This is one for my Nigerian people. Ogi and Akara which is Pap and fried Bean cake. This is a staple breakfast option which is delicious. The bean cake is made from peeled black eye beans that’s blended; spices, finely diced shallots, ginger and a few other spices are added before frying in oil. The pap is made from blended Guinea corn. When there’s left over hummus, there’s only one thing to do - work it into another meal. Flat bread and Rose Harrisa spiced chicken with smoked chipotle chilli paste. Baste the chicken with the paste and set aside for as long as possible, then grill until cooked and still juicy. In collaboration with Louisa’s honey, I created a dessert to celebrate the Queen’s platinum jubilee. Louisa challenged me to create a dessert that people could make at home so I wanted to keep it simple but delicious. I was inspired by the notes of nuts, coffee, chocolate and citrus in Dubonnet. I created a 3-layered chocolate cake with coffee buttercream and pecan nuts candied in Bosco honey. When you fancy something sweet with minimal fuss, out comes the puff pastry. I created theses bundles of joy with a few ingredients including crystallised ginger, pecan nuts, golden caster sugar, cinnamon and Louisa’s ginger honey. Beef Curry, Saffron and Coconut milk rice, and Ghati Masala. Midweek beef curry in a flash. Pressure cooked the beef for 20 minutes while cooking the curry sauce. The Ghati masala made with roasted peanuts, coconut, sesame seed, coriander powder and tamarind sauce was phenomenal.
