This recipe was, quite simply, a delight, packed full of flavor and so many delicious textures and ingredients.
I made roughly a third of this and will definitely say that the less red onion you opt for here, the better. Or at least chop it smaller/thinner than I did.
True to form, my oven time was quite a bit longer than called for, but that gave my couscous plenty of time to cook (I started it after the cauliflower and chickpeas were prepped), and for the salad and herbs action to really meld in their own flavors and juices.
There were actually a lot of juices in the bottom of my bowl when I got to the end of this meal, but I’m certainly not complaining about any of it. It’s been a while since I’ve tried a new bowl recipe, and this was just perfect — yummy, easy, flavorful, fresh, delicious.
