Went to a complete Bengali cuisine restaurant over here and the food was so awesome plus the ambience. They were playing rabindra sangeet it was mostly instrumental though and i swear I was feeling dreamy halfway until food arrived. My dad has lived in bengal for a good time so he knew how certain dishes are made and last time when I lived in kolkata i did not eat bhetki because I was scared of seeing it wrapped, but this time dad made me eat it and omg I was like why did not I try it out then?
And the ambience reminded me of my school rabindra jayanti programme

1) Rohu Rohu, also known as rui or roho labeo, is a large omnivorous fish that is found in rivers in South Asia. It's a member of the carp family and is often used in aquaculture. It’s a staple diet and is widely consumed all over India for its simple yet rich taste and richness in Vitamin C.
2) Catla Catla, also known as the major South Asian carp, is an economically important South Asian freshwater fish in the carp family. It is often called the common man’s source of meat, for both its fleshy body and wide availability. It is often the star of feasts, where gigantic Catlas are chopped down and served as a substitute to other sources of meat.
3) Bhetki Also known as Asian sea bass, or giant sea perch, the Bhetki is a fish popular for having little to no bones, making it favorable for recipes that use its fillets. Often used for starters and street food such as fish fry, it holds a special place in the hearts of bengalis, making it second only to hilsa.
4) Boal A freshwater member of the catfish family, Boal, due to having few bones similar bhetki, is one of the many catfishes that find a place in a bengali’s diet. It is high in fat and omega-3 fatty acids, and is a good source of protein. It is often prepared in a spicy fish curry, but can also be fried.
5) Ilish The star of Bengali cuisine and the ruler of many hearts, Ilish’s popularity is highlighted by the fact that its the national fish of Bangladesh and state fish of West Bengal. Although its availability is seasonal with supplies often lacking to meet the gigantic demand it enjoys, Ilish still finds a near-eternal place in Bengali culture, with festive celebrations held in its honor.

Bengali fish curry, also known as “Maacher Jhol,” is a classic and beloved dish in Bengali cuisine. Bengali fish curry Ingredients: 
5-6 pieces of fresh fish (such as Rahu or Katla)
2 medium-sized onions, julienned
100 gm tomato paste
10 ml mustard oil
1/2 tablespoon turmeric powder
1 tablespoon red chili powder
1 tablespoon coriander powder
Salt to taste
1/2 teaspoon garam masala 
Bengali fish curry Preparation: 
Begin by cleaning the fish pieces thoroughly under running water. Pat them dry with a paper towel or clean kitchen cloth.
In a mixing bowl, combine the fish pieces with a pinch of salt and turmeric powder. Gently massage the marinade into the fish, ensuring each piece is evenly coated. Set aside for 10-15 minutes to allow the flavors to meld.
Heat mustard oil in a pan or kadhai over medium-high heat. Once the oil is hot, carefully add the marinated fish pieces and fry until they turn crispy and golden brown on both sides. Remove the fried fish from the pan and set it aside on a plate lined with a paper towel to absorb any excess oil.
In the same pan, heat a little more mustard oil. Once the oil is hot, add the julienned onions and sauté until they turn golden brown and fragrant.
Next, add the dry spices: turmeric powder, red chili powder, coriander powder, and salt. Stir continuously for about 1-2 minutes, allowing the spices to bloom and release their aroma.
Incorporate the tomato paste into the pan and cook for 2-3 minutes, stirring frequently, until the paste is well combined with the spices and onions.
Carefully add the fried fish pieces to the pan and gently mix them with the spiced tomato mixture, ensuring each piece is coated evenly.
Pour in about 1 cup (100 ml) of water and sprinkle the garam masala over the curry. Give it a gentle stir to combine everything well.
Cover the pan with a lid and let the curry simmer on low heat for about 5-7 minutes. This step allows the flavors to meld together and the fish to absorb the rich, aromatic curry sauce.
After simmering, remove the lid and check the consistency of the curry. If you prefer a thinner gravy, add a little more water and let it cook for an additional 2-3 minutes.
