Madras Idli Kadai is a South Indian vegetarian restaurant,  with an extensive variety of dosas and iuthappam, as well as appetizers, idli, combo tiffins (pongol, idli, vada), parathas, etc. They also sell dosa batter. The menu isn’t very descriptive though.
Andhra kara masala dosa ($10.45): the dosa is spread with a spicy red chili paste and filled with chunky potato masala. It’s served with sambar and two chutneys, tomato and coconut. The dosa is ginormous and it’s filled with potato masala, so come hungry. The dosa is super thin and very crispy, almost like thin potato chips. The chili paste was a tad too salty and the dosa was on the greasier side, but the flavor was very good and everything else was great too (sambar – a light soup, tasty chutneys for dipping).
Masala tea ($3.45): hot and fragrant
Service wasn’t that great. No one checked on me after delivering the food. But they leave a huge carafe of water at your table, so you have enough to drink. I wanted lids for the sauce cups (to take home) and was told that they ran out. They actually had some but the guy didn’t bother to look for them. The interior looked new.
During happy hour, Tuesday – Friday from 2 PM – 6 PM, dosas are just $6.95. Such a steal.

BAJRA DOSA
I consider this a work in progress… This was my second attempt, the first was quite catastrophic, if I am to be honest. The recipe, as well as a very detailed video, is available at Naturally Nidhi, a blog I love and always teases me into expanding my cooking horizons. You will need millet flour, and a special skillet - tava is the real thing – but I used a non-stick crepe pan. I loved the flavor…

Ava appeared before him, shimmering white light illuminating her figure before slowly falling away, ribbons on a phantom wind. She raised her chin, golden-flecked eyes meeting his. And the solemn expression on her face was enough to force a shuddering deep breath into his lungs.
Vincent dared to take a step closer, then two. "What happened?"
She could not drag her gaze away from him. Her lip trembled, as though finding it difficult to speak. Her fists curled at her sides in reluctance; he could see she would give anything in this moment to not have to say the words out loud.
"I had to make a bargain," she finally said, tentative and laced with regret. "I couldn't let it all be for nothing."
Thunder cracked inside his mind. It didn't matter that he had no idea what she might say next, he could sense the despair as much as he could feel every other part of her.
Her eyes glazed with tears, the fight to remain composed already revealing cracks - shoulders dropped, head tilting to one side as she looked upon him with desperation. With defeat.
"What did you do?" he breathed. He was not sure how to prepare for whatever was to come next.
In a few strides, Ava was before him. "I did the only final thing left I could think of. The gods, they ... they have already decided what is to happen."
Vincent swallowed, heart hammering and breaking all at once as she struggled not to allow her tears to fall. He reached for her hand and pulled her closer.
She closed her eyes and laid a palm against his chest. "Two lives for the lives of all," she whispered.

Best dosas…and I’ve had a lot of dosas. Dosa Biriyanizz is in a strip mall in Central Fremont, not far from Fremont Hub (it’s still called Fremont Hub?). Its specialties are dosas, biryanis, and butter chicken or so I was told. The menu also includes appetizers (e.g., pakora, samosa), tandoori, chaats, curries, naan, Indo-Chinese dishes (noodles, fried rice), desserts, and beverages.
Love how there’s a wide variety of dosa to choose from. Dosas are made with a fermented batter of rice & lentils cooked on a hot griddle and cooked to a golden crisp. It’s served with sambar (lentil vegetable soup), peanut sauce, coconut sauce, and tomato sauce (aka chutney).
Order from the server. Water is provided without asking for it.
Masala chai ($2.99)
Chittoor spicy dosa ($11.99): Gigantic dosa (over a foot long) with a spicy paste that’s spread on the inside, it’s super thin and extra crispy. The sauces are really good too. Never had dosa with peanut sauce before. The sambar (lentil) soup was very good.
Ghee podi dosa ($11.99): Also gigantic, thin, and extra crispy. You can taste coconut and butter. Greasier than the Chittoor spicy dosa but still very good.
It’s a nice-looking large restaurant that looks like it might have once been a diner but has obviously been remodeled. The walls are bright and hung with artwork of dancers. The service seems a little slow but is friendly. They play Indian music videos, so you can always watch those while you’re waiting or eating. Parking was easy to find.

Ingredients –Udad dal,Rice,Potato,onions,green chillies,turmeric- a pinch,salt,oil.
In the night soak 1 cup Udad dal and 2 cups rice( thick one). Next morning wash this thoroughly 3 times and grind in the mixer.Put ¼ spoon salt mix and keep this aside for 2 hrs.
In the meanwhile make bhaji—Cut potatoes and onions fine small pieces.In the frying pan add ½ spoon edible oil put onion pieces fry,then add potato pieces to cook soft by adding little water.Add 2-3 green chillies+ pinch turmeric powder and pinch salt+pinch Patanjali masala powder.Mix thoroughly --- Ready.
Then take Dosa paste on Tawa flat Pan—lay out on this to make round flat Dosas with little oil – Cook ---- Ready.
Masala Dosas ready to serve with Bhaji..
