SHARE IT SUNDAY: Excited to try this recipe and share with all my tasters (aka my co-workers) tomorrow. My dad used to go out to our local bakery ever Sunday, bringing home goodies for our breakfast. My mom was famous for cutting off the giant stacks of crumbs from the crumb cake, ditched the cake part and get down on just the crumbs! . . Ingredients butter and flour, for greasing the pan Cake: 1 + ½ cups all-purpose flour ½ cup granulated sugar 2½ teaspoons baking powder ½ teaspoon salt 1 large egg ½ cup milk 2 tablespoons canola or vegetable oil 2 teaspoons vanilla extract Topping: 2 + ½ cups all-purpose flour 1 cup packed light-brown sugar 1 + ½ teaspoons ground cinnamon 1 cup (16 tablespoons) unsalted butter, melted and cooled to room temperature confectioners' sugar, for dusting Instructions Preheat oven to 325°. Butter and flour a 9x13-inch baking pan or line with parchment and lightly grease with non-stick baking spray. Make the Cake: In a medium bowl sift the flour, sugar, baking powder and salt together. In a separate large mixing bowl whisk the egg, milk, oil, and vanilla together until well combined. Add the dry ingredients to the wet and gently fold in with a spatula or wooden spoon. Scrape the batter into the greased pan and spread evenly from corner to corner - it will be a very thin layer. Make the Topping: In a medium bowl whisk the flour, brown sugar and cinnamon together. Pour the melted butter over it and toss together with a spoon until well combined. Use your hand to sprinkle the crumbs evenly over the top of the batter breaking the mixture apart into big crumbs. Bake 10 minutes and rotate the pan. Bake 10 - 12 minutes longer or until a toothpick comes out clean from center. Cool in pan on a wire rack. Dust the top generously with confectioners' sugar and use a serrated knife to cut into squares or rectangles. . . SHARE IT SATURDAY: Recipe for Coconut Butterscotch Chocolate Chip Bars (adapted from Mom On Timeout recipe) 1 1/4 cups flour 1 cup old fashioned oats 2 cups flaked coconut 1/2 tsp salt 3/4 cup brown sugar 1 cup butter, softened 1 egg, slightly beaten 12 oz semi sweet chocolate chips 14 oz sweetened condensed milk 1/4 cup light corn syrp 8 oz butterscotch chips 1. Preheat oven to 350 degrees. Lightly grease 9x13 baking pan. 2. Combine flour, oats, coconut, and brown sugar in a bowl of electric mixer. Mix at low speed until combined. 3. Add butter and mix until dough forms. Add egg and mix well. Stir in the chocolate chips. 4. Reserve 1 1/2 cups of dough for topping. Press remaining dough in baking dish and bake for 10 minutes, 5. While dough is baking, combine condensed milk and corn syrup in a small bowl until combined. 6. Pour evenly over bottom crust. Sprinkle with butterscotch chips 7. Spread remaining dough and bake for another 25-30 minutes.
