Home Ec Revisited
If any of you took Home Ec (home economics) in Jr. High like I did, the first thing they tell you is to make sure you have all the ingredients for your recipe before you start. I guess I needed reminding because I was going to make potato salad today.
So I boiled the eggs and peeled them. Then I peeled the potatoes then boiled them. Then I chopped up some green onion and gathered the pickle relish, the honey mustard, the seasoned salt and the mayo.  
When it came time to mix it all up, I knew I only had about 3 tablespoons of mayo in the old jar.  But I was sure I had other jars. So the hunt began.  I checked the pantry, the steel shelves, a bunch of bags that hadn’t been put away yet, and some boxes of food. I even checked the top of the refrigerator.
So I told my partner I’d have to go to the store to finish his potato salad because I couldn’t find the mayo. He said the name brand was on sale 2 for $5.  So off I went. And the brand on sale was sold out. So I had to buy a more expensive jar. At least I got to pick up some fried chicken to go with it.
So I get home, put the chicken in a bag for the refrigerator, turn around and there, in a bag on the floor, underneath a box, I see the mayonnaise that I already bought! I kid you not.  So I saved the new one for later and opened the one I already had. Fiddlesticks!

I never enjoyed cooking until a health issue in my 30's forced me to take control of my diet. Knowing exactly what was in the food I was eating became a slight obsession to say the least. I despised cooking up to that point. Now it is something that I find great joy and calmness.
This is the first "real" recipe I made. I was living in a rural area at the time so it seemed so exotic to be using salsa verde. Although no longer a staple in my menu, I make this every few years just for the nostalgia. I want to remember how it felt to cook something that I had never heard of let alone eaten! The ingredients and process are simple, but it felt like I had mastered the cooking world!

Today's dinner, fried rice. I think this is my second time making fried rice. My first was at school when I attended Kemahiran Hidup class. Teacher said put a scoop of oil in the wok. And so we did, with a ladle instead of a spoon. 😂 I ate that fried rice that day, and after I finished there were still a ton of oil in my container. So I suggest people suffering from Thyroid, Diabetes to start using this vegetable if it has never come to your attention. Here's a simple easy recipe to incorporate this humble vegetable into your meals. 👩‍🍳Heat some oil(any), crackle some mustard seeds and curry leaves. Add some onions, garlic, sliced green chilli and fry them. Add the chopped ivy gourds, add some salt, turmeric and red chilli pwd. Add 1-2 tbsp water, cover with lid and cook in low fire. Dinner last night. Striped bass with leftover roasted cauliflower risotto. The fishmonger was kind enough to show me how to remove the scales off of the fish. He explained to me that using a knife would destroy the fish. I am still skirmish about the guts removal. This is the second whole fish I have cooked. To be honest, I was always afraid of cooking fish. I learned how to cook salmon fairly well after years of destroying fish through cooking. I even know how to crisp the skin of a salmon filet. My mom has been patiently talking me through my fish fears for years. My greatest fish enemy is cod. So learning to not fear cooking fish has been a journey to say the least. With the striped bass, I was going to make another batch of the chimichurri like sauce I made for the red snapper, it was so tasty on the snapper. However, something told me to read some recipes on striped bass. After reading a few recipes, I realized striped bass only needs a few things to make it taste good. So, I mixed olive oil with salt, pepper and garlic powder. Then I rubbed the inside and outside with the olive oil mixture. Inside each fish, I stuffed it with rosemary, chives, parsley, tarragon, thyme and thin slices of lemon. In between the fish, I just made a nest of herbs placed on lemons slices and garlic. I added bay leaves and shallots to the nest. As the fish roasted in the oven my home was so fragrant with the scent of the roasting herbs, it was heavenly. I did let the bass go under the broiler for a few moments. The skin crisped a little, the tail and herbs charred a bit. While this is going on with the fish. I warmed the risotto with a little Europeans butter. It enhanced the flavor and it tasted even better than when I made it on Saturday. My original intent was to make the fish with rice and beans. A little homage to my beloved Colombia. My husband and I on are a staycation and we just came from one of our daily road trips where I scarred him with my podcast choices. Vegetable Sambar with mini buns - Now this is an unorthodox combination. Chaste South Indian officinados will be up in arms & the ones departed will be rolling in their graves. I crave leave to defend the combo. The story/explanation is quire simple. Ran out of rice. Not a grain. Therefore: Recipie & Process: Step 1 - Soak Tur Dal in hot water for 30 mins. Pressure cook with Salt, Turmeric, Red Chilli Powder, dash of garam masala, cinnamon stick. Step 2 - Let out the steam and add chopped veggies: Carrots, Potatoes, Cauliflower, Tomatoes, Onions. Add tamarind juice, jaggery. Lightly roast Sambar Powder & add water. Add this to the contents of the cooker & pressure cook once more. Step 3: Release pressure & add cumin, mustard seeds lightly fried in ghee alongwith curry leaves & bring to a boil. Viola!
