Smoky Spinach Quiche
Light...fluffy...tender...flavorful...piquant...this crustless spinach quiche has all that and foregoes the extra carbs a crust provides. Layer sauteed scallions, smoked goat Gouda and Swiss cheeses, a generous portion of spinach topped with a milk-egg-smoky Spanish paprika-nutmeg custard to hold all these flavors together in a pie plate. Bake until the egg is just set to then top with Romano cheese to then pop it back into the oven to melt this over all. A great dinner to savor...see what you think.
oil
2/3 c. shallots, ribbon cut
1/2 c. each smokey goat Gouda and Swiss cheese, coarse grated
1 - 5 oz. bag spinach, ribbon cut
5 eggs, whisked
1 1/4 c. half and half
1 t. salt
dash nutmeg
dash smoky Spanish paprika
2/3 c. Romano cheese, fine grated
Preheat oven to 350 degrees. Grease a pie plate. Saute shallots in oil and transfer to the pie plate. Layer Gouda/Swiss cheeses and spinach. In a large mixing bowl, whisk together eggs, milk, salt, nutmeg, and paprika. Pour over spinach covering all layers. Bake 55 min. or until knife inserted in the center comes out clean. Sprinkle Romano cheese over all to then pop back into the oven until it's well melted. Serve this along side a crisp green salad or cool cucumber slices.

Chicken Corn Soup
Ingredients:
(just use the amount that you have)
chicken (or other ground meat - about 3 ounces)
corn (canned, can blend to make creamy)
2 eggs
chicken broth (2 cups)
water
Garnishes:
green onion
cilantro
sesame oil
white pepper
chili / chili oil
Instructions:
Marinate chicken with 1/2 tsp salt, 1/2 tsp shaoxing rice wine, a pinch of baking soda, and 1/2 tsp white pepper. Can also use sesame oil and/or soy sauce.
Add veggies
Add chicken broth. Boil.
Garnish with white pepper, soy sauce, sesame oil, cilantro, and green onions.
07/16/2024 - I used ground turkey because that's what I had, but it's equally as flavorless as some other recipes that used chicken breast. This can also be done with rotisserie chicken. I also threw in some carrots because I had some extra but this can be omitted.

This mid-week dinner could have used a bit more color, but the bold flavors made up for it big time. These were "No Knife Needed" Braised Pork Country Ribs with a light Red Wine Gravy and Basmati Rice with Sweet Peppers. The diced peppers were for texture more than anything, and the braise on the pork was low and slow after a good strong sear. I marinated the pork overnight in a standard AP rub and olive oil. Have a safe rest of the week everyone!

Simple Layered Salad
Sometimes I not in the mood to put much effort into lunch or dinner, there's nothing made ahead (surprise!) so what to do I ask myself. One of my fall backs is a layered salad. It's just romaine lettuce sliced thin, cottage cheese, fruit - pears, cantaloupe, berries, topped with sunflower seeds or what ever seed variety is to hand. Stack it up, grasp your fork and dig in. A healthy meal with little to no effort. Tip - the romaine and fruit can come already bagged/chopped so there is not even that chore for you - nice!
Romaine greens, sliced thin across the leaves
1 c.+ cottage cheese
1 - 2 pears, cored, sliced with skins
1/2 c.+ sunflower seeds
On a dinner plate, layer romaine, cottage cheese, pears, sunflower seeds to then grab up your fork and enjoy! Yes, it can be just that easy to make a healthy meal for yourself with little effort...sounds good to me and it is.

This recipe for Lasagna Noodle Casserole has all the flavors of regular lasagna, but it's made in a simpler casserole dish. It's great for a cozy family dinner and tastes even better the next day!
Ingredients: 12 lasagna noodles, cooked and drained. 1 pound ground beef. 1 medium onion, chopped. 2 cloves garlic, minced. 1 can 15 ounces tomato sauce. 1 can 14-1/2 ounces diced tomatoes, undrained. 1 teaspoon dried basil. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon pepper. 2 cups shredded mozzarella cheese. 1 cup ricotta cheese. 1/4 cup grated Parmesan cheese.
Instructions: Warm the oven up to 175F 350C. Cook the ground beef, onion, and garlic in a large skillet over medium-low heat until the beef is browned and the onion is soft. Then, drain the mixture. Basil, oregano, salt, and pepper should all be added now. Bring to a boil, then lower the heat and let it simmer for 10 minutes with the lid off. In a 13x9-inch baking dish that has been greased, spread out 1/2 cup of meat sauce. Put down four noodles, then half of the meat sauce that's left, one cup of mozzarella cheese, and half of the ricotta cheese. Add more layers. Add the rest of the noodles and meat sauce on top. Put a lid on it and bake for 50 minutes. Remove the lid and top with the rest of the mozzarella cheese and Parmesan cheese. For another 10 to 15 minutes, or until hot all the way through and the cheese is melted. Give it 10 minutes to sit before you serve.
Prep Time: 30 minutes
Cook Time: 1 hour 15 minutes

Taco bowls are always my go-to meal!! They really are such a stable of my weekly meal rotation and there are so many spins that you can put on them!! Today I made a honey chipotle chicken bowl! I marinated the chicken in an orange juice, olive oil, and brown sugar mixture with various chipotle spices! I let that marinate for a couple of hours and then sautéed the chicken on the stove until fully cooked! As a side, I made a delicious corn salad! I chopped up a fresh jalapeno, onion, avocado, and tomatoes and combined it with corn and some fresh lime juice! It was so good and simple. I assembled the bowl with brown rice, black beans, chicken, corn salsa, sour cream, and jalapenos! It is just a really easy meal to make for anyone and it is so tasty!!
