Even the most traditional foods can be converted to fit a plant-focused lifestyle. Like this Middle Eastern Kibbe- a pie who’s crust is usually made with bulgar (cracked wheat) and meat, and filled with loads more meat through the middle. OR this version - where the crust is made with bulgar and pumpkin purée, and filled with spinach and chickpeas and sumac. Just as filling, just as pretty. With the added bonus of tons more beta carotene from the spinach and the pumpkin (basically preventive medicine for your eyes). And it certainly makes sense to switch out iron-rich meat with iron-rich spinach.
