this is my recipe for clove oil which i use for like basically everything
i don’t really have measurements… so measure with your heart i guess 🎀
olive oil (or any desired skin-safe oil) as a carrier oil
cloves (i recommend whole but ground is ok too) for luck and protection
cinnamon for prosperity and happiness
salt for protection and cleansing
rosemary for focus and clarity
allspice for peace
i added a small bit of vanilla essential oil for scent, this is completely optional and you could use any scent :)
i use this stuff for EVERYTHING. i put it in my hair, use it before my perfume, anoint candles with it, etc. i love it 💌

Garlic Beefsteak with Mushrooms and Béchamel Sauce
Ingredients:
Steak:
2 beef steaks (such as ribeye or sirloin), about 1-inch thick
2 tablespoons olive oil
2 cloves garlic, minced
Salt and freshly ground black pepper to taste
Fresh rosemary sprigs (for garnish)
Mushrooms:
1 cup mushrooms, sliced (such as cremini or button)
1 tablespoon butter
1 clove garlic, minced
Salt to taste
Béchamel Sauce:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups milk
Salt and white pepper to taste
A pinch of nutmeg (optional)
Instructions:
Prepare the Steak:
Season the steaks generously with salt and black pepper.
In a skillet over medium-high heat, warm the olive oil and add the minced garlic. Sauté for about 1 minute until fragrant.
Add the steaks to the skillet and cook to your desired doneness, about 3-4 minutes per side for medium-rare, depending on thickness.
Remove steaks from the skillet and let them rest.
Cook the Mushrooms:
In the same skillet, melt butter over medium heat.
Add the sliced mushrooms and the second clove of minced garlic, sautéing until the mushrooms are golden and tender.
Season with salt to taste. Remove from heat and set aside.
Make the Béchamel Sauce:
In a saucepan, melt 2 tablespoons of butter over medium heat.
Whisk in the flour and cook for about 2 minutes without letting it brown.
Gradually add the milk, whisking constantly to prevent any lumps from forming.
Continue to cook and stir until the sauce thickens enough to coat the back of a spoon.
Season with salt, white pepper, and a pinch of nutmeg if desired. Remove from heat.
Assemble the Dish:
Place the rested steaks on a warm plate.
Top the steaks with the sautéed mushrooms.
Pour the warm béchamel sauce over the steaks and mushrooms.
Garnish with fresh rosemary sprigs.

the thing about being a good cook is that sometimes you feel like shit about getting told for the hundredth time to diet and exercise more by your doctor. and you go home and begrudgingly make a "diet" meal (more bc you haven't gone grocery shopping this week and are low on ingredients and also need to use up the zucchini that's about to rot in the fridge) and while it looks really ugly it ends up tasting really good.

Rosemary Hasselback Potatoes

Crispy outside and fluffy inside, like any good roasted spud, these beautifully decorative Rosemary Hasselback Potatoes make a delicious side to your Sunday Roast! Have a good one!
Ingredients (serves 3):
half a dozen large Garden Potatoes 
3 fluffy sprigs fresh rosemary
4 medium garlic cloves
about 3 tablespoons olive oil
1 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
Preheat oven to 200°C/395°F.
Thoroughly scrub and rinse the Potatoes, then peel them.
Holding a Potato firmly in your hand, use a sharp knife to cut very thin slices without going all the way through, so the Potato remains whole.
Repeat with remaining Potatoes.
Cut two of the rosemary sprigs in half, and remove the leaves of the third into a large roasting tin.
Crush garlic cloves, and add to the tin.
Add prepared Potatoes to the tin. Drizzle generously with olive oil, and rub them thoroughly, including between their "slices", to coat well in oil, rosemary and garlic.
Season well with fleur de sel and black pepper.
Place tin in the middle of the hot oven, and roast, at 200°C/395°F, for one hour, until cooked through and golden brown and crispy on top.
These Rosemary Hasselback Potatoes make an excellent side to Roast Turkey or Roast Beef.
