So, in Danganronpa: S, I've been trying to figure out the mechanics of the items that increase a stat by 1 or 2 when a character levels up and how they interact with the level up squares. Does that increase happen once per individual level, or once per square?
I'm not 100% sure on what you mean by "items," but I think I can make an educated guess; you're talking about the weapons and armor you buy from the Monokids when you land on a "Shop Square" in the main board game, yes?
It's been a couple months since I was last playing DRS, but I believe the characters get a flat increase to their base stats no matter what your character's level is. So if an early weapon claims to give you +5 on attack, it would therefore always be giving you +5 to attack over and above whatever your stat is, and that would continue to increase as you get more levels.
For example: If your attack stat on your character was at 10 when you bought a +5 weapon, your total attack stat would be at 15. And if your attack stat on your character later says it's reached 12 after you go up a level but you're still carrying that +5 weapon, your total attack stat would now be 17. And so on.
I probably need to boot it back up and verify this to be 100% certain.

Danganronpa S is weirdly unsettling.
Like, it's cute and fun and slice of life but the real context of these characters keeps slipping into my brain.
I picked Komaru for my first play of the board game. Just unlocked a scene with Makoto and Sayaka, where Komaru's fangirling out over the fact that Makoto really truly goes to school with Sayaka, an idol that Komaru's super into.
And it's cute. Komaru's all flustered. Sayaka's having a good time. It's a sweet moment.
Sayaka framed Makoto for murder.
In a fit of desperation, Sayaka took advantage of Makoto's blind, naïve trust to try and commit a murder that would be unmistakably pinned on him.
That is a thing that happened.
And I just. I can't get that out of my brain. While I'm sitting here watching the Naegis discuss how cool it is that Sayaka and Makoto are classmates.
