The vegan pollo guisado dominicano aka dominican stewed chicken from the “Best Believe It’s Vegan.” cookbook by Bobo Cook is so delicious. So far this is my favorite dish and a real game changer. The chanterelle mushrooms really elevates the dish and the flavors are on point. I had the moro de garbanzo aka rice and peas dish on the side and it complimented the dish very well.
