HCSalavat Gets Back in the Series. Salavat Yulaev - Ak Bars 4:3. February 26, 2017
Today the 3rd game of the Green Derby series has been played and it was crucial for Salavat to win it. 2:0 after the two games in Kazan made it catastrophically necessary to reconsider the team's play. Salavat Yulaev completely lost first two games physically, the players seemed much slower. Ak Bars sweeped all before themselves. It was really interesting to see what Salavat was going to do with that.
Ufa has met the first game of this season's play-offs brilliantly. The city has waited for this the whole year and for some time the fans had doubts regarding hitting the play-offs. But now, 26 February, the first home game of the Gagarin Cup, the Green Derby. What can be better? Only the win over Ak Bars.
The most unexpected, surprising, illogical, shocking thing about the roster of Salavat Yulaev was announced 2 hours before the game. Andrei Gavrilov substitutes Niklas Svedberg in the net, he will start the game.
'What? Are you insane, Zakharkin?', fans had this silent question in their minds. In order for you to understand, firstly Gavrilov has never played at such top level games as the Green Derby, especially in play-offs, secondly Salavat lost 2 games - they have to win this one, thirdly Svedberg showed excellent play in the two previous games - there was no his guilt in the conceded goals. This Zakharkin's move didn't make sense at all. Not only fans but all the experts didn't understand that. I don't say that Gavrilov is a bad goalie, he's good but he doesn't have such experience as Svedberg does.
Igor Zakharkin made quite a lot of changes in the roster. This time he brought Kaprizov and Vorobyov back together, Linus Omark was the band-master. Denis Parshin joined Enver Lisin, the man of the game by the way, and Evgeny Bodrov in the second line. Igor Grigorenko took Kaprizov's place in the third line. I agree with the head coach regarding the roster, I think this is the most efficient combination of players which are ready to play.
The game started with Salavat's long attacks which were planned to break Ak Bars right from the start. I think, we could watch at it from two points of view. It's important for Ufa to score as many goals and to win the game. On the other hand, Ak Bars had the right for a mistake and there was no need to strive this time. Salavat seemed much more ready physically, the work was shown. It brought benefits immediately. Denis Khlystov, the former captain of Salavat Yulaev who plays now for Kazan, got double penalty for roughing and Kirill Kaprizov scored an opener assisted by Linus Omark. The most creative pair of forwards started to work again together.
No time to stop, Salavat had to score again. This is the time when Denis Kulyash, the Tsar-Pushka of the KHL, kicks into action. Kulyash on his own enters the away zone and without hesitation slapshots. When you see that, usually you say he took the spider's web. The puck hit the very top left corner, such an amazing shot Kulyash has.
Salavat showed really fascinating play in the first period. They had plenty of chances and a rain of powerplay. But I think the team played as much as Ak Bars allowed them to play. This is just my humble opinion, but you could see that. Sometimes in powerplay it seemed that Ak Bars just gave away the puck and Salavat players didn't know what to do with it. They could score more and more but there was no classic creativity seen. According to the stats, Ufa made 15 shots on goal against 3. Gavrilov didn't have to even raise a hand. But horrible things started in the end of the period. Stepan Zakharchuk as the biggest and the baddest player of Ak Bars makes a dirty and heavy head shot on small Anton Lazarev. The Arena and all the commentators cry in terror for Lazarev. We know how dirty Zakharchuk can be, but really? The refs give only 2 minutes for charging. The result - no Lazarev, 2 minutes for Zakharhuck.
Unfortunately Salavat couldn't score in this powerplay, this would a huge revenge. Now passing over to the second period. Initially things were good, Ak Bars gets one more penalty - Rafael Batyrshin for tripping, Linus Omark as the director of all the attack this time scores himself. There was some beauty in this goal. Linus recovers from a heavy injury, comes back on track in two previous games, and becomes the leader in the third game and scores a screamer. Only Linus can do that, not anyone else.
So, 3:0 at the start of the second period. Time to celebrate? Did you really think that Ak Bars would give up so easily?
In 24 seconds Fyodor Malykhin makes the Arena fall silent. Unfortunately, this was only the beginning. Ak Bars increases the speeds, makes much more shots, and already Salavat doesn't seem stable. Igor Grigorenko get penalty for tripping and Jiri Sekac realizes the powerplay. Probably that wasn't enough for Igor. He goes to penalty box once again, now Justin Azevedo equalizes the score. Andrei Gavrilov thus wasn't Zakharkin's best move tonight. Still, why would he choose him? No one knows. After that Svedberg comes on ice, the Arena breathes a sigh of relief. Igor Grigorenko probably was too nervous in this game, because he gets one more penalty at the end of the 2nd period. He totally failed the game. The captain of the team, cannot afford to leave the team shorthanded three times in such an important game. Fortunately Ak Bars couldn't take that advantage in the 3rd period.
Now we know that not only Salavat can make amazing come backs. But it's more important to stay psychologically stable when you lead by 3 goals and the opponent equalizes the game. So did Salavat Yulaev. Enver Lisin makes his biggest effort in this series so far. Assisted by Denis Parshin he scores the game winner.
Now it's easier to breathe for me and all the Salavat Yulaev fans. We still believe in all the players, coaches, in the whole team. We believe that on 28 February Salavat Yulaev will make it 2:2 in the series and start everything over in Kazan.

Analizando el Mercado Del Café de Rusia
Cuando imaginas un país con una escena del café de especialidad próspera, probablemente Rusia no te venga en mente. A pesar de ser el noveno país más poblado de la tierra, se sabe poco sobre la forma en que sus habitantes consumen café, o sus preferencias y patrones de consumo.
En el Producer & Roaster Forum, que se realizará el próximo mes, tendrá lugar una conferencia que ofrecerá respuestas a esta pregunta. Al ser uno de los foros sobre café más importantes organizados en un país productor, este evento facilita la formación de relaciones entre los miembros de la cadena de suministro y da prioridad al impacto que tiene en los asistentes.
Drago Lakic (director general de Soyuz Coffee Roasting) compartirá sus ideas sobre cómo entender el mercado ruso. Hablé con Drago para conversar sobre los desafíos que supone entrar en este sector, sobre cómo los tostadores y los productores pueden superar las barreras para hacer negocios en él y cómo pueden establecer relaciones mutuamente beneficiosas con aquellos implicados.

La Relación de Rusia Con el Café en el Pasado
Rusia no es una nación consumidora de café, y esta bebida es aun relativamente nueva en su mercado. Los rusos prefieren el té, y pueden llegar a beber cuatro tazas de té al día, en promedio. “En la actualidad, alrededor del 98% de los rusos son consumidores de té, y esta bebida es una parte demasiado grande de su estilo de vida como para que, en algún momento, su popularidad disminuya considerablemente”, me dice Drago.
Durante la era soviética, el café era difícil de conseguir, y muchos rusos recurrían a las bebidas sustitutivas hechas a base de raíz de achicoria, cebada e incluso bellotas. Durante este tiempo, la gente pasaba por grandes dificultades para conseguir granos verdes para tostar y moler en casa. El café se preparaba normalmente en una cafetera turca, acompañado de mucha azúcar.
Drago dice: “El café tostado y molido [era] principalmente de marcas importadas [que] se consideraban de mejor calidad y eran bastante caras. Esta elección fomentó el pensamiento estereotipado entre los amantes del café en Rusia: [que] el café tostado oscuro y amargo es la norma, y [que] sólo los productos importados pueden ser considerados de alta calidad”.
Hasta el día de hoy, el té domina las ventas de bebidas calientes del país, representando alrededor del 60% de todas las bebidas vendidas entre 2009 y 2014. Esta familiaridad con el té ha influido en sus preferencias con respecto al café, ya que la eficacia del uso de una tetera para hervir rápidamente el agua antes de verterla sobre las hojas de té significa que los rusos prefieren un método igualmente conveniente para preparar el café. Como resultado, el café instantáneo representó un poco más del 60% del café consumido en 2014.

¿Cómo es la Cultura Del Café en Rusia Actualmente?
En Rusia, el consumo de café de especialidad está en aumento por varias razones. A medida que la economía se fortalece y proporciona a los ciudadanos mayores ingresos disponibles, pueden explorar opciones de café más costosas. La población actual también está compuesta por una cantidad significativa de millennials, y a medida que este grupo etario se occidentaliza, sus preferencias se dirigen hacia el café como una bebida con estilo y de moda.
En 2014, Rusia se convirtió en el octavo mayor consumidor de café del mundo, con una tasa de consumo per cápita de 1,7 kg. Drago me dice que “el consumidor de café ruso valora la calidad y está dispuesto a pagar más por ella, de ahí el aumento anual de la demanda de variedades de Arábica de alta calidad. Mi estimación es que actualmente hay más de 150 tostadurías en Rusia y muchas más microtostadurías están proliferando por todas partes ofreciendo café de especialidad”.
Cuando se trata de cafeterías, Drago me dice que “hay una verdadera moda detrás de la apertura de cafeterías independientes de alta gama… estos conceptos están marcando las nuevas tendencias del sector de especialidad y educando a una nueva generación de consumidores de café en Rusia, quienes están detrás de este crecimiento orgánico”. Es difícil comparar la trayectoria de desarrollo del mercado ruso de los cafés de especialidad con la de cualquier otro mercado, y aunque tiene elementos estadounidenses, es único, de una forma rusa”.
Sin embargo, advierte que “es muy importante entender que Rusia es diversa, en todos los sentidos de la palabra, y dado que alrededor del 70% del total del mercado del café está repartido entre las ciudades de Moscú y San Petersburgo, generalizar el mercado en su conjunto significaría solo centrarse en las tendencias de estas dos ciudades”.

Explorando la Escena Local Del Café
Moscú y San Petersburgo son dos de las ciudades más grandes y conocidas de Rusia, y las tiendas de café que hacen parte de cadenas tienden a dominar ambos lugares. En 2014, había 1140 tiendas de café repartidas entre las dos ciudades, con Moscú abarcando un poco más de la mitad. Una de cada tres tiendas de café de Moscú, y una de cada cinco de San Petersburgo es propiedad de una cadena y es operada por ella.
La cadena de cafés más antigua de Rusia es Shokoladnitsa, que funciona desde principios de los años sesenta y tiene unas 420 tiendas. Otras cadenas importantes en el mercado son Coffee House (con 226 locales), Coffeemania y Coffee Bean.
Estas tiendas de café ofrecen los habituales espressos, lattes y cappuccinos, y dado que el clima no fluctúa drásticamente a lo largo del año, el consumo de café no se limita a una temporada. Muchas tiendas de café también ofrecen una bebida única de Rusia llamada Raf, una mezcla de crema de leche, espresso y azúcar.
Aunque el panorama del café de especialidad es todavía relativamente pequeño, en comparación con otros países, hay algunas tiendas de café de especialidad que han establecido una presencia local. Double B es una conocida cadena local de cafés especiales con más de 80 tiendas en Rusia, y recientemente ha expandido su alcance hasta Dubái. También, adquieren sus granos directamente antes de tostarlos en sus instalaciones en Moscú y Praga.
Otra cadena destacada de tiendas de café de especialidad es Traveler’s Coffee, que tiene más de 100 sucursales en el país. Fundada por un estadounidense, en 2019 superaron a 36 participantes y se adjudicaron el primer lugar en el tercer Campeonato Nacional de Tueste de Café del país. Entre sus muchas ofertas de café hay distintas versiones del Raf con caramelo salado, floral y cítrico.

Desafíos Para el Ingreso al Mercado
Para las empresas que buscan afianzarse en el mercado ruso del café, hay algunas barreras únicas que se deben considerar.
La primera sería el idioma, pues los productores y tostadores internacionales encontrarán difícil conocer a rusos que puedan comunicarse en inglés. La mayoría de los rusos nunca saldrá de su país, y la mayoría de los medios audiovisuales extranjeros presentes en el país son traducidos o doblados. Por esta razón, no hay necesidad de que la mayoría de los residentes aprendan inglés.
“Se debe principalmente a la falta de oportunidades para practicar el inglés en la Rusia soviética y en la era antes del 2000. Las relaciones en Rusia son muy importantes y puede ser un verdadero desafío construir algo sostenible en un lugar donde menos del 5% de los rusos habla inglés. Hay una gran esperanza en la generación más joven, pero es una posibilidad remota”, explica Drago.
Otro asunto para considerar es que el consumo de café especial está correlacionado con el crecimiento económico. Como la riqueza de Rusia depende en gran medida de los precios del petróleo, esto puede fluctuar. “El café depende por naturaleza del comercio internacional y de las relaciones entre los países, por lo que las consecuencias para las empresas locales con respecto a la postura de Rusia en los asuntos mundiales podrían ser bastante difíciles de manejar de forma sostenible”, me dice Drago.
Para que la industria del café prospere, necesitará una base sólida de consumidores con un flujo constante y en aumento de ingresos disponibles para gastar. En realidad, los ingresos disponibles de los rusos han caído durante cinco de los últimos seis años.

Soluciones Para Tostadores y Productores
Hay una serie de recomendaciones que pueden seguir aquellos productores y tostadores que quieran entrar en la industria del café de Rusia. Drago aconseja conectarse con empresas locales para que los guíen a través de las etapas iniciales: “Busca asociaciones sinérgicas con empresas rusas locales para que puedan ofrecer pleno apoyo al navegar por la complejidad de hacer negocios en Rusia”.
Otra posible vía para entrar en el mercado sería proveer granos de diversas regiones, ya que actualmente la mayoría del café que se importa en el país proviene del Brasil o de Vietnam. Tener esto en cuenta podría ayudar a los tostadores y productores a hacer una transición más fácil en el mercado y establecer una base sólida para sí mismos.
Con las bebidas a base de café que representan sólo el 40-60% de las ventas totales en las grandes cadenas de tiendas y el típico consumidor ruso dispuesto a gastar entre 920-1540 rublos (USD 15-25) cuando visita una tienda de café, la creación de un menú de comidas agregará valor, y ayudará a atraer clientes previamente alejados por la prohibición nacional de fumar. Ofrecer café y comida a este grupo podría atraerlos a espacios públicos, de una manera poco ortodoxa.
Las tendencias actuales indican que nunca ha habido un mejor momento para que las empresas entren en este mercado, ya que el café tostado y molido está comenzando lentamente a apoderarse de la industria del café. “Desde 2014, el crecimiento del consumo de café instantáneo se ha estancado. Esto se debe en parte al colapso total de la moneda rusa en 2013, al aumento de la inflación y a la desaceleración económica general en Rusia”, explica Drago.
“El consumo de café tostado y molido en almacenes y tiendas de café ha aumentado en la última década, e incluso se puede decir que ha prosperado. Se espera que esta tendencia continúe en los próximos años, y no veo ninguna razón para que haya una desaceleración”.

A pesar de que el café de especialidad abastece a un nicho de mercado en Rusia, Drago cree que tiene lugar para prosperar. Aunque Rusia puede ser más lenta que el resto del mundo en actualizar su escena del café de especialidad, las posibilidades son infinitas para los productores y tostadores dispuestos a involucrarse en este momento.
“Si comparamos a Rusia con los países de Europa Occidental, donde el consumo anual per cápita varía entre 6 y 14 kg, llegaría a la conclusión de que Rusia tiene un potencial colosal para un mayor desarrollo del mercado del café aún por muchos años”, dice.

Salavat couldn't bust the horse. HCSalavat vs SKA vs CSKA. February 5, 2017.
After a short break Salavat Yulaev continued the regular season with 2 home games against the best teams of Western Conference - SKA Saint-Petersburg and CSKA Moscow. These two games unexpectedly became of extra importance. Firstly in 12 years, Ufa club risks not to make it to play-offs. In order to be in the last 8, the team needs to score as many points. All of this stuff multiplied by the fact that the half of the leaders are injured makes it a heavy challenge for Salavat Yulaev.
SKA Saint-Petersburg is considered as one of the best teams in KHL with the coach, Oleg Znarok, who is also the coach of Team Russia, the wizard Pavel Datsyuk, Ilya Kovalchuk, Vadim Shipachyov, Sergei Shirokov, Nikita Gusev and a young goalkeeper Igor Shestyorkin. SKA has the best offence in the League scoring 237 goals and one of the best defenses (106 goals conceded). So, Salavat Yulaev wasn't lucky to play SKA in its life-saving game. In spite all of it, Saint-Petersburg has some problem issues with the roster. The defenders Andrei Zubarev (used to play in Ufa) and Patrick Hersley, the forwards Steve Moses, Sergei Plotnikov and Viktor Tikhonov are injured.
But we all know that who has more troubles with roster, don't we? Linus Omark, Teemu Hartikainen, Igor Makarov, Sergei Soin, Evgeny Bodrov and Tomas Mertl, the very best, essential players of the team are injured. That's why the coach, Igor Zakharkin has to rotate the roster each game. Believe it or not, but Andrei Gavrilov was chosen the 1st goalie of the game. After 6 games in which Niklas Svedberg conceded 24 (!) goals, the coach gave him a rest. It appeared, not a long one. I'll get back to it later.
Maksim Goncharov and Zakhar Arzamastsev made it the 1st defense pair, the 1st line was Enver Lisin - Dmitry Makarov - Maksim Mayorov. It's a regular combination of these players, but usually they are the 2nd line. Kirill Kaprizov and Mikhail Vorobyov were in one line, as they used to be at WorldJuniors. Stepan Khripunov helped them from the left. Pretty young shift, all of them are not older than 20 years. Aleksander Loginov and Sami Lepisto backed them up as usual. It's important to mention that the roster of the 4th line was a good discovery by Zakharkin. 2 quick wingers (Aleksandr Nesterov and Anton Lazarev) with a huge centreforward Evgeny Korotkov backed up by Konstantin Korneyev and Denis Kulyash were pretty good at offense.
Right from the start Salavat showed that they were primed for victory. 12 SOG against 9 in the 1st period. During the 1st intermission we found out that Andrei Gavrilov got injured and he played the last 5 minutes with awful pain in the leg. There is sure something wrong with Salavat's fate regarding injuries. Pretty fast and mutually attacking game was changed by SKA's heavy rain of shots in the 2nd period. As a result the 2nd ends with 0:2 in favour of SKA. At the beginning of the 3rd period Enver Lisin brings the hope to fans' hearts scoring really a great goal.
The hopes were not to come true as Vadim Shipachyov scores his 3rd in the game. Although Salavat had many chances, they couldn't score any. The 8th consecutive loss - 1:3. As a result of the game Andrei Gavrilov made it to the injured list. Despite the loss to the best team in the League, the fans and the experts saw some positive movement in the team's play. Was it the rise of Salavat?
Unfortunately, no.
The next opponent was CSKA Moscow, another "army" squad which counts on the Gagarin Cup. The team doesn't have many "stars" this season after Aleksandr Radulov went to Montreal Canadiens, but still is great. The roster is well-combinated with players which do their work properly. In the current squad we can call only Valery Nichushkin who has just got back from Dallas Stars and Ivan Telegin stars of the team. Both of them play in one line by the way.
If the game vs SKA rose hopes in Salavat's fans' hearts, Aleksandr Popov and Vladimir Zharkov let them down right in the beginning. Dmitry Makarov made it 1:2 in a couple of minutes.
The rest of the game showed that Salavat Yulaev is not ready for such strong sharks as CSKA. Greg Scott, Nichushkin and Telegin consecutively made it 1:5. So, the 9th loss in a row and the 8th place in standings. Now the team goes for a break in the regular season. Salavat needs to win both of the rest games vs Ak Bars and Lada to make it to play-offs. The team still has chances and we hope that the leaders will recover from injuries to take part in the most important games of the season.
