Hello, Every birdy. Today we are going to be making a recipe that has become when of my favorites. Honestly, I can’t believe how much of a difference it makes. I am going to be making Zucchini Cranberry Muffins, that you could easily pair with your bitter breakfast tea and it will be amazing.

The reason I want to pair it with the Bitter tea is because of the character in question. The Wanderer is a misunderstood character who is not exactly from any one nation. He was originally “made” in Inazuma by the Ei herself as one of her puppets. And then she decided that he was not the best puppet for her so he started wandering and found himself involved with the fatui. And it wasn’t until the traveler (main character) came to Sumeru did The Wanderer get his anemo vision and his name.

The Traveler has the ability to change his name. My Wanderer’s name is Mercury because one of the names that people called him was Scaramouche. And I thought it would be funny if I named him Mercury, based off of Freddie Mercury. Because of Bohemian Rhapsody.

So this guy, because of his mom or his creator (whichever you want to call it) loves sweets, so in spite of that he hates them and loves bitter things. And his favorite food/drink is bitter tea.

Imagine that. I post up one of these baking therapy posts and it is just a wiki how on making tea. 
Locate water
Locate kettle 
Put water in kettle and wait for the water to boil
Place tea bag in cup
Once water has boiled, place water in cup
Wait a 3 or so minutes so the tea has infused the water
Enjoy

And then the post just ends. I didn’t really want to do that, So with the bitter tea, we are going to be making some Zucchini Cranberry Muffins. They were not that sweet.

The first thing you want to do is preheat your oven to 350 F. And grease at least two muffin pans.

You will need:
Eggs (again there will be an egg substitution video coming soon)
Oil 
Zucchini
Vanilla
Sugar + brown sugar (halved)
Flour
Baking soda
Cinnamon 
Baking powder
Nutmeg
Cranberries

Beat your eggs until they are foamy. This only takes about 1 to 2 minutes.

Add in your oil, sugars and the grated zucchini. Don’t be discouraged if it looks weird. Bread usually do look weird at this stage.

Sift all of your dry ingredients together. Then mix it in small amounts with the egg zucchini batter.

Fold in your cranberries.

Grab a ice cream scoop, cookie scoop, or two tablespoons, and evenly divide the muffins into the pans.

Bake for 10 minutes on one rack and then rotate them to the other rack and bake for another 10 minutes. So a total of 20 minutes in the oven.

Let them cool on a cooling rack for a little bit before putting them away in the refrigerator.

For Zucchini bread - changed to zucchini muffins
Original recipe:
3 eggs
1 cup oil
2 ½ cups zucchini
3 teaspoons vanilla
1 ½ cup sugar
3 cups flour
1 teaspoon baking soda
3 teaspoons cinnamon 
½ teaspoon baking powder
½ cup chopped walnuts
½ cup chocolate chips
Preheat oven to 350 degrees. Beat eggs until foamy. Add oil, sugar, and grated zucchini. Sift all dry ingredients together. Then mix small amounts at a time to egg zucchini batter. Pour into two greased and floured loaf pans. Bake for 45 to 50 minutes or until firm. 
My changes:
1 ½ cup sugar 
½ brown sugar
1 cup sugar
+⅛ tsp of cloves 
½ cup chopped walnuts
½ cup chocolate chips 
½ cup dried cranberries
Instead of preparing two greased and floured loaf pans you are going to prepare muffin tins. And bake for 20 minutes.

Directions
Step 1 Preheat oven to 350° F (175° C). Spray 24 muffin cups with cooking spray or line them with paper
liners.
Step 2 Whisk sugar, oil, eggs, and vanilla extract together until smooth. Stir flour, cinnamon, baking soda, and baking powder into the sugar mixture just until the batter is combined. Fold zucchini and apple into the batter and spoon into the prepared muffin cups.
Step 3 Bake in the preheated oven until muffins spring back after pressing the top, about 25 minutes. --------//

Veggie Filled Morning Glory Muffins
It was around last autumn I made Morning Glory Muffins - and a YouTube Short video to go with them! I usually only make muffins like these once a year, because they can be time consuming. I'm not a fan of standing over a grater for 30 minutes - but hang on - a food processor does the same trick in a fraction of the time. Not only can I shred carrots and zucchini but also grind oats into flour.
Applesauce also is a major player in these muffins, adding flavor and a unique texture to the batter. Whichever applesauce you choose to use, store-bought or homemade, it's best for it to be all-natural without any added sugar. If you have extra time, or apples, on your hands - homemade applesauce is a surefire treat. You can flavor it with cinnamon, nutmeg, allspice - or brown sugar. A little bit of sweetness can go a LONG way. For my version of homemade applesauce, check out the video linked below.
Mixing the ingredients is done in two parts - wet and dry - to see they're evenly incorporated and not overmixed. I've read in several versions of this recipe calling for a combination of oat flour and all purpose flour say that you don't want to overmix the batter; my rational thought would be that the batter becomes glutenous or the muffins when baked could come out too chewy. I found that by only using oat flour, this doesn't happen. This could also be coincidence, or oat flour is better? (This is a mystery for another day.)
Another piece I've played around with the last few weeks is the portion size. The Dark Chocolate Chip Muffins from my previous post were coming out of the oven looking like strange little discs. Not chewy or tough, but shaped oddly. The first time I made these Morning Glory Muffins, the same thing happened, prompting me to play around with proportions and ratios of ingredients. I found that for my muffin trays, a Black and Decker brand and a Food Network brand, the ratios listed in the ingredient list below worked for me. It's said time and time and time and time again that "Baking is an Exact Science". And I certainly know that. If I were to make Mary Berry's Cherry Cake - I would definitely be dusting off my food scale and counting each cherry before sliding the bunt pan into the oven. Except there are some baking recipes that don't always come down to "An Exact Science". Here's what I believe:
Morning Glory Muffins include ingredients that can be subjective. Zucchini: it is not guaranteed you will snatch two "medium" zucchini's off the produce shelf, nor will you be able to pluck them from your garden. Carrots are the same! No two vegetable or size of vegetable is alike - just like people. So while you can level off "4 cups oat flour" or "1 teaspoon cinnamon", vegetables can be measured once shredded and drained, but I prefer to plan my dry ingredients around the wet ingredients for these muffins. Not to mention - the size of my particular muffin trays I mentioned before, in addition to depending on if you want muffins that are more dense or soft and moist, you could do the same! But this is how I make mine:
Morning Glory Muffins
Wet Ingredients:
2 medium zucchini, about 1 cup total shredded and squeezed
2 medium carrots, about 1/2 cup total shredded
3/4 cup applesauce
1/4 cup maple syrup
2 eggs
1 cup oil, vegetable or coconut oil
Dry Ingredients:
4 cups oat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup shredded coconut (optional)
1/4 cup chopped walnuts (optional)
1/4 cup raisins (optional)
Other Tools:
food processor with grinding blade, and grating / shredding blade
paper towel
2 large mixing bowls
1 large mixing spoon
1 cookie or muffin scoop; a large dinner spoon will also work
2 muffin trays
Crisco or canola spray
toothpick(s)
butter knife or frosting spreader
airtight container, Tupperware or take-out container
Process:
Measure out 4 cups of oatmeal. Using the grinding blades on a food processor, blend 1-2 cups of oats at a time depending on the size of your processor. With chunkier flour, the texture of your muffins might be bigger or puffier, and smoother flour could yield a more cohesive muffin. Blend the oats to desired flour type. Set aside the flour in a large mixing bowl for all dry ingredients.
Gather and measure out the baking soda, cinnamon, and nutmeg. Mix in with the flour to combine.
Using a kitchen knife and cutting board, cut the zucchini and carrots into sizable pieces to fit into your food processor. Replace the grinding blades for the food processor with the grating or shredding blade. First grate the carrots, and set aside in a second mixing bowl for wet ingredients. Grate the zucchini one at a time, dumping and squeezing into paper towel to drain off excess liquid. Once squeezed, add to the wet ingredient bowl with the carrots. Finish shredding, squeezing the rest of the zucchini and add it to the wet ingredients bowl.
Gather and measure out the remaining wet ingredients of applesauce, maple syrup, eggs, and oil. Mix in with the carrots and zucchini to combine.
Preheat the oven to 350 degrees Fahrenheit (176 degrees Celsius). Grease the 2 muffin trays with either Crisco or canola spray.
Add half of the flour mixture to the wet ingredients bowl, giving one to two stirs with the large mixing spoon, then dump the rest in. Stir all of the ingredients together until combined.
Gather and measure the shredded coconut, walnuts, and raisins if adding.
Using the cookie scoop, or large dinner spoon, scoop out heaping portions of the batter and put into the muffin cup tray. Fill the muffin up just over the top for big muffins. Depending on the size of muffin cups on your tray, the batter might make 18 large muffins.
Bake for 27 minutes, and check for doneness. Poke one of the muffins with a toothpick, it should come out clean. If the toothpick doesn't come out clean, bake for another 5 minutes, for a total of 32 minutes. After the 5 minutes are up, check with another toothpick. At this point, the toothpick should come out clean.
Let the muffins cool in the tin until you can touch them. They should come out clean from the tin. If they are tough to get out, slide the butter knife or frosting spreader around the outter edge of the muffin, and take the muffin out.
Store in an airtight container in the fridge up to 5 days.

While you can purchase almond flour at the store, you can make your own by grinding blanched almonds into a very fine flour.
Quinoa
Quinoa is one of those nutty-flavored side dishes we have all come to love. However, once quinoa is ground down into a flour, it becomes quite bitter. No worries, as long as you have the right recipe, that bitterness will not be tasted in your baked goods. We recommend using this protein filled flour to make items like zucchini bread.
You can purchase a timer in the kitchen section at any store. However, you can also use the timer on your watch or home hub like Amazon’s Alexa or Google’s Nest. It doesn’t really matter what type of timer you use, as long as you use one that will notify you it is time to take something out of the oven.
Rice Flour
Rice flour contains lots of fiber, protein, vitamin B, iron, and manganese. You can easily use rice flour in many different dishes, but we love using it in our baked goods. It is best to purchase a quality brand of rice flour, because some lesser-known brands have been known to contain harmful chemicals.
Coconut Flour
If you want to follow a low-carb diet, as well as go the gluten free route, we recommend using coconut flour for your baked goods. This gluten free flour contains lots of fiber and healthy saturated fats. Since there is a lower glycemic index, your blood sugar won’t spike, and you will feel full for much longer. We recommend using coconut flour for cookies and cakes, but you can also use it for pancakes and waffles.

Corn Flour
Corn is naturally gluten free, so you can easily use this flour to prevent gluten from sneaking into your diet. Most people use corn flour to make cornbread. However, you can mix it with other types of gluten free flours to make other baked goods. We just don’t recommend using corn flour on its own for most baked goods, other than the aforementioned cornbread.
Bean Flour
If you are looking for one of the best gluten free flours, you don’t need to look any further than bean flour. You may hear this flour referred to as chickpea flour, gram flour, or Besan flour. Raw chickpeas are ground together to make this flour and those chickpeas help improve the texture of what you are baking. We recommend using bean flour for everything, but especially quick breads, cakes, and muffins.

1 medium banana
1/4 cup unsweetened applesauce
1/4 cup Greek yogurt, plain
Process:
   Start the process by preheating the oven to 375 degrees F.
  Then, take a medium-sized bowl to mix flour, baking soda, salt, nutmeg, and cinnamon, and set the mixture aside.
 In another bowl, mix the sugar, softened butter, eggs, vanilla, and Greek yogurt. Beat well.
 Then in a food processor, combine steamed broccoli, shredded zucchini and carrots, apple, banana, and applesauce. Grind until smooth.
Transfer the ground fruits and vegetable mixture into the bowl with wet ingredients and beat the mixture until the ingredients mix properly.
Pour the mixture into the bowl of the dry ingredients and mix just until combined and wet.
Spray the muffin tin with cooking spray or oil. You can also use silicone muffin cups.
Fill each cup about 3/4 of the way full, with the prepared mixture.
For minor muffins: Bake in a 375° F oven for 15-20 minutes.
For regular-size muffins: Bake in a 375° F degree oven for about 20-25 minutes.
Bake until the tops are slightly brown and a toothpick comes out clean or they bounce back when you touch them with your finger.
Mixed Vegetable Omelet
Omelet is rich in protein and you can make it extra nutritious by adding vegetables of your choice. We are sharing with you our recipe for a mixed vegetable omelet. However, the ingredients are highly customizable and can be changed as per your preference.
Ingredients:
·         2 organic eggs
4 small button mushrooms
·         1/2 cup of chopped spinach
1 small chopped tomato
1 small chopped capsicum(buy capsicum online)

1/2 finely chopped onion
1 finely chopped clove of garlic
1 tsp extra virgin coconut oil

Now add the tomatoes and fry for another 2 to 3 minutes
·         In a separate bowl beat the eggs and season them with salt and pepper and the other spices.
Now spread the veggies around the pan, gently pour the beaten eggs all over the vegetables, and spread it evenly.
Cover the omelet and let it cook for 2 to 3 minutes. 
Check the omelet to turn brown on the side of the pan and flip it over to cook it from the other side as well for a minute or two.
Your omelet is ready. Serve with a sauce or crusty bread and enjoy.

It's 9:30 but I did so much baking and being social today and I might go to bed already. Two batches of GOOD muffins ( https://www.simplyrecipes.com/recipes/morning_glory_muffins/ , Have made before and enjoyed but might skip the allspice and use more cinnamon; can sub applesauce for at least half a cup of oil) One batch of very MEH muffins, And one double-batch of black bean brownies ( https://chocolatecoveredkatie.com/no-flour-black-bean-brownies/ , all honey instead of honey/other, all the oil replaced with applesauce, a double-batch fits in a 9x13) And some zucchini bread but that was all my mom because I do not like it. And then we went to a local restaurant because our tiny little bedroom community/commuter town is apparently home of the state's best burger (I do not eat beef but my husband says the burger IS very good). I had boneless wings, which were good, with "hot honey" sauce which used cayenne instead of red pepper which was an Interesting taste but adding some ranch mellowed it out.
