سبع بهارات فلسطينية / Seb'a baharat falastinia (Palestinian seven-spice)
Seb'a baharat is one of a few spice blends often referred to in English simply as “baharat” (the plural of Arabic بهار / bahar, “spice”). A warm, earthy blend, it is commonly used to season meat, fish, and poultry in the Levant, Eastern Arabia, and Egypt, where recipes differ from region to region and from person to person. Common ingredients include cumin, cardamom, black pepper, nutmeg, and cinnamon.
Palestinian versions of seb'a baharat are usually dominated by allspice, black pepper, and cinnamon, giving them a pungent and sweet head; nutmeg, cloves, and cardamom provide additional warmth, while cumin and coriander often round out the blend with earthiness and a hint of florality. Ginger is also an occasional inclusion.
By the early 2010s, decades of Israeli taxation on exports and imports of non-Israeli goods had eroded Palestinian economic and culinary self-determination; Israel had instituted further blockades of the Gaza border in 2007, leading to a sharp decline in exports. Several farmers in Gaza turned to growing spices and herbs, including cumin and ginger, on their farms with the intention of finding a profitable market for them in Europe. However, frequent border closings, punitive export taxes, and Israeli shooting at Palestinian farmers who were attempting to work their land, made the plan unviable.
More recently, Palestinians have continued to work to find new ways to produce food despite shrinking access to arable land and fresh water. Resisting Israeli targeting of Palestinian food self-sufficiency is a matter, not just of subsistence and economic power, but of identity and dignity.

Ingredients:
1 Tbsp ground allspice (6.6g; 1 Tbsp + 1 tsp allspice berries)
1/2 Tbsp ground black pepper (6.2g; 1/2 Tbsp black peppercorns)
1/2 Tbsp ground cinnamon (5.3g; 1 large stick Chinese cassia)
1 1/4 tsp ground coriander (2g; 1 1/2 tsp coriander seeds)
1 tsp ground nutmeg (1.4g; 1/2 nutmeg)
1 tsp ground cloves (2g; 1 1/4 tsp whole cloves)
1 tsp ground cardamom (scant 1/2 Tbsp pods; 2.6g just seeds)
3/4 tsp ground cumin (2.1g; scant tsp cumin seeds)
Instructions:
1. In a mortar and pestle or using the flat of a knife, roughly crush nutmeg and cinnamon.
2. In a dry skillet over medium heat, toast whole spices one at a time until each is strongly fragrant. Remove from heat and allow to cool in a single layer on a large plate.
3. Grind all spices together in a mortar and pestle or a spice mill. Pass through a sieve to remove large pieces. Store in an airtight jar in a cool, dark place.

Chicken sales have benefited from the relentless propaganda war against red meat, as a result of which, some consumers have been persuaded on the basis of selective and misrepresented data, that chicken is a better choice for planetary, animal and personal health. “I don’t eat red meat, but I do eat chicken sometimes.” How often have you heard that said? Superficially, that stance might seem enlightened, but the reality is that in this country, UK or EU reared red meat from truly sustainable, pasture-based systems will almost always be a more genuinely progressive choice than chicken. UK-reared beef, lamb, goat and venison is produced more extensively than chicken (and pork, for that matter). Sheep, cattle and other ruminants are rarely raised exclusively indoors in Britain. Farmed deer are still in the field for the best part of their lives. These animals live on a diet of mainly pasture and forage, making use of land that is often unsuitable for growing other crops. They can flourish eating grass, herbs and shrubs, effectively transforming sunlight, rainwater and soil nutrients into some of the most nutrient rich foods available to us. While many UK-reared cattle are now finished on a diet that includes some cereals, they typically spend the greater part of their lives grazing outside, and for people seeking the most sustainable meat option, produce from 100% grass-fed animals is available. The more cereals that are fed to an animal, the less resource efficient its milk or meat is. This is because productive arable farmland, that could be used for growing food to be fed directly to people, is used for growing lower grade livestock cereals, from which only 17-30% of calories are returned for human consumption as meat or milk. Alternatively, the cereals used for animal feed may be grown in other regions of the world and shipped vast distances – which brings us back to chicken. We eat a billion chickens each year in these isles, and they do not lead remotely content or natural lives. Almost all (95%) are from fast-growing breeds, intensively reared in vast, tightly packed, indoor facilities and they are slaughtered at as little as 28 days. While chickens are a relatively small bird, their environmental footprint is significant. The Soil Association’s report, Peak Poultry, details that roughly three million tonnes of soya are imported into the UK each year, and most of it is bought by chicken producers to fatten chickens. Typically, this soya comes from Latin America, a crop that contributes to deforestation and pesticide use in biologically important areas, such as the Amazon and Cerrado. There are at least 1,000 intensive poultry units throughout the UK. This marks an increase of more than 30% in the past decade as chicken has been marketed as a more compassionate, healthy and ecological alternative to red meat. Given the complexity of the debate, it’s no wonder that so many of us accept that chicken is a more ethical choice. Put chicken on the menu, whether that’s in school dinner halls or restaurants, and you are likely to invite fewer religious objections, while ‘flexitarians’, and those who describe themselves as ‘plant-based’ eaters will view it as ‘the least bad’ of the possible meat options.

Crimes in Context: Opportunistic theft is boring so we're going to talk about geese. The domestic goose is not a common food in the USA during the modern era, and it's only barely more common in the UK due to the traditional Christmas goose. As it turns out chickens and turkeys are a little easier to grow at factory scale, and in proportions that would prevent them from surviving in the wild. Nevertheless, they were excellent backyard livestock for a Victorian household, given a patch of grass and some water they mostly didn't need any additional feed, unless you gave them some grain to fatten them up for market. Being water fowl, they don't tend to fly away often if they can waddle, and you could always clip their feathers to prevent it. Domestic goose and domestic turkeys are similar in size, with the yield of edible meat from a turkey being a little bit greater, because the goose has a lot more fat to render out - though this wouldn't necessarily go to waste, since goose grease, like chicken schmaltz, is very suitable for use as a cooking fat. Geese have been domesticated in various parts of the world for about as long as chicken and ducks, (Some time in 4000 to 3000 bce) and the probable method is the same: find nest, steal eggs, hatch eggs. Allow birds to forage around the local settlement where there are fewer predators, steal more easily from their nests. Repeat process year after year until the geese start displaying a variety of funny colors and don't run away when you throw them some sprouted grain you can't cook with. When mature, slaughter, cook, and serve some while keeping others to make more eggs and the next generation of goose dinners. Geese are also fairly useful if you, for example, want to keep a nicely clipped lawn. They're primarily grass-eaters, and their poop is decent fertilizer for more grass. You can herd them around to make sure they nibble the bits you want instead of your garden. They're also large enough birds that they can defend themselves in a backyard poultry setting: they're more than a match, in groups, for the neighbor's cat, or even their large dog. In addition, the feathers are very useful - geese and ducks have down feathers (the fluffy stuff UNDER their oily exterior feathers) that keep them warm in and out of the water, and these have been popular for stuffing pillows and mattresses (due to being softer and less likely to start decaying if they get a little damp) more or less since there have been pillows and mattresses. Also, geese have "teeth" (Actually made of cartilage, not bone) on their tongue and the interior of their beak. Useful information if one of your ambitions is to be bitten by a dinosaur.

Brazil's Meat Lobby Accuses UK Of Exploiting Rules For Chicken Exporting Plants

On Monday, the Brazilian meat lobby, represented by ABPA, which advocates for pork and poultry processors, claimed that Britain had granted approval for a "pre-listing" model specifically designed for chicken exporting plants located in Brazil.
As per the system, all companies intending to export chicken to the U.K. market must receive approval from the Brazilian Agriculture Ministry. Consequently, individual suppliers no longer need clearance from British authorities.
ABPA stated that this represents the second favorable advancement in bilateral trade this year.

What Happened to the VW Bus? Is It Coming Back?

Actually, nothing happened to the VW bus. It just became less popular, temporarily, in the United States. And yes, it is coming back in a big way!
After the 1970s, the U.S. shut down VW bus manufacturing since the popular van was no longer was able to meet new safety and emissions standards. Production continued in Brazil, however, until 2014, when Brazil enacted new standards that the current model of the bus couldn’t meet. When that happened, the German production factory shut down its production after 63 years – the longest running time of any vehicle ever.
Now, many people are excited to learn the Volkswagen Bus is coming back next year, in 2024 – as the ID. Buzz (yes, that is its name!). It’s electric, eclectic and brings back a hint of the hippie movement psychedelic nostalgia with its neon colors: tangerine, lime, grape and more. Volkswagen is hoping to once again earn the respect and admiration of a new generation of car buyers.

The Peculiar History of the VW Bus
Although many people in the U.S. think of the iconic Volkswagen bus as the original hippie van from the 1960s, it has a different association in Europe, where it was born in Germany in the 1940s. Colloquially called the VW Bus in America and the VW Camper in the UK, the Volkswagen bus was modeled after the German Plattenwagen, a vehicle originally made to carry car parts. Dutch businessman, race car driver, winemaker and Olympian Ben Pon, always looking for something new and already selling the hugely popular VW Beetle in the United States, saw the Plattenwagen during a tour of the Volkswagen plant in West Germany one day and the lightbulb went off.
The Beetle paved the way for what was known then as the VW Transporter, later called the Volkswagen Microbus and then, in later years, the Bus. In the 1950s when the Transporter hit the market, buyers could choose from 8 different models, all designed to answer a specific need. Today, there are more than 15 variations of the Transporter (or T models) on the market.
For example, the Kombi VW bus featured removable rear seats so consumers could use the van to carry cargo (and people). A variety of side windows options also made an appearance during these days, with a low-end version offering 11-15 windows spaced around the van and high-end versions offering 23-window VW buses. Early models carried a hard to clean split front windshield, earning it one of many nicknames, “the Splitty.” Volkswagen did away with this unpopular feature, creating a solid front windshield.
In Europe, families and friends used the popular bus for camping trips, as did Americans, who also plastered peace signs all over it and drove it to see Jerry Garcia and the Grateful Dead. Europeans turned it into an ambulance, and everyone used its large interior for deliveries and carting stuff around.
In the 1960s, things began to turn around in the U.S. market when people became more concerned with vehicle safety and emissions – and something known as the chicken tax.
Chicken Tax
The Chicken War started when American farmers adopted poultry factory farming practices in the 1950s. Soon, chicken was being exported to Europe in mind-boggling numbers – which didn’t sit well with German farmers. Feathers flew and, as a result, high tariffs were implemented on imported chicken in Europe.
In America, the United Auto Workers were threatening a strike over the importing of the popular Volkswagen Type 2 pickup truck.
In response to both of the above, President Johnson imposed a 25% tax on imported light trucks. Called the Chicken Tax, it’s still in effect today. The effect on the Volkswagen is, in order to avoid the Chicken Tax, the vehicle cannot be sold as a truck or any kind of commercial vehicle.

Today’s Volkswagen Bus
Today, three different iterations of the VW bus are on the production line at a plant in Hanover, Germany. The model year T6 continues to be built with a van platform but is ceasing production with the new ID. Buzz. This is its last year. The T7 is a medium-sized Transporter with a large cargo area marketed as a plug-in hybrid. And the newest member of this family of unconventional members is the Buzz, due in the U.S. in 2024.
In Europe, the electric Buzz rolled into the market in 2022 and found new categories to master, including as a police car, a school bus, a postal truck and much more. But in America, the Buzz will never climb to the exalted ranks of a service vehicle. The chicken tax took care of that. It will always be a passenger van on these shores.
The Buzz About the Buzz
Let’s talk specifics about this new van that’s supposed to bring us all back to the days of concerts, tie-dye and peace signs. Of course, it is electric. But what other changes will we see?
Appearance: Some people think the new Buzz looks similar to the old Scooby-Doo van. Others think it looks like what might happen if a modern minivan had a baby with a sleek sports car. It certainly no longer has the goofy smile of the old VW Bus. Some people say it looks like an angry cousin.
Mechanics: It’s no longer necessary to carry around the “How to Fix Your Volkswagen for the Complete Idiot” and 3 wrenches. The downside is that a paper clip and a rubber band won’t fix the rear engine until you can get it to a shop. And, gasp, it comes in automatic transmission, too. Staying on top of maintenance will get you further.
Noise and Driving: If you’ve ever driven or ridden in an older VW Microbus, you already know how noisy it was, with bone-jarring shakes and rattles. It may – or may not – make it up that steep hill in the mountains of Colorado. Perhaps try reverse to make it up? Today’s version will have up to 201 horsepower (the original had an HP of two digits). It’s supposed to be much easier to maneuver. You’ve got to wonder if they took out all the fun!
Smart Car: You probably won’t consider the new Buzz as you did its distant little brother or sister. In the 60s, the bus was considered a valuable and friendly member of the family. The Buzz is more like the rather stern computer Hal in “2001: A Space Odyssey” (except for the part where Hal goes crazy and murders the crew). That won’t happen with Buzz, but it may stop you from switching lanes without signaling or flashing colors at you if there’s an obstruction in the road.
Overall, VW is banking on the new trend for electrical vehicles to help it become the world player it once was with the Beetle and the original VW bus in decades past. And although it may cost quite a bit more than the original ($1,800 vs $40,000), there are still fans clamoring to get a piece of yesterday for today.
