Loveliness and prettification has NEVER been my schtick, and I hate that the summary of my morning sounds like an Eddie Bauer catalog or one of those instagram accounts that are all leather goods and falling leaves –– BUT life out here does feel good. For all the confused looks we got for making this leap, there is nothing I’ve felt so sure about, next to marrying Shaun. We definitely didn’t know how life would change when we waved goodbye to the city, but we knew it would, and that it would for the better. They say “wherever you go, there you are,” which is true. We brought our same soggy hearts and issues and questions up the canyon with us, but… yeah… and HERE we are, choosing the front row to our own lives and experiences, away from that which no longer serves. I think the “there” can hold more water than we care to admit. But I’m biased. The mountains are my church. It’s impossible to not step outside, breathe deep, and get hit with this rush of perspective. For the first time in a very long time, I think I recognize the sound of my heartbeat again.

There’s this pull-apart bread I’ve been sitting on a while, though. I made it a month ago, the last shoot in the old place. I was feeling that sort of manic-compulsive desire to bake and make a wholly sticky mess of a half-packed kitchen (pro tip: wine bottles make A+ rolling pins). I’m the kind of person who turns to baking when things feel totally psychedelic and out of control. Unlike throwing together something grainy, herby, green-ish, crunchy, tangy in a bowl and calling it a masterpiece, baking requires a high degree of rule-following that tends to turn me off on most days (in the kitchen, and in life). But I appreciate the precision. The requisite patience. The attention to detail. I crave it when everything else in the world feels topsy turvy. I promise the pay-off is big on this one, guys.

For the dough (slightly adapted from The Pioneer Woman): 

2 cups milk

1/2 cup butter 

1/2 cup white sugar

2-1/4 tsp active dry yeast

4 cups AP flour

1/2 cup (additional) AP flour

1/2 tsp baking powder

1/2 tsp Baking Soda

dash of salt 

Filling:

2 cups dried mission figs, soaked + softened

2 Tbsp ground anise seed

10 Tbsp butter, melted

1 cup packed brown sugar

1/4 cup white sugar

2 tsp cinnamon

Preheat oven to 350’ F.

Start with the dough. Combine milk and butter in a small sauce pan. Heat until just beginning to steam. Turn off and remove from heat. Stir in yeast and 1/2 cup sugar. Let sit for 5 minutes. In a stand mixer with a bread hook or in a large bowl with wooden spoon, stir together liquid with 4 cups of flour. Wait an hour for the dough to rise, then add 1/2 cup additional flour, baking powder, baking soda, and salt.

Place figs in a bowl of warm water to soften for 20 minutes. Strain, dry, and place in the basin of a food processor or a immersion blender. Add anise, melted butter, sugar, and cinnamon. Blend until a sticky paste forms. Add more butter or a bit of milk to thin if necessary. Set aside.

On a floured surface, roll out dough into a large rectangle, about 1/4” thick. Spread fig/anise paste evenly until it covers all of the dough. WARNING: the next phase is extremely messy. It’s unavoidable. Just have fun with it. Cut the dough into 6 to 8 strips, then stack all the strips into one stack. Cut the stack of strips into 6 slices. Place the stacks sideways into a buttered bread pan. If you’re me, you will probably feel the need to shove things in the holes… Dee recommends against this, but hey… it doesn’t always have to be pretty to taste good.

Cover with a dish towel and allow to rise for 20 minutes. Bake for 30 minutes and then check to make sure the top is not browning. Test the center… are things still gooey in there? Cover with tin foil and continue to bake for 10, 15, 20 minutes.

  In sunny Malibu, Calif., the Civic Center Water Treatment Facility provides a new level of sustainable water management by using efficient and safe reuse of flows rather than using drinking water for landscape irrigation. 

The project brought a centralized community facility with a robust level of treatment and a recycled water system to the area. Malibu’s treated wastewater will now be available to irrigate and green some of the city’s most popular public spaces. 

The plant will save up to 70 million gal of fresh water annually that would have otherwise been given up to lawns, creating an opportunity to serve more than 1,500 residents with quality drinking water. Wastewater treated by the new facility represents a responsible way to produce recycled water that will help ease the impacts of future drought cycles. 

“This has probably been in the making for probably 10, 15 years for the city of Malibu,” said Rob Duboux, public works director and city engineer for the city of Malibu. “Malibu was previously an unincorporated portion of LA county and all of their properties—a wastewater system and septic system—all the properties had their own separate septic systems that they had to own and operate several years ago.”

The Civic Center Water Treatment Facility can generate up to 70 million gal of clean Title 22 certified recycled water every year for irrigation.

Malibu always has been a step ahead in adopting environmentally focused programs, policies and projects that have led the state to real action with tangible benefits, Duboux said. The project supports efforts to address California’s drought by reducing the use of drinking water to irrigate public spaces and parks.

The $60 million facility was made possible through the cooperation of Civic Center property owners with assistance from the California State Water Resources Control Board. The city formed a community facilities district to fund the design, and formed an assessment district among Civic Center properties to fund the construction. The city was able to secure a $9 million grant, a 1% interest State Revolving Fund (SRF) loan of $24.6 million and a 1.7% interest SRF loan of $26.8 million that helps lower the annual assessments for each property owner.

The LA regional water control board put a memorandum on septic system use in the Malibu Civic Center area, Duboux said. It is located in the central part of the city, close to Pepperdine University. It also is where a number of commercial properties are located. 

“Eventually, we came up with a solution to phase in all replacements or to eliminate all the septic systems within this civic center area, where it’s mostly commercial area,” Duboux said. “The regional board and the city entered into a memorandum of understanding, where they went and phased in the collection system and the treatment plant.” 

The project was completed in three phases, Duboux said. The daily flow was 211,000 gal per day (gpd), and phase two was 350,000 gpd. Phase three was the final phase and was completed in 2018, which brough the flow to its current total of 502,000 gpd.

The facility will capture and treat up to 200,000 gal of wastewater daily and convert the water for irrigation purposes. The treatment plant uses multiple processes to produce clean, Title 22-certified recycled water, including particle filtration, centrifuges, ultra-fine filtration membranes, bio-digestion, and ultraviolet light to kill any remaining bacteria and viruses. 

“It’s a membrane bioreactor system. It goes into our 100,000 gal equalization basin. From there it goes into a biological reactor that is used for the process. We have four separate trains used for that process. We then do our final screening with a membrane facility where it is treated at the last stage,” Duboux said. “After the membranes it goes over to a UV disinfection system where it kills all the remaining bacteria and viruses. Then it gets transported over to our recycled water distribution center where it gets pumped out to all the customers that are connected into wastewater and they’re able to get recycled water.”

The Challenges

The first challenge for the staff was convincing the public that the new system would provide a benefit to the community by generating recycled water for irrigation, reducing the potable water demand. 

“This is going to be a good system. It’s going to be better for the environment, and better for the community in the long haul,” Duboux said. “This took a lot of stakeholder meetings with property owners and other community members to discuss the system and what the benefits will be.” 

Another challenge was putting in the new collection system. Because the facility is right next to the ocean, it has a lot of groundwater issues, Duboux said. In some areas, the system is underwater. 

“We didn’t want any groundwater, or saltwater from the ocean to come up through our system,” Duboux said. “Because our plant wasn’t able to treat that level of water, making sure it was constructed watertight was important. The second part was coordinating all of the connection from all the property owners into the new collection system. The collection system was put in and lateral was run up to the property line. It was the property owner’s responsibility to connect their system to the collection system.”

A deadline was put in place by the regional board to make sure all septic systems were offline by a certain date. There was a lot of coordination between the staff and the property owners to make sure the owners were aware of these deadlines. Fortunately, everyone involved met the deadline at the last minute and the property owners were able to connect to the treatment plant, Duboux said.

Waste from the membrane reactors is processed in the solids handling facility prior to off-site disposal.

Air Pressure

Reverse air pressure in all of the buildings prevents odors from escaping the facility. The air that is drawn out is pushed out through a bed of mulch and wood chips, in an all-natural, chemical-free, filtration process to reduce the impact of foul smells on the surrounding community. 

“Our headworks building is essentially an enclosed structure. We use blowers and fans to draw the foul air from those facilities,” Duboux said. “Our influence pump station, our headworks, our bioreactor, and solid handling facility are all connected to a blower system that takes all the foul air from these facilities and runs it through a bioreactor system.” 

The foul air goes into underground pipes, which have holes in them. The air then seeps up through those holes. The pipes are embedded in approximately 3 to 4 ft of mulch material, which keeps it moist, Duboux explained. 

“You don’t smell it in any of the facilities. It’s pretty remarkable,” Duboux said. “All of the headworks machinery has their individual foul air piping that draws all the air from it. This is good because right across the street from our plant we have some condo [condominium] development, and we also have a school.”

The community did not want to smell a wastewater plant, so designers made an effort to ensure the system was sustainable enough to draw those foul odors without adding any chemicals to the process. All of these features were implemented during the final phase, Duboux said. 

“This plant is pretty unique to where we’re able to treat this wastewater in this small area and provide the huge benefit of recycled water to the customers for irrigation,” Duboux said. “Potable water here is kind of a commodity, and a very high commodity.” 

For several years, California has been in a state of drought and using drinking water for irrigation is something everyone should approach with thoughtfulness and caution, Duboux said. 

“We’re conserving as much water as we can for essential needs,” Duboux said. “That is a really great benefit for this community, and to be able to actually have the landscaping that everyone likes to have out there and not have a huge demand on potable water, that is one of the biggest benefits I see for this treatment plant.”

When it comes to roasting a chicken, there's no doubt about it, I cook up one mean bird that is always succulent, juicy, and delicious.  So this weekend I decided to ply my skills on a bird of a different feather and try making a roasted turkey the same way I do a chicken.  It turned out fantastic and got rave reviews!  

OVEN ROASTED TURKEY & VEGETABLES:

1 (8 - 10 pound) BUTTERBALL Young Turkey (thawed) 6 large Carrots (chunked) 6 ribs of Celery (chunked) 1 medium Onion (sliced & separated) 1 clove Garlic (minced) 1 (32 oz carton) Chicken Broth 2 TBSP Parsley Flakes 2 Chicken Bouillon Cubes 3 - 4 Bay Leaves (2 if large leaves) 1 tsp. GRAVY MASTER Browning & Caramelizing Seasoning 4 TBSP Butter Salt & Pepper Lemon Pepper Seasoning* Poultry Seasoning Paprika 1 stick COLD Butter (for basting) Stuffing

If your turkey is frozen, allow it to thaw in your refrigerator in it's packaging on the bottom shelf for 2 - 3 days prior to cooking. Start by removing the packaging from your thawed turkey and be sure to check inside the body & neck cavities for packages of giblets, gravy mix concentrate, and the neck.  Be sure to remove these items prior to cooking.  Rinse yor turkey under cool water.  Firmly stuff the body & neck cavities with stuffing as desired. Spray a LARGE roasting pan with non-stick cooking spray and then line the bottom of the roaster with pieces of carrots, celery, onion, and minced garlic.  Add the chicken broth, parsley, bouillon cubes, bay leaves, and Gravy Mater; stir together.  Dot with butter. Place the stuffed turkey on top of the bed of vegetables in the roaster and season it by dusting it with salt & pepper, lemon pepper seasoning, poultry seasoning, and paprika.  Cover and roast in the oven at 425F, basting the turkey thoroughly every 45 - 50 minutes of cooking time by dipping the stick of cold butter into the hot broth around the turkey and then rubbing the turkey with the melted butter -- also spoon some of the broth over the turkey while basting as well.  Roast the turkey for approximately 2 - 3 hours or until a meat thermometer reads 175F when inserted into the breast. Transfer the turkey to a serving platter and allow it to rest for at least 20 minutes prior to carving and removing the stuffing.  Drain the broth from the vegetables through a large metal sieve and save the broth to make gravy and surround the turkey with the cooked vegetables.  Serve while warm.

Serves:  6 - 8 Serving Size = 2 - 3 ounces of turkey with about 1/2 cup of vegetables

Shortly after Thanksgiving last year, I was visiting with my best friend Kathy and we had lunch together while I was there.  We were cleaning up some Thanksgiving meal leftovers for lunch that day and I particularly enjoyed her stuffing.  It was very good, moist, savory, and had just a touch of sweetness that I couldn't place.  Usually I can break down a recipe for almost anything simply from taste alone, but this one had me stumped.  So I just had to have this recipe!  I sat down with her last week and had her tell me how she makes this wonderful stuffing and wrote it all down so I could make it and share this great recipe with all of you as well.

KATHY C's THANKSGIVING STUFFING: Recipe source: Kathy Cappo - Avonmore, Pennsylvania

1 (6 oz box) STOVE TOP Stuffing Mix (chicken or turkey) 1 large Sweet White Onion (chopped) 2 1/2 cups Celery (diced) 3/4 cup Unsalted Butter (1 1/2 sticks) McCORMICK Season All Seasoned Salt Salt & Pepper (to taste) Dried Bread Cubes (about 1 gallon bag full) 1/2 cup Raisins 1/2 cup Chopped Walnuts 2 large Eggs (beaten) 1 cup Milk [approximately]

Start by preparing the Stove Top stuffing mix according to the package directions. In a large non-stick skillet:  combine the onions, celery, and butter.  Season generously with seasoned salt (at least 2 tsp.) and salt & pepper to taste.  Cook over medium high heat until the vegetables are tender.  Turn off the heat and mix in about half of the dried bread cubes until they are well coated.  Transfer the contents of the skillet to a VERY LARGE mixing bowl (or basin).  Add the remaining dried bread cubes, raisins, and walnuts.  Toss together until thoroughly mixed.  Allow to cool for about 20 - 30 minutes.  Then add 2 beaten eggs and the milk.  Mix together until moist enough to form a ball when squeezed together in your hand.  If the stuffing won't retain a ball shape when squeezed, add another beaten egg or some more milk until it does.

Use the stuffing to stuff a chicken or turkey and bake as directed depending on the size of the bird.

Any remaining uncooked stuffing can be pressed into the bottom of a 13x9 inch sheet cake pan, dotted with 2 TBSP of butter and pour a 12 oz can of chicken broth over it.  Cover with foil, poke holes in the foil to vent steam, and bake for 1 hour at 350F -- uncover and bake for 15 minutes more to brown the top of the stuffing.

Serves:   6 - 8 Serving Size = about 1 cup

I just love a nice big hunk of pound cake slathered with butter.  But sometimes you want something just a bit different.  This recipe for almond pound cake should do the trick.  It has the same dense, moist consistency as regular pound cake, but the flavor is tweaked up a couple notches.

ALMOND POUND CAKE:

1 box DUNCAN HEINZ Classic White Cake Mix 1 small box Sugar-free Vanilla Instant Pudding 4 large Eggs 1 cup Milk 1/3 cup Melted Butter (cooled to room temp) 1 TBSP Almond Extract 1 tsp. Baking Powder 3/4 cup Sliced Almonds

Grease & flour 2 loaf pans and preheat the oven to 350F. Into a large mixing bowl: combine the cake mix, instant pudding, eggs, milk, melted butter, almond extract, and baking powder.  Beat at low speed with an electric mixer until the ingredients are moistened and then beat at medium speed for 2 - 3 minutes. Place the almonds into the bowl of a food processor and process until the almonds are pulverized to an almost flour-like consistency.  Add the almond "flour" to the batter and mix at medium speed for 1 - 2 minutes longer.  Divide the batter equally between the 2 loaf pans and bake at 350F for 40 - 45 minutes until golden brown, starting to pull away from the sides of the pans, and a toothpick inserted into the center of the loaves comes out clean.  Cool on wire racks for 25 - 30 minutes before removing from pans.  Cool completely before slicing & serving.  To serve:  slice te loaves into 10 - 12 slices each and lightly dust with powdered sugar or spread with strawberry preserves.

Serves: 20 - 24 Serving Size = 1 slice
