So I'm reading Witches Abroad and the first time we see Granny use magic is in Desiderata's cottage. Desiderata (deceased) was a big proponent of everyday magic. She was also quite blind. So when Granny and Nanny check on her cottage and definitely are not looking for her wand, there are no matches for the fireplace.
Granny doesn't like everyday magic. She says so. She even tells Nanny that if they found the wand she wouldn't use it, emphatically. She doesn't like the habit. But she's annoyed and wants her tea and needs a fire for that. So she uses magic.
But then she sees the mirror. And the face looking back isn't hers but Lilith's. Heres a quote about Granny:
"Very few people in the world had more self-control than Granny Weatherwax. It was as rigid as a bar of cast iron. And about as flexible."
And she smashes the mirror immediately and without hesitation.
Now we don't know who Lilith is to Granny at this point but upon reread this is a particularly interesting passage. By the end of the book we know Lilith is "the bad witch" and because she is Granny "had to be the good one".
Granny hates the fact she has to be the good one. She knows that if she was the bad one she'd be the most terrifying witch the Disc has ever seen. But she has to be the good one. That's her responsibility since Lilith turned out bad. She has to be good and she has to be responsible, especially since she has the power to be so evil and do so much damage if she ever lost control.
And I think that's why Granny smashes the mirror right then. She was annoyed at the lack of matches, she wanted tea, she used magic to get it. And that's not responsible witchcraft in her mind. So when she find Lilith looking at her through the mirror, she sees the person that forced her to have that self control. That made Granny Weatherwax a good witch when she wanted to be the bad one. And that hurt her.
This is also interesting when you consider Sam Vimes relationship with alcohol. Vimes used alcohol as a way to deal with a feeling of helplessness and lack of control. That addiction numbed the emotional pain and he had to be so careful in later books not to fall back into that habit.
Granny is the opposite. Her power is, maybe not addictive, but something she takes immense pride in. She wants to use it, she became the most powerful witch (not the most talented, that's Nanny) through hard work and dedication. But she can't use it because that wouldn't be responsible. Because everytime she uses it, it becomes a little easier to justify using a little more until she's using it for everything. Or anything. And she can't because she has to be the good one.
How much self control must that take? Granny spent her entire life becoming the best at what she does. Decades of mastering her craft and when she reaches the top she had to essentially stop. To put it aside and only use it in the most responsible way possible because if she slips, it's a long long way to the bottom.
Cast iron indeed.

I love how Granny and Nanny’s shenanigans in Maskerade start because of how much they care about each other.
Nanny being so worried about Granny being depressed that she desperately tries to find another witch to fill Magrat’s void and jumps at the first opportunity to get Granny away from Lancre and out of her own head vs. Granny being righteously indignant at the idea of Nanny being stiffed by her publisher, so yeah, she’s heading to Ankh-Morpork to make sure her own reputation isn’t sullied by a “disgustin’” book, but, of course, she’s going to make sure Nanny gets her well-earned money along the way.

Granny Weatherwax and Nanny Ogg
ID: A digital drawing of Granny Weatherwax and Nanny Ogg from 'Wyrd Sisters'. They are two witches; Granny is on the left; she is a thin, elderly lady; her arms are crossed and she has a disapproving look on her face. Nanny Ogg is on the right; she is a small, plump old lady; she has one hand on her hip and is winking at Granny. They both wear pointy hats. end ID.

Let's talk about Magrat, youngest of the witches. Magrat wants to be a proper witch. She has the jewelry, she knows all the uses of herbs, she wants the mysticism and rituals of witch craft. She reads everything about witch craft. She has the talent for the craft and she has the drive to explore it. However, she still believes that magic is the solution and not the tool.
In Witches Abroad, she's been struck by the idea (literally, inspiration is an actual particle) that she needs to find herself through the teachings of ancient monks (re:CMOT Dibbler scams) and self defense classes. As a witch of the Ramtops. The place Granny Weatherwax and Nanny Ogg have been terrifying and cowing into reverent terror for 60 odd years.
Magrat, recently promoted to fairy godmother in a scheme to get Granny and Nanny to leave home to take care of an evil godmother, gets a magic wand. She doesn't get a lot of instructions for the wand. In fact, the only thing she learns about it is that it tends to reset to pumpkins.
And that's it.
She doesn't try to learn more about the wand. Magrat decides that the best way to use the wand is to wave it and wish. She doesn't ask for help from the others, she's the new godmother after all.
At first glance, that doesn't fit with her character. She wants to know everything about the craft. She wants to be a "proper witch" that does "real magic". She thinks that Granny's philosophy of not using magic for most things is just an excuse to be mean and trick people, even if she does usually end up helping them by doing so.
Except it does fit perfectly. She looks for mysticism and wonder and magic in everything. She thinks that the knowledge of ancient monks on distant mountains (con men in the big city) know the secrets of the world because they are monks. The silver jewelry is magical because witches are supposed to wear them. The herbs cure sickness because that's what is supposed to happen.
Magrat focuses on the trappings of witch craft. She looks for things to make her more confident in her craft instead of trusting in her own abilities. So when she gets the wand she automatically believes that the wand is what makes her a fairy godmother.
It doesn't occur to her that the wand is a tool that she needs to learn how to use. To Magrat, a fairy godmother grants wishes so obviously the way to be a fairy godmother is to wave the wand and wish and the wand will sort it all out.
That's not to say that Magrat is a bad witch. When she lets herself be a witch in her own right, when she's not trying to act like a witch, she does some very impressive magic. Impressive enough even to Granny and Nanny. She's just young and new to being a witch and living in the shadows of two of the greatest witches of all time.
Granny has to constantly hold herself back from using magic because she knows she's powerful. Nanny is so talented that using magic is as mundane to her as walking through the door. That's a terrible environment for someone unsure of themselves and trying to get their bearings. It's understandable that she looks for things that help her center herself and boost her confidence.
I think these first set of witches books are a lot about watching Magrat grow into herself. She stumbles, she gets put down, but she is growing into the witch she is supposed to be.
Sometimes that means an older, crankier witch calls you a wet hen.

Casanunda picked himself up and adjusted his wig happily.
"I like a girl with spirit," he said. "How about you and me having a little tête-à-tête when this is over?"
Nanny Ogg's face went blank. Her cosmopolitan grip of language had momentarily let her down.
"Excuse me a minute," she said. She put her drink down on his head and pushed through the crowd until she found a likely looking duchess, and prodded her in the bustle regions.
"Hey, your grace, what's a tater tate?"
"I beg your pardon?"
"A tater tate? Do you do it with your clothes on or what?"
"It means an intimate meeting, my good woman."
"Is that all? Oh. Ta."
Nanny Ogg elbowed her way back to the vibrating dwarf.
"You're on," she said.
