a whole vegan pizza i suggest the brand daiya. its a lot more affordable and its been at every grocery store ive gone to so far so i think its easy enough to find. the only i dont exactly like about it is that it melts kind of weird. like it gets kinda sticky? if you mix it into like mashed potatoes or put in in grilled cheese its not as noticeable as on the pizza. id recommend letting the pizza cool before eating it though if you have sensory issues like me.
ive only been vegan for about a month so far so i havent tried as many cheeses as id like. if the raven fandom would like to hear about more plant based cheeses i will try more so i can relay the information to yall.
I wanted to take time to post an update since I've been absent from this platform for far too long. I let life discourage me from what I love but I want to spend the next few weeks getting back into the nutritional swing of things; especially as holiday time approaches.
I'd love your feedback, but I think I'm going to continue diving into plant based holiday themed meals as well as grab and go foods. It has been my ultimate frustration in life trying to grab a quick bite from a grocery store (or anywhere really) only to find a sad peanut butter and jelly sandwich or an overpriced veggie sandwich as my options if I'm lucky. Seriously friends, have you seen the veggie sandwich offered at Whole Foods? It's $6.99 for a few thin slices of cucumber, tomato, lettuce and some sort of spread of on floppy wheat bread. Don't even get me started on their big salads. $16.99 for a big bowl of lettuce with a few sad toppings. In a world full of revolutionary plant based products, I feel like the grab and go crowd should have a few more options. Even Costco brings the disappointment as their grab and go prepped foods are almost entirely meat and dairy based. Sure, Costco had a quinoa salad for a while, but that's not a very exciting entree for a plant based person now is it? I will say, They do have a Mediterranean salad that's pretty decent though in size and price. Though I wish stores would figure out we can't live on salad alone. I would really love to see more ready to eat meals that aren't just over priced frozen entrees. Many of us spend all day running from responsibility to responsibility, it'd be nice to have some satisfying, nutritionally dense, options.

For Ratatouille 1 pound baby eggplant, quartered 2 zucchini squash, medium diced 1 yellow squash, medium diced 1/2 red onion, medium diced 1 1/2 cups baby tomatoes, cut in half 1/4 cup chopped basil salt and pepper to taste
For Chickpea Pancakes
1 cup chickpea flour
1 cup + 2 tablespoons water
1 teaspoon olive oil
1/4 teaspoon cumin
1/2 teaspoon salt

How to Prepare Farmer’s Market Ratatouille With Chickpea Pancakes [Vegan]
Add 2 tablespoons olive oil to a large pan. Cook the eggplant until the flesh is browned and eggplant is soft. Remove to a bowl
Add the zucchini and yellow squash to the pan and cook until they begin to brown. Add the onion and cook until the zucchini are tender. Add to eggplant and let cool
Combine tomatoes and basil with cooked veggies
Combine all pancake ingredients in a bowl and whisk well. Let sit for 1 hour until mixture thickens.
Heat a non stick pan with 1 teaspoon olive oil. Add batter by the 1/4 cup and cook for about 30 seconds to 1 minute on each side until just barely brown. Remove and repeat with the next 1/4 cup batter
