Why, why would you make mead out of Manuka honey?
There is a crazy person on r/mead doing this.
That shit is so, so fucking expensive.
It's sold for its health benefits, namely that it's got significantly more "bio-active" anti-microbial enzymes than the average honey.
I think if you really want to take advantage of its health benefits you should probably be using it for wound healing, not necessarily consuming it. Maybe it might help more with a sore throat than regular honey.
You know what doesn't help with a sore throat? Drinking alcohol. The fermentation process is going to destroy most if not all of the medicinal properties the honey has. So why brew it?
The taste?
It tastes weird. Kind of medicinal. A bit of an acquired taste, as honeys go. Not my favorite. If you want to make weird tasting mead with weird tasting honey, there are so many less expensive weird tasting honeys you could use, like buckwheat for example.
