Yandere Aku???
(I'm a fan of Samurai Jack and I like how Aku's character is written)
Aku would fit the yandere role pretty well, but not in a classic yandere way.
I mean in a way that he's possessive, but he wouldn't really know how to spoil by human means.
He would put the head of your(and his) enemies next to you while you're asleep and give you a big animal to have for a meal. It can range from a boar to a giant edible alien. If you were a warrior and can already do all of that on your own, he would still do that, but he would find you more attractive.
He doesn't stalk you like a yandere usually would either. He would most likely watch you through his "magic tv". As for protection, he already has a henchman or two taking care of that.
As for your "first meeting" with Aku, he would most likely just grab you and bring you back to his tower without second thought. It's funny to imagine him grabbing you in a giant bird form like in the beginning of Wind Waker-
Of course, that doesn't mean Aku's constant spying stops there. He would keep you in a cage or by his side and watch you like you were the most entertaining thing he's ever owned.
You would probably think that Aku sees you as a pet or a plaything to look at. But Aku sees you as a "lover" that needs to be "protected".
And by "protected", I mean keeping you in his room, under lock and key, in his tower, where no one has the slightest clue that you're even in there.
You can hope that Samurai Jack eventually finds you one day, but I doubt he would make it to the tower for a looong time.
So, you might as well get comfy and let Aku spoil you, ok?

No harm to the boy
I find it interesting that Aku had no intentions to hurt Jack, when he was a young boy. In 1 episode of 1 season Aku saw and clearly knew that this young boy in the palace is Emperor's son (and he'd smell it — even before intense attacking Aku saw Jack and his parents near him), he could take young Jack in hostage and hence morally defeat Emperor (and then even to kill Jack as an act of revenge toward his father). But he ignores young Jack and catches exactly his father (although, ignoring the sword) despite the fact that Jack was closer than his father.
Of course, Emperor was for Aku the main target for many reasons (the one who wields the sword and hence is the main threat that can defeat him again, the one who created the demon, rejected him and then imprisoned for many years etc), but, as pointed out earlier, Aku had a chance to revenge in very brutal way — to take Jack in hostage and even to kill him and hence to sadistically mock on Emperor. But he didn't do this. And if to look only at 1 episode of 1 season, it can give impression that Aku forgot about Jack until adult Jack returned and challenged him for a duel.
Jack in Africa episode states that at least once Aku tried to find young Jack. And, again, he has no intentions exactly to kill the boy. The African bounty hunters mention that "The evil spirit promised to us treasures, if we deliver to him the child of white skin". I.e. Aku didn't order "Find and kill this boy, later bring to me his dead body" (they wouldn't be able to trick him, 'cause Aku would smell the blood and find out, whether it is Jack's body or not). His order was exactly in catching and bringing young Jack to him alive, and he mentioned nothing about the sword.
Interesting, what he'd do to young Jack? Raised him as his right hand for, again, revenge toward Emperor? Would Aku tell to young Jack the truth about his conflict with Emperor? Well, sadly, the acquaintance between the brothers did not work out.
I mean, it seems that Aku started to see in Jack the hated enemy and the serious threat exactly when Jack became adult and intentionally challenged the demon for the battle to kill in 1 episode of 1 season, while before... not.
