✨ COLD NOODLES ✨
I don't think I've ever eaten cold noodles from a restaurant before. When I was diagnosed with celiac I was 21 and not terribly adventurous with my eating and had never tried it.
My husband has really gotten into cooking lately, and he really loves Asian cuisine. We have cabinets full of ingredients like gochuang, miso, sesame oil, and rice vinegar.
Consequently, I've been craving cold noodles; something I've never really had. I googled a few recipes and got a good idea on how to make the sauce, then I got started.
I used:
Gluten free spaghetti; cooked al dente and then drained and rinsed with cold water
Cucumbers, carrots, cilantro, green onion, and peanuts to top
And made the sauce with soy sauce, rice vinegar, sesame oil, aged miso, chili crunch, peanut butter, sugar, and garlic.
If you're making your sauce from scratch, taste as you go. Even if you don't have things like miso on hand, you can still make something delicious using more common ingredients like soy sauce, chili flakes, garlic, and peanut butter.
