Oh, hey, I almost forgot to update the Koji Quest!

BOOM! HOMEMADE SOY SAUCE!

And it makes tasty cold tofu, too! (here pictured with silken tofu, grated ginger, scallion, and bonito flakes)
I actually harvested this on the 1st, but as that was just before I was heading out on an international booty call I had other things on my mind than documenting the koji quest. But I did take pictures!
After four months of regular stirring (the shoyu needed 2-3x weekly stirring to not get stuff blooming on the surface, not the once-weekly the recipe called for) this is what it looked like. Not very appetizing.

I ladled it into the steamer insert of my large stock pot in a clean (freshly boiled) kitchen towel, put a weight on top, and let it drain in the fridge overnight.
The next morning, I poured off the glorious juices. I ended up with 69oz! (nice)

I bottled that up in bail-top bottles and also one old soysauce bottle I had saved. Then, because the soy pulp was still pretty juicy, I put it into a soymilk bag to squeeze and knead until my arms were very tired, yielding another ~18oz of a more murky, sediment-filled shoyu which I put in a pint jar.

Then, because as mentioned I was heading out on an international booty call and would not be around to manage any secondary fermentations that might go on, I decided to bottle-pasteurize by putting the lot on a rack in a pot of cold water and very slowly heating it up until probably everything is dead in there, then letting it cool.
Once it was cool enough to touch, I slapped some milk labels on them and tossed them into the pantry.
As for the flavor: it doesn't quite taste like a store bought soy sauce, which is fine by me. It's got a good bit more funk to it. I kind of want to liken it to a moldy cheese, a red-rind more than a blue, but without any cheese flavor. It's good, though. Very salty. Very umami.
I am absolutely going to use this up, and then make another batch!
Not right now, though. I've got plenty to work through, and in the mean time the gallon glass jar has been employed for a batch of rice wine to turn into rice wine vinegar!

An update on 2025 Koji Quest!
I have two batches of soy sauce in the works!
The tamari jar (left) is a mix of black and white soy beans, a shit ton of salt, and a little bit of water. I'm basically following some videos of soy sauce making in languages I do not understand for a method that does not require daily maintenance. It has a big cap of salt on the top to keep anything bad from taking root. The plan is to let it sit for up to a year before extracting soy sauce. Unless something goes wrong before then, I suppose.
Just yesterday I put up the shoyu jar (right) with a mix of white soybeans and roasted red wheat following the recipe in the book The Noma Guide To Fermentation. It has a much lower salt percentage and requires daily stirring for two weeks, then weekly stirring thereafter and should be ready for harvest in four months.
I use a lot of soy sauce in cooking and my tastes run a bit more expensive than kikoman, so being able to make my own is very exciting!

I've been stitching some cicadas lately. This year is going to be a big one for the screaming bugs!
For those interested in making their own cross stitched cicadas, the patterns are available for sale here and here! (Please note: my software skills mean that I had to freehand the AAAAAs rather than place them in the pattern itself, so those are not included in the patterns. This does mean that you can make these little guys uniquely your own and add any sort of scream that you'd like, though!)
