3/4/2024 - Breakfast and Lunch
BREAKFAST
🍰 Puff and Peaks' 1/2 Match Friand ($6.50)
Matcha taste was satisfactory. The cake still retains the moisture well. A really enjoyable slice!
☕️ Ground Floor Coffee Flat White ($6.80)
Strong enough. Quite nice. (Chose the brazil flavour)
LUNCH
🧄🐮 Sukiya's Crispy Garlic Spice Gyudon ($8.20++ for XM)
Very tasty! Even with the gyudon. It's like cumin mixed with garlic bulbs and crispy garlic all around. It's an exciting bowl!

bit of a strange one today, but tell me about a signature dish that your OCs make! Is it a family recipe? Something they make when they’re sad? Stressed? And for people with original universes this is a chance for you to infodump and/or flesh out the cuisine of your world!
👀👀👀 oh i love this one! fun XD
Verita
Jjamppong (spicy korean/chinese seafood noodle soup) - she cooks it from scratch with the help of her partners family. Everything from the seafood stock to the spice mix to the sauces to the hand pulled noodles (La Mian) are all carefully prepared together. As such it's a rare meal for special occasions and when they really really feel like it. She makes is very spicy.
Her everyday signature dish is Capped Stew. It's a thick stew made with water, animal fat, mushrooms and whatever veges she happens to have available. She favours rabbit, sweet potato and ginger. It's called 'Capped' because she also steams a thick, naan-like, herby flat bread over the top of the pot while it cooks, like a bready headcap. Afterwards it's eaten as is or ripped and dropped into the stew like soup dumplings.
Yuuji
Makes a good curry rice, spicy and savoury rather than sweet. He makes good flavoured rice balls too.
Myra & Lillith
Myra makes a good curried beef soup. Lillith makes good stacked pancakes.
Silvaiarin & Lale
Silvaiarin is good at making shredded vegetable fritters, cheesy chicken bakes and skirt cakes (small friand like cakes, very fluffy, shaped like meringues). Lale is good at steamed stuffed seaweed, charcoaled handpies and Kilnsly balls (sticky dough balls, fried or baked, stacked for coating)
Celine & Filor
Their cooking experience is limited to military rations so I'd reconsider before eating anything they cook for you.
Florian
He does the best cupcakes ever. And individual cob loaves

Carrot Cake - The Militant Grammarian
Looking around the cabinet, he could see that apart from a slice of Doris plum cheesecake sitting in the chill cabinet next door, he was the last cake standing. He looked to the left and noted the friands and gluten-free slices numbered about ten.
“Dear Roly, Thank you for your submission of “Carrot Cake.” We loved reading it and would like to publish it if it’s still available. The piece will go live on Wednesday, 9/13/23.   Thank you for giving us the opportunity to read your work.  Sincerely, The Editors The Militant Grammarian“

@crownprincexvalentin:
The scream made him flinch-it reminded him of the day his bethrothed died. He didn’t even want to go over and see what was going on, but he stayed right where he was before he heard Gio’s voice. “I-I think Mr. Friand would like to do the same thing.” he said with a nod, reaching for the cake and passed a plate to him without even looking. His hands were shaking, and he tried to calm down, but he just couldn’t. Even though it happened in a pool, the scream just felt too real for him.
Tumblr media
Even when he was nervous, anxious, Gio could still keep his wits about him most of the time. It wasn’t hard to see that Valentin was under some sort of distress and it was actually a welcome distraction from his own fear. So he ignored the plate that Val was trying to pass him and took his elbow in hand instead, wordlessly walking with the prince away from the pool area and towards the dining room he had previously mentioned. “Hey, forget the characters for right now.” It was the last thing either of them needed to worry about. “Are you okay?”

Financiers are little French cakes traditional made with egg whites, ground almonds, icing sugar and a little flour, today they are made with different ground nuts like hazelnuts and pistachios, like this financier recipe.
Financiers were original called ‘Visitandines’ as they were created by nuns from the Visitation Order in the East of France, the nuns use to paint with egg yolks so they  used their leftover egg whites in these little cakes.
Financiers are very similar to Friand’s which a popular almond cake in Australia, the Australians bake their small cakes in oval tins, unlike the financiers which are made in small rectangle bars.
You are going to need to prepare a head for these financiers as the batter needs to rest overnight before you can start baking.
This financier recipe calls for Beurre Noisette, which is browned butter and Pistachio Paste. You can always look at my olded posts if you want to know how to make them, you can find the links below.
Here is my post on Brown Butter (Beurre Noisette) if you need help on how to make brown butter. Brown butter adds flavour and depth to your bakes making them taste even more delicious, just like these pistachio financiers.
Also unless you happen to have some pistachio paste in the cupboard, here is my post on how to make Homemade Pistachio Paste.
Pistachio Financiers
Adapted from Travelling-Foodies (Original Recipe Ladurée’s)
150g Brown Butter (Beurre Noisette) 55g Icing Sugar 50g Pastry Flour 40g Ground Pistachios 20g Ground Almonds 4 Egg Whites 30g Pistachio Paste 50g Pistachios, chopped
The Day Before – Preparing your Financier Batter
Firstly brown your butter (beurre noisette). Place your butter in light-coloured saucepan, heating in gently to melt and then brown your butter. Strain through a sieve, and measure out 125g of brown butter, set aside to cool.
In a large mixing bowl, sift the icing sugar, pastry flour, ground pistachio and almonds, whisk together to mix the ingredients.
Add the egg whites one at a time, making sure to stir thoroughly after each addition, and that everything has been stirred through evenly.
In a small bowl, put your 30g pistachio paste andIn a small bowl, thin the pistachio paste with a small portion of the above batter concoction and return the more fluid pistachio paste into the remaining batter, together with the lukewarm beurre noisette. Mix everything thoroughly and cover bowl with clingfilm.
Store batter in fridge for at least 12 hours, preferably overnight.
The Following Day – Baking you Financiers
Preheat your oven to Gas Mark 7, grease your tin with butter, I also lined the bottom of mine to make it easier when getting them out. I had some leftover Bake-O-Glide and I cut it to fit in the bottom of my 12 Hole Loose-bottom Mini Loaf Tin.
Here is my tin with my cut out Bake-O-Glide
Fill each of the cavities 3/4 of the way, and sprinkle with chopped pistachios.
Bake them for 7-8 minutes, mine took closer to 15 minutes.
Leave them to cool down before de-moulding them.
They are great served with a cup of tea!
Notes When baking these financiers I did notice that they bubbled a lot in the oven, it was hard to tell when the batter was now sponge due to all the bubbles.
Pistachio Financiers Financiers are little French cakes traditional made with egg whites, ground almonds, icing sugar and a little flour, today they are made with different ground nuts like hazelnuts and pistachios, like this financier recipe.

Individual cakes are always popular. Something to do with their cuteness and that the cake is just for you. There’s no need to share. They’re a good introduction to baking for kids and great for bake sales too.
#CookBlogShare
#CookBlogShare is a weekly linky party where the food love is liberally shared. We have a look, possibly a taster and comment on each other’s posts. If you have a recipe to share, this is the place to do it.
Yes, it’s me doing a round-up once again. I still miss those #WeShouldCocoa days. Thanks to everyone who shared recipes in last week’s linky. There’s plenty there to get my teeth into. But this week I’m highlighting individual cakes.
Recently on Tin and Thyme
With so many of us at home now, baking has never been so popular. I don’t know about you, but I’m finding it really hard to get hold of flour, yeast and eggs. With this in mind I recently posted thirty egg-free cake recipes that you might find useful.
There are other ingredients that are hard to get hold of at the moment too and lots of us are relying on store cupboard staples. My easy one pot ramen is not only tasty, but it’s really quick to make. Fifteen minutes from start to finish is pretty impressive for a delicious and nutritious home cooked meal.
Spring is a wonderful time. Thank goodness for the lovey sunshine we’ve been experiencing over these past few weeks. It does make staying at home a lot easier. As dandelions carpet the grass and fields, my recipe for dandelion honey has become very popular. It tastes just like honey, only it’s much cheaper. It’s a useful alternative for vegans too.
Finally, this time of year can’t go without a mention of one of my favourite spring crops, rhubarb. We recently harvested the first sticks from our new allotment. And really, there was only one thing to make with them – rhubarb crumble.
Easy To Make Individual Cakes
I’ve highlighted four individual cakes here which are perfect for all of the reasons mentioned at the top. All of them are super easy to make and ideal for both young and old.
Orange & Raspberry Friands
So lets start off with some fancy friands from Gluten Free Alchemist. These orange & raspberry friands may seem a bit posh, but they’re incredibly easy to make and taste delicious. They’re also great for using up any leftover egg whites.
Kate says they may “look like posh cupcakes cupcakes. Indeed, I have seen them described as such on other websites… But trust me. These are not cupcakes. Their texture and flavour is altogether different“. As they’re mostly made with ground almonds, it’s easy to make them gluten-free.
Small Batch Vanilla Cupcakes
Vanilla cupcakes are a classic and every baker will have their favourite recipe. As Cat from Curly’s Kitchen says though, you don’t always want as many as twelve. “For those times when you don’t want to bake a full batch of twelve cupcakes, these small batch vanilla cupcakes are perfect”.
Isn’t the swirly buttercream icing lovely?
Vanilla Butterfly Fairy Cakes
I said vanilla cakes were popular and here, just to prove the point, are some vanilla butterfly fairy cakes from Feast Glorious Feast. Chloe said butterfly cakes were the bake she most liked to make when she was a kid. “There was always something special about getting to cut the tops off little buns, add buttercream then create and stick the wings back on“.
Fairy cakes always make me feel nostalgic for days long gone. Days when the sun was always shining or there was enough snow around to make a proper snowman.
White Chocolate & Strawberry Flapjacks
OK, strictly speaking a flapjack isn’t a cake. But these white chocolate & strawberry flapjacks fit the bill in all other respects. They even have icing. As Kat from The Baking Explorer says, “the great things about flapjacks is that you don’t need flour or eggs to make them“. Now what was I just saying about hard to buy ingredients?
The flapjacks are made with dried strawberries and topped with a layer of white chocolate. That’s fancy enough for anyone I reckon.
Bread and Soup
If after all this sweet stuff, you’re craving something savoury. How about homemade bread and soup for lunch? I’m massively tempted by the two recipes from Jo’s Kitchen Larder this week. Wild garlic soup and easy wholemeal bread. Both are vegan and the bread is a no knead one.
Easy To Make Individual Cakes
I hope you enjoy this week’s #CookBlogShare and that you feel inspired by one of these recipes for individual cakes. They’ve certainly made me want to head to the kitchen and indulge in some baking.

Tuscany Day 1
We got up early and went for a walk to see Siena in the morning light and before the hordes arrived. Stopped to have a coffee and found they had these rice cakes that I absolutely love - it's like rice pudding in like a little friand. Now I know I'm definitely in Italy. Back at the hotel we had breakfast on the terrace. Honestly if you're ever coming to Siena I would definitely recommend spoiling yourself and staying here. It's called Campo Regio Relais. After breakfast we showered and packed then went for a last stroll and a spot of shopping before it was time to get ourselves to the train station. This train and train ride were far more enjoyable. Siena must be where one regional service ends and the next begins and it would seem this region is more affluent. For all that though we were only on the train half an hour and then we met Dylan who transferred us to our accommodation. We have like a one bedroom apartment to ourselves. So we've managed to spread out and have crap everywhere. We had a "light" lunch of bruschetta and roasted vegetables, followed by pasta and then meat and salad. All washed down with a local white and followed by coffee and like a fruit bread. After lunch it was time to meet my vintage bike. The driveway here is gravel so a perfect place to try it out and practice. The first decision is whether to keep the toe clips. I've kept the metal but had the straps taken out. I have 6 gears - down tube shifter friction, which as it turns out the friction bit is easier than it seems. The down tube shifter definitely road or smoother, flatter gravel. And finally the brakes only really work if you're on the drops. All this made the first trip down the drive terrifying (and not just for me, Jose was also wondering what the bloody hell he'd done). Finally we set off for our maiden voyage. It was a very slow 27km which had about 10-12km of gravel. I managed to only get off and walk 2-3 times. It is definitely easier than I imagined and far easier than cobbles, but none the less still daunting at times and goodness knows how we'll go on Sunday with 7500 other punters also on the course. We have a very nice group - some old friends John and Sarah and then a whole new group of people. There are 12 of us in total - 7 women! At lunch we had a bit of a round the table who we are, etc and most of us are here because it was someone else's idea and a lot of the someone else's aren't here. I think Dylan was initially a little daunted by this as you could tell there were a few of us thinking what the hell am I doing here. He was however pleasantly surprised by how well the maiden ride went. Dinner tonight was at an agri turismo and featured the local Sienese beef. Again 4 courses and very nice but lots of food and all washed down with jugs of chianti, naturally. Those of us with gluten issues have been well catered for and have even had bruschetta on gluten free bread. Tired now so off to bed.

Several weeks ago our Filipino Community here in New Zealand had our 25th Year Anniversary Ball at the Grand Millennium in Auckland, a black tie event which commemorated a milestone for our growing organization CFC. It was a full on night of music, dancing and of course eating and since it was a community event, most of the resources who organized, decorated, entertained and basically everything apart from cooking was from the community offering their services to make the night worthwhile for everyone.
Initially I was not attending due to a conflict of schedule but my time freed up on a later date but too late to perform my original assignment which is to play keyboard for the band, this needs practice to make things perfect, so instead I was assigned as a photographer and my daughter as the videographer. Regardless of the assignment I love doing either, they we both my passion but with photography I had the first dibs on taking photo of the food even before the diners get hold of them.
This was not my first time at this place, in fact this was my third time, first was a Christmas party at work, another was a Wedding event and this time it was our ball. If I can remember correctly food was bountiful on all occasions. The Christmas party six years ago had a different offering as thats more of a Japanese Style cocktail but the wedding and this event had quite a similar buffet style fare.
Buffet table started with breads and butter, followed a cold cut platter which includes pate, roast beef, ham and luncheon.
It was then followed by four salads starting with caprese, Greek salad, Potatoes and Dijon Mustard, and Sundried Tomato Pasta salad.
For the mains table there was rice (yes Filipinos need this), roasted potatoes, steamed vegetables, salmon in cream sauce, herbed sausages, roast beef and cocktail onions, and chicken mushroom with bacon.
Finally for the dessert station there were fresh fruits, baked cheesecakes, chocolate mud cake, and a selection of pastries, friands and brownies.
The food was great, like I said it was more than enough for everyone. I specially loved the caprese salad, the pate which tasted really creamy and the roast beef and cocktail onions. Same thing with the dessert, everything was fantastic specially that mud cake which completes that nice dinner.
Staff were great, service was phenomenal, the waiter even placed the napkin on my lap which is not done anymore in most restaurants. Overall it was a great night, good food, good service, amazing entertainment and nice venue, definitely a nice place to have your event in the future.

Checking out the high tea at Measure, Highgate. First ever high tea in my life. 😃 We bought the Scoopon for four people (aud135) which came with a bottle of champagne for the table and a choice of two drinks (tea/hot choc/coffee/soft drinks/apple juice) each. There were two sets of the three-tier stand pictured which featured four savoury choices (mini ham and cheese croissant, smoked salmon and cucumber on baguette, curried egg sandwich, quiche) and six desserts (Vanilla and pistachio melting moments; Scone with raspberry and rhubarb jam, vanilla bean cream; Strawberry friand; chocolate macaron; strawberry mousse cake and passionfruit cheesecake). For drinks, I chose the hot chocolate and fresh apple juice. Their smooth hot chocolate came with their house made marshmallow which was soft and yummy. Love how the hot chocolate wasn’t too sweet and the marshmallow melted into it easily. The green apple juice was fresh and refreshing and just what we needed after a filling feast! Highlights were the vanilla and pistachio melting moments (omg literally really melts into your mouth), chocolate macaron (watch out Zumbo!) and passionfruit cheesecake. The scones, although crisp on the outside, were not buttery enough for my liking. Overall, everything was delectable and we really enjoyed our visit. Well done to the team at Measure @measure_bar ! #measure #karmenlu #highgate #perth #hightea #perthhightea #perthdesserts #desserts #masterchefau #scones #meltingmoments #cheesecake #macaron #scoopon #perthfoodreview (at Measure)
