he has a long-term fixation on the tv show cheers, in ‘simon and marcy’ he uses the theme song to help ground himself. he seems to find comfort in the show *because* of its mundanity, which helps him cope with the sudden changes that have been thrust upon him. adding onto this, he’s shown to demonstrate routine behavior in fionna and cake via listening to the theme song while he’s getting ready in the morning. he also tends to go on tangents -usually about archaeology which could also be read as a special interest- seemingly without registering whether anyone around him is actually listening. also disregarding the mushroom war and the crown, i’d say the struggle to communicate on both ends was one of the biggest cracks in his and betty’s relationship. canon focuses more on the communication deficits on his end, those being that he didn’t seem to discern that betty was putting her life on hold for his sake (episodes 9 and 10 of fionna and cake sort of paint him as being at fault for that which i disagree with because it just read like nonverbal social cues going over his head to me but whatever) i also strongly believe that betty is neurodivergent in some way as well but that’s a whole other can of worms

Something I wonder about Simon and Betty's relationship is how long they were together before the whole crown ordeal. But they were engaged, you say. My aunt (in)famously met my uncle and had a ring on her finger in 8 weeks. We've seen that both Betty and Simon were both weird outcasts, crazy determined and a pinch insane. I would not be surprised if they decided they'd met their one true love and got engaged super quick.
My point being, Betty's shifting to revolve around Simon and Simon's rose colored glasses of their relationship feels very much like New Love. They're people who love each other and love being a couple but still haven't quite figured out how to coexist together, as two people in a partnership. I feel like if they'd known each other longer, lived together longer, some of the issues we're seeing would have probably self resolved.
I don't think their relationship is toxic nor is it totally perfect. It's two lonely, most likely neurodivergent people in a relatively early relationship still figuring out how it works. Everything that happened afterwards: the crown, the seperation, the time travel, the magic/madness/sadness just exemplified issues they had both as individuals and as a couple.

betty and simon would do literally anything for each other except let the other go and that's where the tragedy in their relationship comes from. they love each other so much that they let themselves fall into this cycle of madness and self-sacrifice, because they would rather die than willingly move on without the other in their life. it consumed their entire beings, to the point where, even through all the magic and madness and sadness, the other was always at the forefront of their minds -- even if they may not have realized it. always my princess. my simon.
it consumed them because they let it consume them. because they had nothing else to cling to. simon, a man slowly losing his sanity in the ruins of the world he once knew, forced to leave his surrogate daughter behind out of fear he would hurt her. betty, a woman brought nearly one thousand years into the future to a world brand new to her, and the first thing she does, she has to do, is save her fiancée's life by returning the crown's curse to him. love and adoration turn into obsession, but neither of them want to acknowledge it as such.
they haven't known a moment of peace since simon first put that crown on. but they can't help but perpetuate the cycle, because they aren't ready to admit that they can't save the other.
they aren't ready to say goodbye.
