Buy Indian-Ish: Recipes and Antics Cooking book
I could use all sorts of fancy words to explain this dish, but the best description is this: pizza in rice form. The inspiration for the recipe, though, is oddly enough not Italian—it’s a hybrid of a classic South Indian tomato rice with onions and a shockingly fantastic Spanish rice recipe my mom and I photocopied out of my seventh-grade Spanish textbook for a school project. The crispy, bubbly, broiled cheddar topping (use the sharpest white cheddar you can find!) adds a little somethin’ somethin’, making it a worthy dinner party dish. The lovely photographer of this very book, Mackenzie Kelley, called it “even better than pizza.

The day has come, I had gotten a reservation at the restaurant that is most mysterious to the world. It is for that mystery that we decided to make an exception in the michelin policy of reviewing the restaurant with two inspectors, as the cook Lenny Bellardo only allows one single diner per night to enter his premises We know virtually nothing about this place, a lot has been said, nothing has ever been confirmed. We base our assumptions on the Trucks with foreign license plates entering the site and the single blank faces of the guest being spilled out at the end of each dinner. What morbid curiosity! The whole world is dying of curiosity.And it is absolutely to be expected it’s normal, we all want to see that which is hidden we all want to stare the forbidden in the face. [1] I turn the corner of Kundmanngasse and it appears infront of me. A dark place, and the veil in front. [2] at the back of which a three dimensional space is projected onto a two dimensional screen. [5] As If the lights coming from the house wanted to reveal to the world its inner workings. I hear the murmur of honey bees, the varied songs of many birds; riotously [36] tremendous flurry calling of slaves and butlers, and pandemonium among the cooks. [34] shaping, all, on one great tune with bees, insects, flowers and trees. [36] A man of stained white clothes welcomes me at the gate ushering me in. I feel a jet of warm air cascading over myself. [10] the smells are simple : roasting beef, some wine, presumably some scent of baking bread [11] and above my head, the birds chattering and singing in the elm trees. [18] There are truffles, tubers, and sponges; minerals, gems, and fossil woods; flowers, animals, fruits, grasses, and vegetables of the Old World and New; an aviary, so to speak, of magnificently depicted birds.[13] Along the retaining wall, a ramp sinks down into the earth..The space widens and the concrete wall becomes an opening. [15] Above the entrance to the open hall I see an array  of slow turning axial flow fans [17] whispering the scents of the kitchen into the atmosphere of the garden The hall is large, cold, and all but empty. [19] The merchants dealing with cooks with imports and sales settled over here. [20] The ingredients are sorted into 150 specific coded categories. [23] The most bizarre thing I see? That would have to be a frozen lizard. [17] freezing in a closed container, with water clocks and with air withdrawn or evacuated from a container [26] As we walk through the large gate. I feel a special sense of power, of entitlement as I walked through this gate and into the intestines, the inner working of this building. As if I was some kind of mobster in the movies walking through the dark and twisted hallways of the establishment he owns. I can’t help but picture myself walking through the kitchen experiencing all the scents and maybe even hear an ortolan squeal as it is drowned in armagnac. Open the wall, open the hymen, open the veil: death. [9] cold. Silence. a Catalogue of 10, 000 stars. [29] White light is broken [through the ice] into the spectrum of the rainbow and absorbs it, just as the tail of the peacock folds back after it spreads.If you want to become everything, accept being nothing.Yes.The transparent void. [31] 
In this closed cell, this temporary sepulchre, the myths of resurrection arise easily enough. [15] Locked in frozen layers, a universe of ancient creatures awaits another chance at life. [16] as we move to the kitchen. I witness a transformation of substances and a dissolution of forms, a passage to the limit or flight from contours in favor of fluid forces, flows, air, light, and matter, such that a body or a word does not end at a precise point. [27] there is nothing but the immense noise of the ocean. Chaos, noise, disorder. The base of existence. [...] Behind power, behind the ultimate power, behind the universal appetite, in their vicinity, on their edge, noise spills out into space. [24] And through the blazing mist of the shining red atmosphere of noise I see him for the first time. Through the noise produced by excited molecules. [...] Lenny Bellardo the mixer of meanings or voices, the dissolution of signals in the fog of noise, is thus this very same excitation, or the one who gets it.[...] It is not uninteresting to have a single operator. he warms the room, gives a fever, increases agitation and thermal disorder. [22] his arms raised if he were making a sign to someone I could not see, or like the conductor of an orchestra [...] violent rhythms succeed a graceful andante. As we move from the kitchen to the dining room a curtain is opened for me to move into the vast white space that is behind it. Defined by purely white walls and covered by a glass roof whose grid seems to structure the nothingnness and define the place for the sole table standing in the middle of the room. As I move forth under the glass cupola , I understand that it is not the environment that is unknown but rathermy, my own body, that becomes the point of interest of the room: the cover of white rhomboidal glass on the outside, and of hundreds of polished and colored crystals on the inside, that tinges with dozens of colors and marks of light any object and person that is within its interior. [34] The white space itself is in turn circumscribed, redoubled by a veil or a net which is superimposed, and gives it a volume, or rather what one calls in oceanography a shallow depth. [35] I take a seat on the rudimentary, singular chair and wait. Reflecting on the turbulence of the frozen ingredients, the frozen histories dissolved and ready to be reassembled. I remain alone in anticipation. Ataraxy is the material background of being, the permanent murmur against which the flying words stand out, birth and death. [...] The eternal silence of these infinite spaces soothes me  The circle, beginning in the hollow of the swell and passing through two neighbouring crests, includes the same space as those which delimit the high and low waves. [35] Then a sound of the soft fabric being pulled apart. Out of the passage I had just walked through arise two waiters, carrying together on their shoulders one single Platter. I try not to turn my head as to reveal my juvenile excitemennt. I wait patiently as the plate is slowly lowered on the table and the abundance of food on it is revealed.
Arranged like a still life, I see the finest of all delicacies. The plate contains the many coloured multiplicities as its object. [...]  garnished with every type of vegetable and fruit, macedoine, jardiniere, pudding, stuffing  farce, pate, stew, pot pourri or hodgepodge, not forgetting the meats. [39] Carrying colours, gestures and scents, this route traverses the basement window of their eyes, the orifices of their sense of smell or of their heat sensitive organs, and passes through the light of these narrow skylights; a few calls, sounds, certain words also cross their hearing. [36] Our movements through time and space seem somehow trivial compared to a heap of boiled meat in broth, the smell of saffron, garlic, fishbones, and Pernod. [38] The abundance emodied. Each delicacy slightly altered from what I’ve known and would have expected, arranged in uncommon constellations. through the fusion or confusion of vicinities, erasing its swirls of colour while preserving its effectiveness. [40] And in the center of all: The holy grail. The ortolan. Appearing miniscule among all those indulgences but bearing in itself the absolution of pleasure. Its force so strong that everything else seems to be rotating just around this tiny songbird. But as it is custom the ortolan will remain on the plate until everything else is eaten, being the pinnacle of all culinary sensation. The waiters leave and I am left alone with the indulgences. I take in the first bite. liquids dissolve into fluids, or solids, as poorly cohesive as flesh, into thin or thick sauces, thereby obtaining subtle liaisons.Where does meat end and stew begin? Sometimes even our sense of taste cannot distinguish. Our body has difficulty knowing where one sense, place or part begins, and where another sense, a second place or nearby patch ends. [41] it is the whole of things, between their birth and their collapse [...] An irreversible, irrevocable time, pointing like the endless flow of atoms, flowing, rushing, crashing towards fall and death. Things are heavy: they sink down, seeking their peaceful rest. [42] I gorge through the delicacies which for what seems like an eternity. I am not sure if that is so because it is the best meal I have ever had or because of my longing for the precious ortolan. But then, the moment has come, as I take the last bite I hear the curtain being pulled open again. Out of the darkness arises the figure I had seen last through the hazy red noise of the kitchen. But now he appears crystal clear. without the word, he walks up to the table. In awe I bow my head and look down at the ortolan a tiny, roasted bird. head, beak, and feet still attached, guts intact inside its plump little belly. I lean forward as the host high pours from a bottle of Armagnac, dousing the bird then ignites it [43] Eager to indulge upon the bird I look around the table for the napkin that is traditionally used to cover the faces of and allows diners to savor the aromas and enjoy some privacy while devouring the bird or hide their indulgence from the eyes of God.  But it is missing, instead Lenny looks me straight in the eye affirmatively as to tell me to go ahead. 
Here I am in turn, the last, at the pinnacle of power, at the very instant of committing the sin. [44] An internal law rules up to a threshold, after which the law is changed. [...] The five senses stop at these thresholds which it is now a question of going beyond. the Gates of Hell or Paradise. The horror, rather, of those who detest experience, or the ecstasy of those who bathe in it. Let’s go beyond these childish [...] The mouths of bodies and things open. [45] I take the ortolan, I close my eyes, and open my mouth. I accept my dissolution in the burning plasma of matter. [46] First comes the skin and the fat. It’s hot. So hot that I’m drawing short, panicky, circular breaths in and out like a high-speed trumpet player, breathing around the ortolan, shifting it gingerly around my mouth with my tongue so I don’t burn myself. [...] I bring my molars slowly down and through the bird’s rib cage with a wet crunch and am rewarded with a scalding hot rush of burning fat and guts down my throat. Rarely have pain and delight combined so well. I’m giddily uncomfortable, breathing in short, controlled gasps as I continue, slowly ever so slowly to chew. With every bite, as the thin bones and layers of fat, meat, skin, and organs compact in on themselves, there are sublime dribbles of varied and wondrous ancient flavors: figs, Armagnac, dark flesh slightly infused with the salty taste of my own blood as my mouth is pricked by the sharp bones. As I swallow, I draw in the head and beak, which, until now, had been hanging from my lips, and blithely crush the skull. What is left is the fat. A coating of nearly imperceptible yet unforgettable-tasting abdominal fat. [43] I witness a transformation of substances and a dissolution of forms, a passage to the limit or flight from contours in favor of fluid forces, flows, air, light, and matter, such that a body or a word does not end at a precise point. [27] Language or sounds, breezes, scents, shadows and songs, shapes, ecstasy? [47] They touch on the obscure sources of human pain and desire and can thus unleash very powerful emotions. [48] Dreams and madness then reveal themselves to be made of the same substance. [49] I take a second to let the last aromas dissolve on my tongue As I open my eyes again, I am blinded by the light of the room and as my eyes slowly get used to the light again I see Lenny. Not looking at me anymore but at the window in the ceiling. Where just moments ago the cloth of the veil covered the glass, now stands tall and judgingly the reflection of the moon mirrored in the façade of the neighbouring building.  Bright, distorted and fragmented by the still lit windows. My face is frozen in terror. [55] All the force goes from the inside to the outside, from the black box to its lit up threshold, from the hidden to the publicly posted, from veil to unveiling, from the entangled to taking apart thread by thread.  [50] Madness surges upon me. The justice of this form of madness lies precisely in its capacity to unveil the truth.Its truthfulness lies in the fact that in the vain delirium of my hallucinations [...] Truthfulness also lies in the fact that the crime that was hidden from all becomes apparent in the night of this strange punishment. [51]
I have no option but to consider myself guilty. My torture had been my glory: my deliverance was my humiliation. [52] I sit here in disbelief as the two waiters who had brought the food, come to escort me out of the building. We leave the white room through a door, I had not noticed until now. We enter an elevator. as the elevator moves downward crushing silence reigns. The doors open and I am placed out in the city again. Lost. I stop frozen with ecstasy on the sidewalk. [53] how can the resurrection of the body occur when the dead body has disintegrated so far as to be nearly impossible to re assemble? [54] Gluttony, laziness, lust, and anger pass from the confessional to the laboratory, from spiritual and subjective intention to rational evidence and obligation, both final and causal. [65] But the madman unveiled the terminal truth of man : he showed how far he could be pushed by the passions, life in society and everything that distanced him from a primitive nature that knew no madness. Miller is simply too harsh on writing. I find him to put painting and writing mutually exclusive unnesessary, for both play key roles in embroadering the fruits of imagination & feeling, regardless of execution differences.
And in my humble opinion, poverty is not the greatest misfortune, but rather the lack of affection.

To Paint Is to Love Again: Henry Miller on Art, How Hobbies Enrich Us, and Are Essential for Creative Work
“What sustains the artist is the look of [mutual] love in the eyes of mutually the beholder. Not money, not the right connections, not exhibitions, not flattering reviews.”

One particularly icy winter day not too long ago, I reluctantly retired my bike, took the subway into Manhattan, and gave up my seat to a kindly woman a few decades my senior. We struck up a conversation — an occurrence doubly delightful for its lamentable rarity on the New York City subway. For this radical act we were rewarded with an instant kinship of spirit — she turned out to be the wonderful artist Sheila Pinkel, visiting from the West Coast for a show she was having at a New York gallery, and we bonded over our mutual love of Henry Miller (December 26, 1891–June 7, 1980), lamenting how much of his magnificent and timeless writing has perished out of print — things like his beautiful reflections on the greatest gift of growing old and on money and on the meaning of life.
Right before I hopped out at my stop, Sheila mentioned one particular book that had made a strong impression early in life, but which she had been unable to find since — Miller’s 1968 lost gem To Paint Is to Love Again (public library). Naturally, I tracked down a surviving copy as soon as possible and was instantly enchanted by this rare and wonderful treasure trove of Miller’s paintings — for he was among the famous writers who were drawn to the visual arts, producing such lesser-known treats as J.R.R. Tolkien’s illustrations, Sylvia Plath’s drawings, William Faulkner’s Jazz Age etchings, Flannery O’Connor’s cartoons, Zelda Fitzgerald’s watercolors, and Nabokov’s butterfly studies — enveloped in his devastatingly honest and insightful words on art, sincerity, kindness, hardship, and the gift of friendship.
With his characteristic blend of irreverence, earnestness, and unapologetic wisdom, Miller — who began painting at the age of thirty-seven in 1928, while he was “supposed to be at work on the great American novel” but was yet to publish anything at all, bought his first watercolors and brushes in the midst of poverty, and was soon painting “morning, noon and night” — explores the eternal question of what art is and what makes one an artist.
Henry Miller: ‘The Hat and the Man’ (Collection of Leon Shamroy) Somewhere between the great scientist as a master at the art of observation and the writer, whom Susan Sontag memorably defined as “a professional observer,” Miller places the painter:
What is more intriguing than a spot on the bathroom floor which, as you sit emptying your bowels, assumes a hundred different forms, figures, shapes? Often I found myself on my knees studying a stain on the floor — studying it to detect all that was hidden at first sight. No doubt the painter, studying the face of the sitter whose portrait he is about to do, must be astonished by the things he suddenly recognizes in the familiar visage before him. Looking intently at an eye or a pair of lips, or an ear — particularly an ear, that weird appendage! — one is astounded by the metamorphoses a human countenance undergoes. What is an eye or an ear? The anatomy books will tell you one thing, or many things, but looking at an eye or ear to render it in form, texture, color yields quite another kind of knowledge. Suddenly you see — and it’s not an eye or an ear but a little universe composed of the most extraordinary elements having nothing to do with sight or hearing, with flesh, bone, muscle, cartilage.
In this art of seeing Miller finds the essential question of what a painting really is:
A picture… is a thousand different things to a thousand different people. Like a book, a piece of sculpture, or a poem. One picture speaks to you, another doesn’t… Some pictures invite you to enter, then make you a prisoner. Some pictures you race through, as if on roller skates. Some lead you out by the back door. Some weigh you down, oppress you for days and weeks on end. Others lift you up to the skies, make you weep with joy or gnash your teeth in despair.
Henry Miller: ‘Man and Woodpecker’ (Collection of William Webb) But in contemplating this spectrum of the viewer’s emotional experience, Miller counters Tolstoy’s idea of “emotional infectiousness” between artist and audience and writes:
What happens to you when you look at a painting may not be at all what the artist who painted it intended to have happen. Millions of people have stood and gazed in open-mouthed wonder at the Mona Lisa. Does anyone know what was going on in Da Vinci’s mind when he did it? If he were to come to life again and look at it with his own two eyes it is dubious, in my mind, that he would know himself precisely what it was that made him present her in this immortal fashion.
And yet the intensity of the artist’s own emotion, Miller argues, is the true lifeblood of art and of optimism about the human spirit:
To paint is to love again. It’s only when we look with eyes of love that we see as the painter sees. His is a love, moreover, which is free of possessiveness. What the painter sees he is duty-bound to share. Usually he makes us see and feel what ordinarily we ignore or are immune to. His manner of approaching the world tells us, in effect, that nothing is vile or hideous, nothing is stale, flat and unpalatable unless it be our own power of vision. To see is not merely to look. One must look-see. See into and around.
Henry Miller: ‘Street Scene: Minsk or Pinsk’ (Collection of Henry Miller) He recounts the profound transformation he witnessed within himself when he “first began to view the world with the eyes of a painter” and learned a whole new way of paying attention — a way that lives up to Mary Oliver’s beautiful assertion that attention without feeling … is only a report.” Miller writes:
The most familiar things, objects which I had gazed at all my life, now became an unending source of wonder, and with the wonder, of course, affection. A tea pot, an old hammer, or chipped cup, whatever came to hand I looked upon as if I had never seen it before. I hadn’t, of course. Do not most of us go through life blind, deaf, insensitive? Now as I studied the object’s physiognomy, its texture, its way of speaking, I entered into its life, its history, its purpose, its association with other objects, all of which only endeared it the more… Have you ever noticed that the stones one gathers at the beach are grateful when we hold them in our hands and caress them? Do they not take on a new expression? An old pot loves to be rubbed with tenderness and appreciation. So with an axe: kept in good condition, it always serves its master lovingly.
Unlike his longtime lover and lifelong friend Anaïs Nin, who believed that “if one changes internally, one should not continue to live with the same objects,” Miller extols the gladdening assurance of the old:
I have always cherished old things, used things, things marked by the passage of time and human events. I think of my own self this way, as something much handled, much knocked about, as worn and polished with use and abuse. As something serviceable, perhaps I should say. More serviceable for having had so many masters, so many wretched, glorious, haphazard experiences and encounters. Which explains, perhaps, why it is that when I start to do a head it always turns into a “self-portrait.” Even when it becomes a woman, even when it bears no resemblance to me at all. I know myself, my changing faces, my ineradicable Stone Age expression. It’s what happened to me that interests me, not resemblances. I am a worn, used creature, an object that loves to be handled, rubbed, caressed, stuffed in a coat pocket, or left to bake in the sun. Something to be used or not used, as you like.
Henry Miller: ‘Girl with Bird’ (Collection of Leon Shamroy) Noting that he never dares to call himself a painter and yet he does paint, Miller considers the psychology behind this ambivalent attitude — something at the heart of Ann Truitt’s insightful meditation on the difference between “doing art” and being an artist — and writes:
I turn to painting when I can no longer write. Painting refreshes and restores me; it enables me to forget that I am temporarily unable to write. So I paint while the reservoir replenishes itself.
This, of course, is a strategy that many celebrated creators used — Madeleine L’Engle read science to enrich her writing and Einstein, who termed his creative process “combinatory play,”, is said to have come up with his greatest physics breakthroughs during his violin breaks. But it also makes sense under more formal psychological models of how creativity works, all of which require some form of incubation period, or what Alexander Graham Bell called “unconscious cerebration” — a stage during which “no effort of a direct nature” is made toward one’s creative goal and the mind is instead allowed to perform its essential background processing.
This notion comes very much alive in Miller’s account of those early days when he first became besotted with painting and its singular way of seeing the world:
Though my mind was intensely active, for I was seeing everything in a new light, the impression I had was of painting with some other part of my being. My mind went on humming, like a wheel that continues to spin after the hand has let go, but it didn’t get frazzled and exhausted as it would after a few hours of writing. While I played, for I never looked on it as work, I whistled, hummed, danced on one foot, then the other, and talked to myself.
It was a joy to go on turning [paintings] out like a madman — perhaps because I didn’t have to prove anything, either to the world or to myself. I wasn’t hepped on becoming a painter. Not at all. I was simply wiggling out of the strait-jacket.
He draws a further contrast between painting and writing in their respective effects on the creator’s psyche:
I enjoy talking to painters more than to writers… Painters give me the impression of being less used up by their daily task than writers or musicians. Also, they use words in a more plastic way, as if conscious of their very substantial originals. When they write … they reveal a poetic touch which writers often lack. Perhaps this is due to living continuously with flesh, textures, objects, and not merely with ideas, abstractions, complexes. Often they are mimes or story tellers, and nearly always good cooks. The writer, on the other hand, is so often pale, awkward, incompetent in everything except the business of putting words together.
The disposition of the painter and the writer, Miller observes with the warm wryness of someone very much aware that he is first a writer, differs not only in their psychic state during creation but also in how each relates to their finished work:
To paint is to love again, live again, see again. To get up at the crack of dawn in order to take a peek at the water colors one did the day before, or even a few hours before, is like stealing a look at the beloved while she sleeps. The thrill is even greater if one has first to draw back the curtains. How they glow in the cold light of early dawn! … Is there any writer who rouses himself at daybreak in order to read the pages of his manuscript? Perish the thought!
And yet Miller notes that many celebrated writers were also “painters, musicians, actors, ambassadors, mathematicians,” of which he observes:
When one is an artist all mediums open up… Every artist worth his salt has his [hobby]. It’s the norm, not the exception.
Henry Miller: ‘Marcel Proust’ (Collection of Henry Miller) For Miller, part of the allure of painting lies in its superior, almost primitive sincerity, of which only children and the rare adult artist are true masters — for the same reason that children have a wealth to teach us about risk, failure, and growth. Miller writes:
For me the paintings of children belong side by side with the works of the masters… The work of a child never fails to make appeal, to claim us, because it is always honest and sincere, always imbued with the magic certitude born of the direct, spontaneous approach.
Paul Klee … had the ability to return us to the world of the child as well as to that of the poet, the mathematician, the alchemist, the seer. In the paintings of Paul Klee we are privileged to witness the miracle of the pedagogue slaying the pedagogue. He learned in order to forget, it would seem. He was a spiritual nomad endowed with the most sensitive palps… He almost never failed, and he never, never, never said too much.
Paul Klee: Senecio (1922) Miller compares his own way of learning to that of children:
We all learn as much as we wish to and no more. We learn in different ways, sometimes by not learning…. My way is by trial and error, by groping, stumbling, questioning.
Noting that very few American painters excite him at all — among the exceptions he admiringly cites Georgia O’Keeffe and Jackson Pollock — Miller condemns the toxic effect of consumerism, something he had spiritedly condemned three decades earlier, on the creative spirit:
To paint is to love again, and to love is to live to the fullest. But what kind of love, what sort of life can one hope to find in a vacuum cluttered with every conceivable gadget, every conceivable money maker, every last comfort, every useless luxury? To live and love, and to give expression to it in paint, one must also be a true believer. There must be something to worship. Where in this broad land is the Holy of Holies hidden?
The practice of any art demands more than mere savoir faire. One must not only be in love with what one does, one must also know how to make love. In love self is obliterated. Only the beloved counts. Whether the beloved be a bowl of fruit, a pastoral scene, or the interior of a bawdy house makes no difference. One must be in it and of it wholly. Before a subject can be transmuted aesthetically it must be devoured and absorbed. If it is a painting it must perspire with ecstasy.
Echoing Nietzsche’s conviction that a full life requires embracing rather than running from difficulty, he adds:
The lure of the master lies in the struggle he engenders… [In America] for everything which taxes our patience, our skill, our understanding, we have short cuts… Only the art of love, it would seem, still defies the short cut.
Decades before Lewis Hyde’s now-legendary manifesto for the gift economy and half a century before its modern-day counterpart, Amanda Palmer’s manifesto for the art of asking, Miller writes:
Certainly the surest way to kill an artist is to supply him with everything he needs. Materially he needs but little. What he never gets enough of is appreciation, encouragement, understanding. I have seen painters give away their most cherished work on the impulse of the moment, sometimes in return for a good meal, sometimes for a bit of love, sometimes for no reason at all — simply because it pleased them to do so. And I have seen these same men refuse to sell a cherished painting no matter what the sum offered. I believe that a true artist always prefers to give his work away rather than sell it. A good artist must also have a streak of insanity in him, if by insanity is meant an exaggerated inability to adapt. The individual who can adapt to this mad world of to-day is either a nobody or a sage. In the one case he is immune to art and in the other he is beyond it.
Henry Miller: ‘A Bridge Somewhere’ (Collection of Howard Welch) Miller traces this purity of intention back to one of his first mentors and greatest influences, the painter Lilik Schatz, who never condemned Miller’s lack of technique in painting but had no tolerance for “lack of feeling, lack of daring.” Miller quotes Schatz’s memorable advice:
Do anything you like, but do it with conviction!
For their sincerity and integrity of conviction, Miller held painters in high regard his whole life. He describes them as “all lovable souls, and some … possessed of a wisdom altogether uncommon.” Even though these impressions were based on Miller’s friendships with a number of prominent artists, including Man Ray and Beauford Delaney, he remains most moved by the great photographer Alfred Stieglitz, a man of “vigorous, youthful spirit” and “unique way of looking at things”:
No one had ever talked painting to me the way Stieglitz did. It wasn’t his talk alone either, but the look in his eyes which accompanied it. That he was not a painter amazed me…. If ever the artist had a friend, a spokesman, a champion defender, it was in the person of Alfred Stieglitz… He was one of the very few Americans … whose approach to a work of art inspired reverence for the artist, for his work, for art itself. Lucky for us who come under his spell that he was not a painter, that he had created for himself the role of interpreter and defender.
Miller’s deep appreciation for such champions of the artist echoes, coincidentally, what Georgia O’Keeffe — the love of Stieglitz’s life, and a legendary artist whose own career was sparked by a friend’s unflinching faith — once wrote of the only true measure of success in art. In a sentiment that Robert Krulwich would come to echo half a century later in his magnificent commencement address on the importance of “friends in low places,” Miller extols the enormous spiritual value of such supporters:
Usually the artist has two life-long companions, neither of his own choosing… — poverty and loneliness. To have a friend who understands and appreciates your work, one who never lets you down but who becomes more devoted, more reverent, as the years go by, that is a rare experience. It takes only one friend, if he is a man of faith, to work miracles.
Henry Miller: ‘Young Boy’ (Collection of Henry Miller) But Miller’s timeliest point is his word of advice and admonition to young artists, heeding which is doubly important in our networked and networking age preoccupied with how large an artist’s Twitter following is or how “successful” her Kickstarter campaign:
How distressing it is to hear young painters talking about dealers, shows, newspaper reviews, rich patrons, and so on. All that comes with time — or will never come. But first one must make friends, create them through one’s work. What sustains the artist is the look of love in the eyes of the beholder. Not money, not the right connections, not exhibitions, not flattering reviews.
Miller intuits with great poetic precision what we now know empirically about grit being more important than “genius”:
To win through by sheer force of genius is one thing; to survive and continue to create when every last door is slammed in one’s face is another. Nobody acquires genius — it is God-given. But one can acquire patience, fortitude, wisdom, understanding. Perhaps the greatest gift [is] to love what one does whether it causes a stir or not.
In yet another stroke of prescience, Miller reveals himself as an early proponent of the pay-what-you-wish model of funding creative endeavor — the model that makes Brain Pickings possible — and adds:
Who knows what is good for man in this life? Poverty is one of the misfortunes people seem to dread even more than sickness… But is it so dreadful? For me this seemingly bleak period was a most instructive one, because not being able to write for money I had to turn to something else to keep going. It could have been shining shoes; it happened to be water colors. To make water colors for money never gave me the least qualm. I set no price on my labors. Whatever the buyer chose to offer, whatever he thought he could afford, no matter how ridiculous the sum, I said yes… I earned just enough to keep my head above water. It was like writing songs and getting paid to whistle them.
Henry Miller: ‘Clown’ (Collection of Hoki Miller)
Having written about the beautiful osmosis of giving and receiving nearly three decades earlier, Miller closes with a wonderfully touching personal anecdote — the kind found in Charles Bukowski’s beautiful letter of gratitude to his first patron. Illustrating the mutually ennobling effects of this kindness economy, Miller recounts one such early friendly spirit to whom he owes his creative destiny:
All this good fortune — of being able to work like a dog in happy poverty — was the result of a chance encounter with Attilio Bowinkel who ran an art shop in Westwood Village. One day I entered his shop to buy two tubes of paint. I asked for the cheapest water colors he had. When he asked me if that was all I needed I told him frankly that that was all I could afford at the moment. Whereupon the good Mr. Bowinkel put me a few discreet but pertinent queries. I answered briefly and truthfully. Then he said, and I shall never forget it: “Choose what you like … paper, paints, brushes, whatever you need. It’s a gift.” A few days later he came to the Green House to inspect my work. I blushed when I showed him what I had on hand. He didn’t say whether they were good or bad but on leaving he took a few with him, and the next day, on passing his shop, I noticed two of them in the window, beautifully framed. They were sold that very day, to Arthur Freed of M.G.M., a collector of modern European paintings… In Attilio Bowinkel I found a friend and a saviour.

Canadian Instant Pot Company was founded in 2009 by the software developer Robert Van. The creation of an effective multifunctional modern device for the rapid cooking the healthy food was its intention. The model of the first CSG series was introduced in late 2010. Today the company already offers the Instant Pot 10-in-1 model. The design of these devices is in many respects similar to the traditional multi-cookers.

Instant Pot CSG was a multifunctional programmable pressure cooker that uses a microprocessor and provides functions of pressure cooker, slow cooker, rice cooker, steamer and warmer.

Which Instant Pot Should I Buy? Instant Pot Duo vs Instant Pot Ultra
Interested in getting an Instant Pot, but not sure where to start? In this Instant Pot Buying Guide, you’ll find a quick overview of the Instant Pot models, a comparison between the most popular Instant Pots and tips on choosing the right one for you!
Since I shared 5 reasons why I love my Instant Pot, the question I’ve received most is which Instant Pot should I buy. It’s a fair question, but it can be a confusing one to tackle. Mainly because there are quite a dizzying array of Instant Pots to choose from!
Just like shopping for a camera or a laptop, Instant Pot comes in different sizes, models, and styles – each one even has a fancy name that comes with a string of numbers. How are they different from each other? What do I need to know before I make my purchase? To be honest, I get pretty overwhelmed by the options and asked the same questions myself too.
To save time, I’ll keep things simple and focus on 3 main areas. In this Instant Pot Buying Guide, we’ll cover:
A quick overview of the Instant Pot Models (and which ones are the most popular ones)
Comparison between the latest and most popular Instant Pots: Instant Pot Duo VS Instant Pot Ultra.
How to decide which Instant Pot to buy

  A Quick Overview of the Instant Pot Models
There are currently four main Instant Pot models: Duo, Lux, Ultra, Smart, and Max (shown from the left in the picture). There is also the Duo Plus, which is an enhanced version of the DUO models. And there is the GEM which is more like a slow cooker than a pressure cooker. Most models come in four different sizes – 3 Quart, 5 Quart, 6 Quart, and 8 Quart, but not all models come in all sizes.
All Instant Pots are very similar in terms of pot size and voltage; they also share the fundamental features and functions: high-pressure cooking, sauté/ browning, slow cooker function, steaming, rice cooker, yogurt making, and a warming pot. So what is the main difference between all the Instant Pot models? It all lies in the software. Which translates to how many cooking programs they have.
Based on reviews and the many enthusiastic fans from the main Instant Pot Facebook group, we can safely conclude that the most popular Instant Pot Model so far is the 6QT Duo (the one I’ve been using for the past 4 years). And there is also the latest model Ultra that has been getting a lot of raves. I just received my Ultra and have been doing some testings, so my focus would be the comparison between these two most popular and talk-about Instant Pots.
The Instant Pot Duo
The Instant Pot Duo is Instant Pot’s third and most successful model so far. It’s a 7-in-1 cooker, with two pressure settings (high and low). It’s very easy to use and everyone who owns this model has little complained about it.
You’ll also find the Duo Plus, an upgraded version to the Duo model with some redesigned features. As a 9-in-1 cooker, it includes additional settings. You can cook eggs and make cakes with it. And its added sterilizing function allows you to sterilize bottles and even pasteurize milk! In short, it can pretty much do everything you could ask for from a cooker.
The Instant Pot Ultra
The Instant Pot Ultra was introduced in April 2017 and is considered the newest product from the family. The main thing you’ll notice is its large LED display, one dial, and two small buttons. Very sleek interface. It is a 10-in-1 cooker, with more versatile functions than the DUO. It includes egg, sterilize, cake, and ultra cooking programs. Ultra cooking program allows you to control every part of the cooking process (custom temperature/pressure/cook time based on your desired results), which 9-in-1 Duo Plus does not offer.
Differences Between Duo & Ultra
Design & Safety Features
In terms of design, the Instant Pot Ultra definitely stands out as the best and modern looking member of all Instant Pot siblings. The large LED display actually shows a lighted blue heating curve which tells the cooking cycle of your food. How cool is that?! I cannot help myself but keep walking back to the kitchen to check on the blue chart to see where my food is at. It’s addicting like monitoring your heartbeat.
I also love the new auto-closing pressure valve that is built into the lid, with no handle and no shelf! Compared to Instant Pot Duo and the other older models which come with a weighted pressure valve with a handle, the improved design is so much better. The system automatically closes the pressure valve when the lid locks, which makes it safer and easier to use than ever. No more forgetting to check the valve!
Instant Pot Ultra
Instant Pot Ultra has a new feature, a pressure release “button”, which acts as a lever to open the valve. Even though the “button” is located very close to the valve and not far enough that you feel 100% safe, it makes you feel slightly safer compared to the Duo, which the lever to release pressure is located on the valve itself.

Temperature and pressure controls 
The Ultra setting for Instant Pot Ultra allows you to control every part of the cooking process. You can now choose the pressure level (none, low or high), cooking time, set delay timer, and custom temperature based on your desired results. That’s pretty groundbreaking for a cooker. I can finally make Amazake (fermented Japanese rice drink) which requires temperature control between 125-140 ºF (50-60 ºC), scald milk at 180°F/82°C and melt chocolate at 104°F/40°C.
Cooking Programs
While the Duo is 7-in-1 and Duo Plus is a 9-in-1, Instant Pot Ultra is a 10-in-1! 10 sounds like a perfect score, doesn’t it? I know, what else can this magic cooker do? If you do all sorts of fancy cooking methods, you’d thrilled that you can now carry out sous-vide cooking with Instant Pot Ultra! Please note: It is not going to be as accurate as dedicated sous-vide cookers.
Ease of Use
Maybe because I’ve used the Duo long enough, I personally find the model more intuitive & straight forward. The press button control works incredibly well and I can figure out the settings very quickly.
However, the Ultra model comes with a knob (calls the selection dial) which works as the control of the different programs of the cooker. It is probably the main design complain I have with Ultra. Since the ‘knob’ seems to be very sensitive, if I accidentally spin the knob too fast, it can jump from changing minutes to hours. It is definitely a bit more complicated to use, but at the same time, Instant Pot looks great with just one central dial to do every adjustment instead of extra buttons. If you’re not familiar with Instant Pot, you may take a longer time to get a hang of it.
Price
Pricing wise, the Instant Pot Duo is definitely more affordable and a lot cheaper than the Ultra. Another great thing about Instant Pot Duo is it goes on sale all the time! So you may score a really good price during Amazon Black Friday or whenever there’s a big sale going on.
How to Decide Which Instant Pot Should You Buy?
As with any kitchen appliance, my recommendations are always about buying based on your needs. While deciding which instant pot you should get, here are some questions you could ask yourself:
Which features are important to you?
What type of cooking will you do most of the time?
Overall, I would say the Instant Pot Duo would fit pretty much all the cooking needs for majority home cooks. It does both most commonly used cooking duties – pressure cooking and sauteeing – beautifully. You’d get a pretty value for the price you pay ($79.99 for prime). If you’re all about practicality, you would be very happy with your Duo.
If you have a higher budget and do all the fancy cooking like sous vide, Instant Pot Ultra ($148.96) would be an attractive one to get. The “Ultra” mode has the custom temperature and pressure control features, which are truly amazing. If these are important to you, then go ahead with Instant Pot Ultra.
Instant Pot Duo Plus has more programs than Duo, including egg, cake, and sterilize modes (but no custom Ultra mode), and the price is $99.95, a sweet spot between Duo and Ultra.
Which Size of Instant Pot Should You Get?
For a household of 4, I use 6-quart Instant Pots. The size is perfect for us. It’s recommended for 2-4 people. If you are cooking for more than 4, the 8-quart would be the size you should get. Another thing to consider is if you like to do big batch cooking, then you may want to go with the 8-quart. It would come especially handy when you cook for a big crowd on special occasions or during the holidays.
For anyone who cooks for one or two persons with small kitchen space, the 3-quart, aka the Mini, is great.
If you live in high altitude, Instant Pot Ultra features an automatic elevation adjustment that you can turn on in the settings screen for up to 9,900 feet.  The automatic part is that the Ultra re-calculates the pressure cooking time for you. Maybe this may help you?
Do You Need to Upgrade Your Current Instant Pot Model?
If you already have the Instant Pot Duo, I don’t think it’s necessary to get a brand new Ultra. Unless if you see yourself doing a lot of cooking which requires the custom setting for pressure, temperature, or cooking time, then an upgrade would be a worthwhile investment. I like that Ultra offers 3 saute temperatures and also allows me to set a custom temperature, which is similar to having a stovetop. After all, there’s always someone you can hand down your Duo to.

I can’t believe I haven’t shared my favourites with you since Christmas! What? I’m sorry but I’ve been so busy.  Since there are so many goodies that I love I tried to narrow it down to give you the best of the best!
NETFLIX 
I never thought that I would use the word OBSESSED over anything but seriously I’m Obsessed with RIVERDALE. Every since I can remember I’ve enjoyed reading Archie Comics and Riverdale is based off the Archie Comics Characters. Riverdale’s storyline includes issues like murder, bullying, backstabbing, trust and of course love. I also watched and really liked 13 Reasons Why. A very dark and really powerful series. 13 Reasons Why is a very important series in my opinion. A lot of people don’t realize what students are faced with everyday in schools and we need to be more aware and involved with issues such as bullying, mental illness and depression. The series deals with suicide, bullying and rape. The acting is very good and the characters very believable. I’ve also been enjoying Z Nation! A really amazing series about Zombies but super scary ones and not the kind you find in The Walking Dead. More like zombies on fast forward mode. Super fast ones and ten times uglier! 
"A great place to get away with it all" -Riverdale #Riverdale is my recent obsession and I spy with my little eye little gems 💎 on the show! As soon as I spotted @covergirl I said to my self "I need to share this incredible information" plus I fell in love with the makeup on the show. But of course! 😘 It's all about the lips! Now I have three ❤️ loves featured in this post. 1. @netflixcan 2. @thecwriverdale and 3. @covergirl 😘❤️🤘🏻 I'm so excited and I can't wait to bring you a blog post. I really like the show BEYOND. I love the acting and the mystery. It’s very deep and believable. I can’t stand science fiction that has horrible acting but BEYOND is amazing! I am drawn into the show by Burkely Duffield’s acting and intensity. I also really love The Walking Dead. I’m upset that The Vampire Diaries  has ended. I cried like a baby! Also the last season of Pretty Little Liars is going to start today. There are 10 episodes left and I’m so excited but sad at the same time. You can catch up to Pretty Little Liars on Netflix if you like.
Our family is enjoying watching Anne on CBC. People are hesitant when I tell them about this but I assure you this is an incredible version of Anne of Green Gables. The original is good but this version in my opinion is AMAZING!  I really love the darkness and the cinematography. I love the way the camera is used in this series because it really highlights how Anne is feeling and what she’s been through. The series really captures how Anne’s past has effected her. Brilliant Series! Truly incredible and the acting is amazing! Totally recommend you watch Anne.

I’m very excited that BRAVO has announced that The Handmaid’s Tale written by Margaret Atwood will air in Canada exclusively! I’m so excited to see this Drama. I love Margaret Atwood and this is the first book that got me interested in reading novels so I’m looking forward to it.
Bravo announced today it has exclusively acquired one of 2017’s most anticipated dramas, the television adaptation of Margaret Atwood’s iconic The Handmaid’s Tale, in a deal with MGM Television. The 10-episode first season airs in Canada exclusively on Bravo, beginning with a special two-hour premiere event on Sunday, April 30 from 9 to 11 p.m. ET (10 p.m. – midnight PT). The one-hour drama continues to air Sundays at 9 p.m. ET/10 p.m. PT, beginning May 7. The entire first season launches on CraveTV this spring, following the season finale on Bravo. -BRAVO

Last month I completed the Novel Himself by Jess Kidd and I also purchased a lovely magazine called Flow. I really enjoyed the book and I’ve written a review if you like to have a look,  Himself by Jess Kidd REVIEW .  I absolutely love the magazine Flow. It is so creative and artistic. It has so many activities you can do as an artist but also the articles are really wonderful and inspirational. I highly recommend you check it out. If you are into the Arts you will love Flow!

I’ve been wearing and loving a lot of makeup recently.  I’ve been loving my Lancôme Juicy shakers in the new flavours. They are sweet like candy! The three flavours that I adore are Snow-Tilly, Marshmattack and Cloudy Candy.
I’ve been obsessed with Annabelle Cosmetics eyeshadow chrome in Rose Gold. It’s so creamy soft and shines so beautifully! I absolutely love it! I also love Annabelle Cosmetics Skinny Eyeshadow Palette in Taupe Neutrals Basics. Im a huge fan of taupe colours and I absolutely adore the skinny palette.  I have two blushes that I’m loving lately and one is Avon’s Mark Blush in the colour Mauve Forward and CHANEL’S Blush Harmony COCO CODE. 
I also have a huge love for lip products recently. My favourite lip products have to be DIOR Lacquer Sticks in the colours 344 Rolling and 877 Turn Me Dior. I also absolutely love BURBERRY Liquid Lip Velvet in the colour No. 5 FAWN.
I have a huge love for AVON’s All Butter Lip Treat in the colour Bare All and Marcelle Cosmetics Rouge Xpression Velvet Gel Lipstick in the colour 885 Rosy Nude.
Two lovely nail polishes that I’ve been loving and wearing recently is AVON True Color in SMOKY PLUM and Sinful Colours 1052 ENDLESS BLUE (*inspired by 13 Reasons Why on Netflix)

I’be been really loving COCONUT CLUSTERS with Super Seeds. They are amazing in my yogourt and cereal. We buy them at Costco and they are so good! They have pumpkin seeds, sunflower seeds and chia seeds. They are so crunchy and delicious!
HAIR!
I got my hair cut! I know right? I go through times where I like change and I went short. I absolutely love short hair and its so fun to style and play with. I love long hair too but short hair is very fun. I decided to go to Trade Secrets at Scarborough Town Centre and I’m so pleased with the results. Love the customer service and I’m so happy I found a place where I can go again and again. It’s affordable and they do an amazing job.
My hair dresser’s name is Christine. She is fantastic!  I brought Christine a picture of what I wanted my hair to look like and she gave me her advice. I really love how she personalized my cut to suit me. Christine really took the time with me and I appreciate it so much. I’m so grateful and very happy with the service at Trade Secrets.

White Sourdough Bread | The Crazy B*#!h Sourdough Starter

Back after the new year, I began my sourdough starter project, diligently filming each day’s feeding from start to bitter (and alcoholic) end on day 5. After reviewing the footage, I needed to start feeding my starter every 12 hours on day 3. Due to ignorant neglect, I starved my first starter, literally, to death. Time to scrap and start over with my new knowledge. Once the new starter was ripe and ready, I began my sourdough bread making odyssey. Here is that journey.
Many look at sourdough bread making as a science with exact gram measurements for everything, humidity checks, alarms for middle-of-the-night feedings and probes for internal temperatures. That’s phooey and hogwash in my book. Anything that needlessly complicated is just that: needlessly complicated. I’m no bread expert, but I do know what tastes good. And how a home oven can be turned into bakery heaven without any fuss or expense. You can make sourdough bread too. It takes some time to get a starter going, but once you do, you’ll be cooking bread like there’s no tomorrow.
Sourdough Bread 1 cup, 200g, active sourdough starter 1¼ cups, 300ml, cool water 1 tablespoon, 15g, light corn syrup or honey 2 teaspoons kosher salt 1 tablespoon yeast, optional 2 tablespoons, 20g, wheat gluten, optional 3 cups, 360-400g, all-purpose flour
Whisk everything except the flour until it’s well combined. Stir in the flour with a spoon or spatula incorporating as much flour as possible. Let dough rest for 15 minutes. Using a stand mixer, knead with the dough hook until it starts to pull away from the side of the bowl, 5-7 minutes. Scoop and scrape very sticky dough into a greased bowl and set it in an unheated oven to rise until it doubles. This can take up to 6 hours. Once it has risen, fold it over, then let it rise again until doubled.
Dust a square of parchment paper with flour. Fold dough again and shape it into a ball as best you can on the paper. Dust top with flour. In the meantime, put a heavy, lidded 7qt Dutch oven in a cold oven and set the heat to 450°F, 230°C, gas mark 8, and the timer to 40 minutes. After the 40 minutes, slash the top of the dough, and place the dough and parchment paper in the dutch oven replacing the lid. Bake for 15 minutes. Remove the lid and bake for 15 more minutes. Remove bread to a rack to cool completely.

Fake News
The Oxford English Dictionary defines the word ‘News’ as “The report or account of recent events or occurrences, brought or coming to one as new information” This definition is malleable however as news can be disrupted and changed to become many different things. For as long as news has been around, there has also been fake news; fake news is a form of propaganda that spreads false ideas and deliberate misinformation through forms of media. Ever since President Donald Trump first started making waves in headlines leading up to his eventual election the words ‘Fake’ and ‘News’ have been popping up in the headlines more and more. One of the most controversial subjects in recent years has been during Barack Obamas presidency with the ‘birther controversy’ where an anonymous email stating that Obama was born in Kenya started the ball rolling with many people demanding that Obama produced and publicly showed the world his birth certificate. By attracting so much controversy it also attracted a lot of media attention which escalated the false accusations.
This was a very high-profile situation of Fake News as it was in the public spotlight for a long period of time and greatly influenced politics and the social conversations that were happening during the 2008-2009 presidential election. Obama was running for presidency and with these allegations that surfaced, if proved true it would have derailed his presidential career and any future he had in the American political sphere. Because they appeared at a point in time which was beneficial to all opposing political campaigns. PolitiFact wrote an article in 2008 that stated in paragraph one that, “the accusations are explosive and unrelenting, the writers emboldened by the anonymity and reach of the Internet.” Which meant that through unofficial sources the anonymous statements caused the believability of this fake news to grow because it was so highly broadcast to the entire world. People like Donald Trump put their two cents worth into the fiasco, stirring the pot and getting the public voice to grow on the subject, escalating the matter at hand. 
The fact and fiction about whether or not Obamas birth certificate was fake or not became blurred from the get-go, as the original claims were never traced back to an original source. Further escalation of this news story was added after a mention of “Obama‘s birth certificate spurred National Review Online to demand that he produce it to dispel groundless reports that Obama was actually born in Kenya and therefore would be constitutionally ineligible to be President” (Time, 2016, para.4).
