The Bear is A Midsummer Night's Dream and Marcus is making the violet love potion for Syd and Carmy

There have been Shakespeare references in The Bear from the very beginning. In the very first episode Marcus finds Carmy’s James Beard award for Fairest Creatures, which is a Shakespearean sonnet about life being short and how everything will end and die even if they're beautiful, but the only thing that survives are children, and not having children deprives the world of beauty. Nat's conversation with Jimmy about raising children was parallel with Carmy's conversation with Terry about starting a restaurant. Then of course there was Richie singing Love Story which is about Romeo & Juliet.

Violet and purple flowers are a reoccurring thing we see and learn about in Season 3 of The Bear. According to Roman mythology, the wild pansy, a type of violet flower, was originally white, then turned into the purple Love-in-idleness when Cupid accidentally shot one of his arrows at it, working as a love potion with Cupid's powers. The first time we see purple flowers is in Tomorrow when Carmy tweezing purple flowers next to Luca at Ever, this is the same wagyu dish they ate at the Ever funeral with Sydney. We see more flowers in montages, like Carmy eating them at Noma, bouquets in hotels, and at Marcus' mom's funeral and more.

A Midsummer Night's Dream TL;DR: The play starts with Theseus preparing for his wedding to Hippolyta, he declares that young people should have fun and celebration, not sadness like at a funeral. Hermia, Lysander, Helena, and Demetrius are in a love square and run away to the woods. Puck aka Robin Goodfellow, a fairy that enjoys mischief, manipulates them with the juice of a violet flower, love-in-idleness, that makes people fall in love with the next creature they see. Things get messed up, the wrong people fall in love with each other, and they all fight with each other. Puck reverses the magic, then the couples reconcile and get married at Theseus and Hippolyta's wedding. There is also group of 6 stupid men called the Mechanicals that put on a play, Pyramus and Thisbe (which is also the inspiration behind Romeo & Juliet) for the wedding. In the end, Puck breaks the fourth wall and apologizes to the audience for any offense the play might have caused. The Bear Season 3 started and ended with a funeral and an attempt at a celebration, and we know there will be a wedding in Season 4.

Marcus and his magic purple flowers are always tying back to Syd and Carmy. In Doors the purple flowers at the funeral cut to Sydney and Carmy's "cause you write in the margins" wholesome moment between them.

In Children, Marcus sees a white violet then it cuts to Sydney reading the partnership agreement that Carmy sent while wearing a purple flower scarf.

He then tells Nat about it, she mentions it's the state flower of illinois and he decides to make a white violet flower dessert.

In Violet, Marcus is working on some purple liquid and holds a violet petal, then it cuts to Syd and Carmy.

Even back in Season 1 Marcus was interested in the color purple and flowers, roommate Chester brought pantone color swatches. In Legacy Marcus and Carmy talk about creating magic to push his violet dish further, then Sydney appears.

In that same episode after the conversation about legerdemain and magic, Richie's notebook makes its own sleight of hand. It's a bit hard to read his terrible handwriting but on one page it says Lover for Syd on top and below:
Carmy -> Syd Luca -> Carm
And in another page he wrote:
Syd -> pansy Luca -> Carmen

Richie is Puck/Robin and he wants to see what would happen if Luca and Carmy start fighting for Syd. Richie and the Fak's have been fucking with the dream weave and Carmy’s love story for a while by pushing him to be with Claire.

The Faks are the Mechanicals, a group of incompetent manual laborers. We see Carmy tweezing herbs next to some pansy flowers, then Fak brings out the donkey piñatas. In A Midsummer Night's Dream, one of the mechanicals, Bottom, gets turned into a donkey then the rest of the mechanicals say they are being haunted. And we all know how much the Fak's love to talk about being haunted. Can't get more on the nose than that for them.

The Faks/Mechanicals are mechanics but they think they can make a movie/play. Theodore Fak thinks he makes art films, Sammy Fak argues with him over SD cards and tells him he makes films for children's parties. Even Francie Fak is a reference to one of the mechanics, Francis Flute, who is the only one forced to play the female role in the play they are putting on for the wedding. Also, In A Midsummer Night’s Dream (1999) Michelle Pfeiffer played Tatiana, the Queen of the Fairies, who Storer originally had in mind to play Donna.

When Richie arrived to Ever he took off a fishing hook from a purple flower, then right after Luca appears and greets Carmy. Carmy's flower tattoo in his hand is a violet, and it was right in front of his face the whole dinner when he was next Sydney and Luca and they started vibing with each other. Next season will have a wedding and Marcus' white violet dessert will be tasted. Richie already told us plan he has for Syd, the pansy and it goes from Luca to Carmy.

At the end of the play Puck has an epilogue and breaks the fourth wall to apologize to the audience if they have offended them. Richie and Tiff broke fourth wall to address the "kids" aka us the audience in Apologies. In conclusion, The Bear is a Shakespearean comedy, but it is also first and foremost, a messy love story. 💜

You’re Carmy’s friend from Noma and he asks tou to mentor Marcus before he heads to Copenhagen to stage. Sydney thinks you’re both fools in love and she’s determined to fix it. (fluff, sydney being the best wingman, inspired by the scene in new girl when nick points his shoes to jess, two fools in love)

It was hard for anyone to read if the Carmen Berzatto cared.
Some days, he was loving but most days he was tenacious. It’s not like he meant it. It was just how he was wired; how he reacts to things. The crew learned that the hard way, when he exploded on Marcus, when he screamed at Sydney…when the stress gets to him, it really gets to him.
He’s imposed penance on himself for his actions, secluding himself from the world…being unreachable. If there was one thing in the world that he craved and that he was afraid of, it was love. So he secludes himself until he feels alone. Relationships were unnatural to him.
But it came naturally with you.
You were training to become a pastry chef at Noma when Carmy was there. You met each other at the halls, shared friends that it was inevitable for you two to become friends. He was your first taste tester when you first made croissants. He helped you make your own sourdough starter for the sourdough cookies that you were experimenting on. You were the first person whom he cooked his mom’s picatta. You were his sous chef, helping him prep the vegetables on important dates. When news arrived detailing Mikey’s death, you were the first person he called. 
You two were great. You were great.
If anyone deserved praise, Carmy thought that it was you.
He didn’t know why but when he saw that Marcus was really interested in pastry, he called you; asked you to come and teach a really, really eager student that was going to stage in Copenhagen soon. Sydney also suggested that sweets are needed in a restaurant. You didn’t hesitate to board the plane upon his request. If anything, you were glad that he was finally asking you for a favor. It only meant that he was still—if not more—comfortable with you. 
You arrived in Chicago all smiles, and greetings. It was Richie and Carmy who picked you up from the airport and Richi was floored. How did his cousin even manage to tolerate you? He didn’t hate you immediately, of course. In any case, Carmy told you about his little girl; you decided to bring her a little gift. 
“I didn’t know what to get you but Carmy said that you have a daughter so I got this instead,” you said, extending a toy. “My niece has the same one…so, I figured…”
“Yeah, yeah,” Richie nodded. He muttered a small ‘thanks’ before helping you with you luggage. 
The night before, Carmy instructed everyone during family to behave. 
“Look, there will be no funny business, alright? My friend is flying in tomorrow to oversee Marcus and act as his mentor while we fix the Bear. No taking her knife away, no screaming, no fighting, no fucking anything, alright, chefs?” he asked. When he was met with silence, “Alright, Chefs?”
A couple of ‘heards’ were thrown. 
“Who is this friend, anyway, Jeff?” Tina asked. “You didn’t tell us to behave when Sydney over here first came,”
“Someone from Copenhagen. She, uh—“
“She?” Sweeps asked, his eyebrows raised in anticipation. “You got a girl, chef?”
“No,” he replied. “She studied in Copenhagen as a pastry chef, okay? No big deal—“ he proceeds to mention your name and how you’re just really super cool. “No big deal—“
“Wait, Chef, that’s a big deal!” Marcus said. “Oh, you know her recipes are all over my station, right?” he asked. “Sydney—“
“I went to the place she worked at in New York after I graduated. Everything’s just so…good. Amazing,” she recalled. “So, yes, it’s a big deal,”
“Yeah, whatever. Just promise me to behave, alright?” Carmy asked. “She’ll have to make do with what we currently have but I’ll try to stock up and set up the station before she arrives tomorrow.”

You arrived at the Beef—er, the Bear a day after your arrival in Chicago. You were able to find a place that was near the city center for a good deal. You were here indefinitely, still trying to figure out if you wanted to run your own bakery or just work with others for the rest of your life. Seeing Carmy take the leap was insipiring. 
“Hello, chefs, I’m Y/N,” you said, a friendly smile gracing your features. Carmy was right beside you, watching everyone. “I’m a pastry chef and I graduated with Carmy in Copenhagen. I’m here to mentor Marcus but of course, if you have any questions regarding anything, you can ask me. I know how to cook too…and uh, I’ll be taking care of family tonight,”
Carmy jerks from his relaxed position. 
“You sure?” he asks softly. “I can take care of family, if you’re too tired.”
“Yeah. It’s like initiation,” you nod, looking at him and then looking back at the new faces in front of you again. “Do you have any questions…”
Sydney raises her hand. 
“Um, I’m sorry if this comes across rude but why are you here?” she asked.
“Oh, well, I’m not really tied down to anything right now. When Carmy called me, asking if I could come here, I decided to go. I’m here in Chicago indefinitely and I’ve been receiving invitations to cook, teach a class, whatever. I might accept some of those,” you said. Sydned nodded. Damn, Noma’s chefs were being chased from left and right. She was in the presence of two. 
“Do you have a little notebook?” Tina asked, making Sydney scofd. “With recipes?”
“Um, no,” you shook your head. “I keep all my notes in my head and then write it afterwards,” Tina liked you already. 
“What do you think about Carmen Berzatto—“
“Anyway, that’s all, Chefs! Marcus, come to the office with me, chef,” Carmy said, breaking up the huddle, and making you laugh. He discreetly pulls down your shirt, a sign that you should follow him too to the office. When you were both out of earshot, Sydney asked no one in particular.
“That girl and Chef? There’s something,”
That afternoon, during family, Sydney watched the two of you like a hawk. Confirming her suspicions when Carmy stayed for family and sat beside you.

Sydney notices it for the second time. You were going over the Noma “picture book” with Marcus, telling him how some of the desserts came about.
“What’s this?” Marcus asked, pointing at a photo of the dessert that put you on the map. 
“That’s a dish of candied hallabong peel, with a prosecco peach sorbet, on a bed of meringue, topped with candied cherries. I got it because some of my friends went to Jeju sometime and brought back this orange hybrid. I think….I think we can recreate it but it wouldn’t be the same without the orange.”
“What about the flesh and the juice?”
“I turned it into like an orange-chocolate cake with chocolate mousse,”
Carmy was just passing by but he decided to watch you interact with his employees instead. 
“Anyways, where’s your chocolate cake? Let’s taste it and compare it from the last one. Also, I can send you my recipe for sourdough doughnuts. Just give me your email,” you said, looking up briefly to find Carmy already looking at you. It made him feel good to see you incorporate yourself so well in the kitchen. Well, it’s not like the Bear is open but his staff went to you for some tips and advice. They were all undergoing some sort of training to make everything more elevated. “Hey, Carm. Do you need anything?” 
“Hey-hey,” he coughed, ashamed for being caught. “Nothing. Uh—“
“Chef, did you ever try Y/N’s stuff?” Marcus asked. He’d really, really, really want to taste something that you made someday. They were all delicate and so detailed. It’s probably why you got multiple awards at such a young age.
“I did. She used to bring big Tupperware containers of things they made in the kitchen,” 
“He finished them all,” you told Marcus. “Wouldn’t spare me a bite,”
“I don’t know, bug,” he teased. “I vividly remember you begging me to do it because you were so sick of fucking croissants.”
“You’re so annoying,” you huffed, a playful smile on your face. “Go on now. Marcus and I have stuff to do and you’re distracting us.”
“In my own restaurant,” Carmy mutters, shaking his head. Sydney’s eyes immediately directed to Tina. Did you see? Did you hear the word ‘Bug’?. Tina only shrugged.

Sugar dropped in to check on the improvements being done at the Bear  when she saw you and Carmen at the back, talking. She had to double take what she saw because it was quite…odd to see him talk to you with the same twinkle he used to have. She has never seen him like this. He was genuinely laughing at some of the things that you were saying, a shared plate of leftover chocolate cake between the two of you. 
“Who’s the girl outside?” Sugar asked, looking at Richie and Sydney for answers. 
“Some fancy pastry chef Carmy met in Copenhagen,” Richie replied. “It’s a whole bet now, you know? They’re always out in their own world ever since she got here,”
“Everyone puts in 10 to predict what’s going to happen,” Tina said. “You’re betting?”
“Yeah, sure,” Sugar says, giving a bill to Tina. “I bet…I bet they’ll fall in love right before she leaves Chicago. Like, on the way to the airport. Carmy’s going to tell her that he loves her and she stays,”
Laughter echoes in the room. 
“This is not some fucking movie, cousin,” Richie said. “Obviously, Carmy’s not gonna do shit about it.”
“I think…she’ll call him over and they’ll share a moment,” Marcus said. “He’s always at her place, did you know that?”
Meanwhile, unaware of the ongoing bet, Carmy looks at you.
“What do you think about Chicago?” he asked, a cigarette hanging idly on his fingers. 
“It’s nice…chilly,” you said. “But it’s nice. I’ve been offered jobs here, you know?”
“Hm?” he asked. “Are you planning to take them?”
“I’m…thinking about them. They’re all the same but like, I want my own bakery, you know? My own place.” you said. “It’s going to be a lot of work if I do that and I don’t necessarily have the staff to do all that.” you said. 
“If you want…you can come stay with us if you’re not sure,” he offers. “Like a pastry chef. Actually, I’ll have to ask Sugar and Sydney if it’s alright with them but you can stay here,”
“Bear, I don’t want to impose—“
Sydney was walking outside to throw the trash but she stopped her trackes when she heard you talk. 
“I want you here,” Carmy said with conviction. “But if you don’t-don’t like it here in Chicago, I wouldn’t mind either, you know? It’s just that…I want you here and-and fuck, I don’t know. I guess working with you made it so much more fun again, you know? Like us in Copenhagen. I mean, we’re always a team and-and it’s nice to have you here with me. Sugar and spice? Sweet and spicy or whatever the fuck they called us back then,” he chuckled, inhaling his cigarette to calm himself down. “We can make it work,”
“Yeah, yeah. You go talk about it to Nat and Syd,” you said, taking a swig of your water. “And then we’ll talk. Cool?”
“Cool,” he shrugged. Sydney leaves and goes back to where the commotion was. 
“I change my scenario,” she said. 
“You can’t do that, Sydney,” Richie said. “It’s a bet! You have to pay again,”
Sydney breathed, what was ten more, right? Fuck. 
“Fuck, sure, okay. Whatever,” she said, giving Richie the bill. “She’ll stay here. She’ll realize the there’s nothing waiting for her back home and she’ll stay here,”
“Where did you get this?” Fak asked. “Quite—oh my God. Sydney, did you fucking cheat?” 
“No, I didn’t fucking cheat!” she defended, it was a lie. “Can’t you see the two of them? Always in their own world? How would Carmy let her go?”
“Jeffrey has a point,” Tina shrugged. “But if she loses, just know that you lost twice, Jeff,”
“I know,”

You, Sydney, and Carm all went to his apartment. It was where the two of them made a menu while you acted as a consultant and a taste tester. Their palates were fucked and they didn’t know what to do or what to cook anymore. So they asked you. But you weren’t there today. You and Marcus were in your apartment, making up stuff for dessert. The Beef has officially closed down and is a rubbled mess. There was no space and Carmy just wanted to be there with you.
“Can I ask you something and you can tell me to fuck off?” Sydney asked while she watched Carmy plate the hamachi crudo. 
“Hm?”
“Do you…have feelings for Y/N?” she asked, looking at Carmy. He blushed, his ears turning red for being caught.
“Is it obvious?”
“To everyone but her,” she shrugged.
“Fuck, really? I thought I was being discreet,”
“Oh, you can stay here! You’re so good and so smart and so pretty,” Sydney gushed, mocking Carmen.
“Fuck off,” he laughs. “I…I do,”
“Yeah?”
“I just…just…she’s uh, so amazing, and like, I’ve been feeling these feelings since…since Copenhagen,” he mumbles, finishing the garnish with an oil. 
“Damn. You never made a move?” she asked, getting forks. She gives one to Carmen and they both taste the crudo. It was amazing. “That’s good,”
“It is. Good job, Syd,” Carmy replied.
“It was her who told me to try adding jalapeno slices,” Syd said. 
“You can’t do that,” Carmy warned her. Why did she want to get you two together so bad? “But I haven’t done anything. I mean, like, she was dating these guys and they’re so cool that-that it was never really my turn,” he remembered.
“But you’re the best chef in the world! That trumps that,” she encouraged. “None of them worked out?”
“No,” Carmy shook his head. “She’d always end things and I don’t want that for myself. She told me none of them worked out…wasn’t what she was, uh, looking for?”
“Oh,” Sydney nodded. “Well, if you’re feeling brave enough…”
“I haven’t been having…fun,” Carmy acknowledges. “With the Beef and the Bear until she got here, you know? Made me feel like I was young in Copenhagen again,”
“Another question. You can say fuck off if you want,” Sydney says and watches as Carmy bites a smile. “The last one. Is that why you asked her to stay? It’s just that I heard you the other day and…”
“Fuck off,” he laughs but Sydney noticed how everything about him conveyed everything that she needed to know.

“This is a quenelle,” you told Marcus. You, Marcus, Carm, and Sydney were at your apartment. It was bigger than Carmy’s and your oven didn’t have jeans in them. “This took me at least a hundred tries,” you chuckled. “You just…away, back, and then hands…” You demonstrated, making a quenelle of a yuzu mousse.
“Damn, Chef. How’d you do that?” Marcus asked, trying it for himself. He failed, his quenelle being a little bit smaller than yours. 
“I had a friend named Luca. He didn’t let me out of the kitchen until I made a perfect one,” you recalled. “Carmy was there and he was laughing at me. He could do it in like three tries and I remember hating him,”
“You hate me?” he asked, leaning on the countertop. He didn’t like to hear about Luca. He only wanted you to talk about the two of you.
“Hey, Bear. Try this?” you asked, spooning him the raspberry curd. Carmy opens his mouth and you walk over, feeding him the pinkish liquid and then watching his face. “It goes with a black sesame shell. Do you like it?”
He notices your close proximity and flushes.
“Y-yeah,” he coughed, looking away. “Really good. Uh, very good,”
“No notes?” you asked and he swore he could kiss you right there because you were so beautiful.
“No notes,”
“Thanks, Chef,” you said. Sydney whistles as you help Marcus master his quenelle. Carmy looks at her and she teases him with a mockery of what he just said.
Carmy and Marcus left after cleaning up. You and Sydney decided to have a girl’s night. You were both sitting on the couch, mud masks on your faces when she turned to you fully.
“You know, he likes you right?”
“Who?” you asked, trying to fit a handful of chips.
“Carmy,” you heard and you choked on the bits of chips in your mouth. 
“Fuck!” you choked. “Sydney!” You were coughing while Sydney handed you a glass of vodka cranberry. You gulp it down. “You—can’t say shit like that!”
“What?” she laughed. “Look, I’m not kidding! Whenever he talks to you, his feet are pointed at you. I’ve read enough fucking books and body language shit to know that he’s interested,”
“I don’t think so,” you said. “That’s bullshit,”
“It’s not though,” she shrugged. “He asked you to stay for a reason,”
“He needs a pastry chef,” you shrugged. “Besides, he and I are friends, Sydney. I’ve been trying to get him jealous all my time in Copenhagen but he never…he never got the signal,”
“Oh,” Sydney nods. Two idiots in love. “Have you ever tried telling him?”
“Of course not! He’s always on about how he doesn’t have the energy to love or date. I tried the jealousy thing before but it never worked. Trust me, there’s nothing.”

Carmy arrives at your doorstep the next morning, bright and early. Sydney had already left, telling you something about stopping by at her dad’s apartment to get stuff. You were going to the Bear with him to help Sydney choose plates for the restaurant. 
“Good morning,” he greets. Two cups of take-out coffee in his hands. “I got us some coffee while we walk on the way,”
“Thank you,” You took the cup from his hands and clutched your jacket tighter. It was so, so, so cold. “Didn’t know it was going to be this chilly today,”
“You wanna wear my jacket?”
“You’ll be cold,”
“It doesn’t bother me,” he said, already taking off the jacket to the best of his one-handed ability. He was only wearing a gray sweater underneath. “I have something. See?” He doesn’t take no for an answer, taking your coffee and your bag from you so you could wear the colorful jacket.
“Thanks, Bear,” you said, smiling at him. The sight of you in his clothes does something to him and he couldn’t help except give you a slight nod before forging on in the chilly Chicago weather. 
You both entered the Beef giggling amongst yourselves when the usual buzzing stopped.
“Remember when Luca—“
You halted, finding the silence odd. You looked around to see everyone looking at you.
“What’s wrong? Is something wrong?” Carmy asked, removing his hand from the small of your back. “Syd—“
“Love the sweater,” Richie teases. You look down and feel the warmth on your cheeks. 
“It was cold and he asked me to wear it,” you shrugged, leaving Carmen to deal with the staff out front. You were signalling Sydney for help but she only looked away. Traitor. “Um—“
“Y/N, if you could please help me out here,” Carmy called you. 
“Your boyfriend’s calling,”
“He’s not!” you huffed before walking over. “What is it?”
“I need you to time me, is that okay?” he asked. He nodded towards the stopwatch and you complied. “Thank you. I just need to check or like, map out the kitchen you know?”
“Of course,” you replied. 
“Do you need help getting on—“
“It’s okay it’s just an old thing,” you replied.
“Yo, cousin! If you’re done eye fucking, Sugar needs you.” Richie calls.
“We’re not eye-eye fucking!” you complained. “What the fuck?” You stood up from your corner before you could even work and accidentally looked down. If a man is interested his feet will—
You move to the side and Carmy follows. And then to the side again. 
“Y/N–“
“Stay there,” you asked, walking around him and him turning around. “Carm!”
“What?” he asked, grasping your shoulders. He looks down to his shoes. “Are my shoes dirty?”
“No, it’s just—“ you tried again but Carm still followed. “Sydney told me about like, how when a guy is, uh,”
“Cousin!”
“Fuck, okay. Let’s talk about it later okay? Once everyone’s out?” he asked, looking at you. “Can we do that?” His jacket felt softer on you than it ever did on him.
“Yea-yeah,” you nodded. “I’ll go help Sydney,”
The afternoon passed by and you were alone at The Bear. You waited for Carmen to finish up at the dining area like you promised. Your heart was beating so fast, maybe a thousand miles an hour. What Sydney said has been on your mind and what if it wasn’t true and you get embarrassed? Fuck, could you even handle that?
You sighed, burying your head between your hands when Carmy walks over to you. 
“What’s up?” he asked. “Everything alright?”
“Y-yeah,” you nod. “Can you stay there and just, I don’t know, be Carmy?” you asked, standing up to test the theory again. He just stands there, dumbfounded. You circle around him and he follows. You were looking on the ground. 
“Fuck, what the fuck?” he asked. “Is there something wrong with my shoes? I know they’re old and not—“
“Carmen, shh,”
“What?” he asked, grasping your shoulders for the second time that day to steady you. “What’s wrong?”
“Fuck, I don’t—“
“What’s wrong?”
“Sydney told me that there’s like, this body language thing and like, uh, says that when a guy is interested his shoes are always pointing at you and well, she told me to look at yours,” you rambled, looking away in embarrassment. “Look, if this will be weird between the two of us, I mean—“
“Why would it matter?” he asked, hands inching closer to your neck. He was nervous but maybe this is the opening that he’s been waiting for for years. When you didn’t reply, he asked again. “Why would it matter?”
“Because…because I’ve been trying to make you jealous for years in Copenhagen and it never worked,” you whispered. You were embarrassed. It felt like you were in high school telling your crush that you liked him. “I know you don’t see me that way,” you replied, trying to look for the right words. Carmy lets you finish. He wanted to hear you. “And it’s fine. If this is stupid, let’s forget that this ever happened. Okay? God, I’m so fucking embarrassed right now,” 
“Hey, hey,” he cooes, his thumb tucked the hair back and then caressed your cheek. “Whoever said that I wasn’t jealous? I had to leave all the time because I was so fucking jealous. Those guys were cool. Don’t-don’t be embarrassed, okay? I like hearing that-you, uh, like me,”
“Carmy…don’t lie to me, okay? You don’t have to pretend—hm,” 
Carmy had just kissed you. Carmen Berzatto just kissed you. You were clutching on his shirt so tightly, afraid that if he lets go, he’ll be gone. But he doesn’t. He just trails his hands down to your back, touching skin to skin until you’re one. 
“I’ve been waiting years to do that,” Carmy rasps, breathing heavily. 
“Yeah? Then, do it again,” you whispered, smirking slightly at how he seemed to blush hard. Before you could tease him though, he tucks your hair back again, bringing your lips closer to his.
He did.

summary: leaving your old life behind, you move to copenhagen to follow your dream of opening a restaurant. almost a year after opening, luca's quest for inspiration brings him right to your doorstep.

a/n: remember when i said we'd get pastry chef luca fanfic whether we liked it or not? well, it seems i can't be normal about anything bc i have an outline of (potentially) 10 chapters right now based on this headcanon. while i try to keep reader characters pretty neutral so that you can picture yourself, i have this reader creating food from her own life experiences/cultures so do what you will with that. also, i tagged some peeps from my headcanon post, but please let me know if you'd like to be removed.

He’s in search of inspiration when he finds the restaurant – your restaurant. 
It’s an American stagiaire and a single conversation that makes him realize that he’s missing something – that he’s been in need of something fresh, a new perspective– setting him on his quest. 
The best things are inspired. 
Luca stares at a blank piece of paper for what feels like hours, writing a few things down, sketching up an idea, before viciously crossing them out, hopelessly stuck on new ideas for the new menu. After a few half-baked ideas that go nowhere, It occurs to him that he may be in need of a little inspiration himself. He can’t think of the last time he’s taken his own advice, mulling over the carefully-chosen words of wisdom imparted to Marcus a couple of weeks ago, and he’s determined to change that. 
A review in the paper, an old colleague’s recent trip there, and a glowing recommendation from a close friend are what bring him to the restaurant. 
He’s not sure what to expect – having forgone any interest in cuisine described with the words trendy or fusion a long time ago – but Luca reminds himself that it’s the writer’s word choice, not the chef’s, when writing the article. 
When Luca steps into the small home-turned-restaurant, he’s immediately inundated with a warmth, a homeyness, that takes him by surprise. From the open kitchen, to the golden lighting, it feels vastly different from the classic Danish-style, fine dining establishments that have swept the country. 
But Luca reminds himself that the announcement of noma’s 2024 closure, has shifted the conversation around dining culture in Denmark, and already, he can feel that this is the breath of fresh air that he’s been looking for. 
Luca’s seated quickly with care and hospitality by a highly-attentive host, which he only assumes is a symptom of the fact that he read somewhere that you’re an American. While Danish, the host is boisterous, as if he’s known Luca since childhood. Luca smiles politely in response, graciously thanking the man and his chocolate brown curls. 
The menu is small, indicating that each dish receives enough care to be excellent and he likes that, despite being described as trendy and fusion-focused, your menu is creative. It’s different. It’s inspired. 
He chooses the special of the day: the mapo tofu bolognese – a traditionally Italian concept done from an Asian perspective – and the suggested wine pairing.
It doesn’t take long for him to receive his glass of wine, or his food, and he’s pleasantly surprised by how efficient service seems. Stealing glances through the open kitchen, he watches as you and your sous lead dinner service with a kind of compassionate leadership and playfulness that warms him from the inside out. 
“We recommend mixing the whipped tofu into the dish for a creamier sauce. Skal,” his waitress greets, with a warm smile on her face as she sets down the bowl of noodles. 
“Cheers,” Luca replies, his eyes savoring every single detail of the dish. 
It’s somehow elevated, thoughtful, and elegant, yet comforting all at once. 
Luca picks up his fork, using it to collect a little bit of everything – a perfect noodle twirl with just enough sauce, and ground pork before running his fork the whipped topping – raising the fork to his lips for his first bite. 
As the flavors hit his tongue, he closes his eyes, and it’s as if time has stopped, just for a moment. 
The wheat noodles are perfectly al dente while the whipped tofu is almost ricotta-like, transforming into a silky smooth addition to the dish, cutting the tingle and heat of the Sichuan chili peppercorn-based sauce. 
The corners of his lips turn up as he takes a breath, opening his eyes as he savors the delicate layers of flavors. With a crooked smile on his face, he decides that he’ll most certainly be back next week.

You make peace with the fact that tonight is one of those nights – a slow night – as you finish washing your hands. It being a slow night, you’d encouraged your staff to up the hospitality at the pre-shift meeting. Treating guests with the utmost personal touches in an effort to build genuine connections would be the focus of tonight’s slow service. In fact, you and Mathilde, your sous chef, had been running dishes out this evening – something you rarely had the luxury to do. 
“You should go say hello,” your sous encourages, nodding towards the dining room through the expansive window of the open kitchen. 
“Thought it was your turn,” you reply in a casual tone, paying no attention to who she’s referencing.
“No, I think you should take this one,” Mathilde nudges you, causing you to look up. You shoot her a funny look, your eyes flickering over the mischievous expression she has on her face, to where she’s gestured towards. 
“To-?” you begin to ask, before seeing exactly who she’s talking about.
“Ehm. Tall, blonde, and tatted!” she emphasizes in a whisper yell. 
You don’t really need the description as you glance over at the dining room, easily spotting the man seated at a two-seater near the front window.
“You’re right. He’s become a bit of a regular,” you agree with a curt nod that means all business, no pleasure, as you move a few things as you walk and talk around the kitchen, tidying up.
“That’s not what I meant,” she scoffs with a playful eye roll. 
“You know, Jesper thought he was Swedish because… look at him… but he’s apparently a Brit,” she gossips with you, her eyes stealing a glance his way. “We’re slow tonight. He’s here every week. Sure he’d appreciate a direct thank you from the chef!” 
“I-,” you hesitate, wondering why she’s so damn insistent on this. “... yeah, alright. I’ll go.”
“That’s my girl!” Mathilde cheers, in a sing-song voice, she hands you the beautifully plated bowl of pasta to take out to the dining room.
As you walk over towards his table, you make a note that it seems as if the mystery man has made this a bit of a routine. He shows every Saturday at exactly 7 pm, week after week, for the past month or so, as if it’s a standing date he has with himself. After his first visit, you half-expected him to bring a date when he returned, or bring a group of friends, or for something different to happen. 
But it hadn’t and you’ve watched him come in, week after week, with a different book each time. He always orders the special of the day and whatever suggested wine pairing Jesper’s recommended that week.
Most Saturday nights you're busy leading a kitchen or cooking on the line – having little to no time to fixate or wonder curiously over your weekly diner – but tonight’s pace affords you the luxury to spend more time at the front of house. Truthfully, you know it’s the thing that sets you apart. Sure, the hospitality here in Copenhagen is excellent, but you bring an American hospitality-style to this restaurant – and above and beyond mentality – that feels welcoming, personal, even, as if your restaurant itself is just an extension of your home. 
You’ve heard your staff – front of house and back of house – whispering about him, all seemingly enamored and enchanted by the charming Brit. All any of you knew about him was that his name was Luca and that he’s always more than kind to your front of house staff. 
He doesn’t say much when he comes in, you’ve noticed, but every Saturday at 7 pm, he’s pushing his way through the front door with punctuality and a gentle ease.
The whisperings from your staff had all revolved around who your mysterious regular must be: whether he was Danish or Swedish, that someone that good looking must already have a partner, that he doesn’t wear a ring. 
You hadn’t paid much attention to the gossip (or at least that’s what you’ve told yourself) more focused on running dinner service then trying to piece together the story of your handsome, mysterious regular. 
“Hello,” you greet him warmly. “I just wanted to come introduce myself and say thank you for becoming one of our regulars. Your support means a lot to all of us.”
“Hi, I’m Luca.”
You share your name with a smile as he shakes your hand. 
Luca turns his attention down to the bowl you’ve put in front of him, his eyes taking in the beautiful presentation hungrily. 
“Wow, this looks… incredible,” he marvels, returning his gaze back to you. 
“Thank you. I’m sure my front of house already walked you through this but if you’d like for me to-,” you begin. 
“Yes, that’d be great, thanks,” he interjects, a crooked smile on his face that makes your heart skip a beat. 
You have to pull your attention away from him, hoping he doesn’t notice that you’re quite possibly gawking at him. 
He’s kind, charming, and he’s easy on the eyes (easy on the eyes, really being an understatement here).
“Today’s special was inspired by a childhood favorite of mine,” you begin, walking him through each component of the dish. 
Crispy Rice. Caramelized marinated trumpet mushrooms and charred broccolini. Your mom’s sauce approached with classic French techniques, courtesy of your sous, Mathilde, a classically French-trained chef. 
It’s a marriage of your story. Of the people around you. It’s your heart and theirs, put into a dish. 
“You’re the chef?” he asks, unable to hide the surprise in his voice. 
“Yes,” you answer, trying your best to get a read on him. 
He balks, and you’re unsure of how you’re supposed to respond. Was he surprised that you’re a woman? That he’s been eating your food the whole time and expected a male chef? Before you can overthink it, Luca clarifies with:
“I’m sorry. It’s just-, I can't think of the last time I saw a head chef work front of house, let alone with this much care.” 
Oh. 
You let down your guard, wondering why you’d assumed the worst when the man’s been nothing but kind to you and your staff so far. 
"We're a little short staffed tonight. And I love getting to talk to diners… especially on nights like this,” you explain, trying your best to sound like you hadn’t just assumed that he was a sexist asshole. 
He shakes his head in disbelief, looking down at the picturesque bowl, then back to you.
Luca is impressed, and he has no intention of hiding it.
He picks up his wine glass by the stem, raising it to you.
"Cheers,” he says. “And thank you. This is a really beautiful dish.”
“Of course. Enjoy,” you reply, giving him a polite smile, before heading back into the kitchen.

“Good service tonight, everybody!” Jesper, your front of house manager, announces while clapping a few times to signal to staff that it’s time for a post shift meeting. 
As you all gather in the pristine front of house space. Some of your cooks have taken their aprons off, others haven’t had a moment to unwind from the shift yet – business picking up in the last hour or so of service. 
Jesper goes through his nightly wrap-up notes, celebrating the wins of tonight, and making sure to celebrate how everyone rallied to pick up pace when business spiked. He’s gregarious, larger-than-life, the kind of person who can talk to anyone about anything, making him an excellent front of house manager, and even better sommelier. You really lucked out with the twins, you think to yourself – with Jesper and Mathilde – when they were more than eager to work with you on opening this restaurant. 
“Oh, and before we go, a client left a gift… table number four,” Jesper says, in reference to Luca’s table. He pulls a tan-colored pastry box from another table, setting it down on a table where everyone can take a look. 
“As a thank you. He requested for me to share. So have it and let’s make a note next time he’s in to really treat him like a VIP.”
One of your most-talented servers opens the box, eliciting a chorus of gasps, giggles, and excited whispers as soon as the assortment of croissants and pastries are revealed. 
You and Mathilde exchange a look as everyone else busy themselves with unpacking the pastry box. Mathilde raises an eyebrow and you’re not sure what to say. Witnessing your silent exchange, Jesper makes his way over to the both of you, before extending his arm to reveal the card he’s holding. 
“And this, my dear…” he begins, exchanging a look with his sister. “...is for you.”
“What do you-, just me?” you ask as you take it, hesitantly. 
“I think so, yeah,” he nods, confidently. 
To the Chef, the front of the card reads. 
“Jesper, let’s check out some of these pastries, yeah?” Mathilde suggests, not so subtly hinting towards her brother. 
He nods, giving you a little space so that you can read the card Luca’s left for you. 
As your staff divvy up the box of laminated pastries, sighing with joy as they taste the decadent, hand-crafted sweets, you take a few steps away to open the note. His handwriting is pristine – perfectly neat in every way, like he’s written over carefully measured invisible lines.
Chef,
Thank you for all of the great meals. I'd like to return the favor, that is, if you're open to it. 
Tomorrow. 5 pm. Dronningens Tværgade 2, 1302
While Luca’s gift has been more-than-generous, you find yourself overwhelmed by questions. Was he a chef too? And why had he not said anything? And what was this gesture all about anyways?
You read the card a few more times, turning the words over in your head as you try to make sense of it. 
Mathilde can see your overwhelm, your eyebrows knitted into one confused expression as she saunters back over to you.
“What does it say?” she asks, curiously. “A love confession perhaps?”
“Mathilde, you really have to stop reading all of those French romance novels!” you tease her. “It’s giving you too many ideas.”
“It’s the only way I keep up with my French!” she defends herself with a lackadaisical shrug, earning a laugh from you.
“Uh no… it’s actually a thank you card… only I think he… wants to feed me,” you share with her, holding the card out so that she can take a look. 
“He’s a chef too?” she asks, taking the card from your hands. 
“I think so, yeah,” you reply, letting out an exasperated laugh. 
“Oh shit!” Mathilde exclaims, as soon as she sees the address that Luca’s written down. 
“What?” you ask her, wondering if there’s something you missed. 
“The address… that’s AOC. I think he’s a chef at AOC, babe,” she gasps, shaking her head as she hands the card back to you, sending a ‘you lucky, bitch’ look your way.
Oh shit, is right.

you hated carmen berzatto, to say the least
you had been each others first s/o and spent a lot of the end of your teenage years attached at the hip
every berzatto family function (no matter how messy they always ended), every school dance, every hell's kitchen rerun--you and carmy were together
mikey liked to call you guys soulmates, watching how you and carmy just seemed to click like that- a statement that never failed to make carmy go flush in the face (que richie faking barfing in the background)
you were one of the first people that carmen told about his wishes for the future-how he wanted to take up the restaurant with his brother and continue the berzatto tradition
you loved the way his eyes lit up when he talked about cooking with his family-the way he gave his all into his aspirations
"well you gotta make sure i'm the first one to eat those fancy sounding dishes when you start working at the beef, carm"
"absolutely, babe. i wouldn't have it any other way"
however, like everyone after high school, you and carmy hit a rough patch that sunk your relationship -- you were planning to go to college for business administration and carmy was leaving chicago to go to culinary school
you two definitely attempted everything in your power to stay together-late night skype calls, daily texts, hell you even offered to fly to new york to spend time together
but the more swamped you got with school and the more carmen got slammed with cooking (especially right before he went of to Noma), the more the truth begun to show itself
the breakup was messy, because it was less a breakup and more of ...
you: what are we doing right now? like, as a couple?
carmen: i think that i need to focus more on my career right now
you: oh, so..are we breaking up right now? (read 9:57PM)
you: carmen? (read 10:15)
you: ok, asshole, be that way (delivered)
that's right, that motherfucker ghosted you
despite the tumultuous ending of you and carmen's relationship, you were still close to sugar and mikey (and, unfortunately for you, richie)
sugar was adamant on flying over to copenhagen and have a "conversation" with her brother herself + mikey and richie were not too far behind on the cause
"it's fine guys. let's just all agree that carmen is a soft little bitch" you said, trying to lighten the mood even though you knew that you were still racking thru the pain being broken up with so suddenly
you deal with the breakup harshly at first, but you put a lot of that emotion towards your own growth
fast forward a couple years, you graduated college and are on the up-and-up in chicago as a successful business marketing manager
you get closer to the berzattos, strangely, as carmy gets more distant
you don't think of carmy much anymore but it grows harder as he wins awards and recognitions in his field that honestly make you..proud, in strange way
then, mikey dies...and a lot of things change for you
you help sugar and richie plan the funeral, and something sour sinks into your stomach when you don't see that familiar head of dirty blonde hair during the service
some months pass and you try to gather yourself and get back to normal after mikey's passing
richie invites you down to the beef one day to "catch up" randomly
you go, if not to just see tina and the rest of the crew but are met with great surprise when you see him
carmen motherfucking berzatto, in the flesh, standing behind the bar yelling to richie about something nonsensical
he stops yelling when he hears the door open and literally freezes in place when he sees you
you stare at him for a second, taking in the man who once had your heart, noting the new tattoos and the new way he styled his hair and he seems to be doing the same
then, richie breaks the silence--"oh my goodness, what are you doing here, sweetheart?"
you and carmy speak at the same time
"richie, you motherfucker"
"richie, you dick"

Picture this: Carmy taking extra weeks off when Willow is born compared to when Teddy was born (I get the feeling he off for like, ten days and he was CRAWLING UP THE WALLS with the need to be back in the kitchen controlling things) to avoid that shitty dad feeling. Especially because the two of you have to look after Teddy AND new baby Willow. And he's realized you and the kids are more important than the restaurant 100% ❤️
with teddy he took a week and a half off (was supposed to be two but he ended up going back in early bc he’s a control freak). and really, it wasn’t much of a break. the first few days, yes, then he’s calling or people were calling him.
“i just gotta take this for a second.” and it would be a two hour ordeal of him trying to call, order, then call sydney or sugar or richie.
then he starts going in, just for a second. getting things from the office that he left. he was never gone long, he knew better and they’d practically kick him out of the kitchen, but he could not stay away. needed to see with his own eyes that everything was good, worried constantly that it wasn’t and it was falling down around him.
truthfully, by the time he went back, you were glad he was gone bc he was stressing you out. I don’t think he did a full dinner service until two weeks and even then, he only stayed for a little bit. just to greet who he needed to if there was a kitchen tour, or talk to critics, do a few things and he was home honestly before it was closed. very much so a control freak who wore himself so thin, thus causing the absolute break that he had in the devastation fics.
so when willow comes around, he’s much more relaxed. maybe not all the way, but he trusts that richie and sydney and everyone can run it without him. he has more trust, less need for control, and genuinely is kinda excited in a way to be away from the restaurant.
i think he’d take two weeks fully no contact (unless it was an emergency) but then after that he’d come in once a week just to do office things, just when they needed him, would bring teddy to get her out of the house and let you and willow sleep. kinda handle two things situation. it’s more of a gradual thing. he lets sydney honestly call whatever the schedule is based around her.
i mentioned in a baby making blurb (which i think I’m going to turn into a full smut fic lol) that he wanted to plan this time. didn’t want to be careless, wanted to plan the pregnancy so it wasn’t rushed like teddy’s was. and he did just that.
he made sure to plan his schedule so he wouldn’t get overworked or burnt out like last time. he really thought of ways that he could be home, be with you and the girls, but not abandon everyone at work. hired some extra chefs he trusted that he knew from noma or somewhere, just people he trusted, and found a way to makeup for the slack so there would be no more pressure.
does his office things at home (ordering, scheduling, pay roll) during willow and teddy’s nap time. usually had baby willow with him in his office bc she’s chill. he likes to see her, she’s quiet and sleeps better with company, and it lets you be able to sleep without worrying about getting up bc he’s got it. especially if he’s going to be working dinner shift that night and he knows you’ll have to be up.
if he and sydney are meeting up for menu concept brainstorming or tastings or something, he’ll bring teddy, sometimes you and willow along too. it gets you out of the house, if you want to, you get to socialize, taste food, and he can get stuff done. they both like your opinions, so it’s kinda a win.
just things he didn’t do before. before with teddy, carmen was dead set on keeping them separate. in his mind, those worlds couldn’t collide. he couldn’t bring work home bc he thought you’d be upset, and he couldn’t bring you there into the chaos with a baby, so he just overwhelmed himself and exhausted himself trying to make it work.
with willow (carm’s also been to therapy lol), he learned a balance. that they can overlap, to try and ask others instead of guessing and making assumptions, really just how to balance better.

Ancestors and The Bear
Phew, the discourse in season 3 of The Bear on legacy was STUNNING to me. This post by @gingergofastboatsmojito and episodes 3x01 Tomorrow and 3x07 Legacy have been sitting on my heart since I finished my binge of the show. Some thoughts under the cut. (I say "some" but this is another long ass post, soz).
If seasons 1 and 2 of The Bear went into the impact of our birth families on each of us, season 3 shifted pretty squarely to talking about the impact of our professional mentors on our lives. I've described those mentors as culinary ancestors, which as a concept I get into below. I loved this aspect of this season and the show generally. It is so rich and I feel like I'm only going to scratch the surface of it here. Keen to hear others' thoughts on this too.
Legacy and Ancestry
In 3x07 Legacy, Carmy talks to Marcus about the idea of legacy in the context of chefs he had worked with - how those chefs had talked to him about how their work would carry on through iterations and generations of subsequent chefs and restaurants that came after them. I'll include both a transcript and screenshots of this conversation below:
Carmy: Like, um, something would start somewhere, and then, uh, people would take that thing and then they would take it somewhere else. So, all these parts of an original restaurant, they would end up at a new restaurant and that kind of thing. That would happen over and over again. And then all these parts of all these restaurants, they would sort of-- You know, they would find each other. And then new people would take those parts and they would put 'em into their restaurant. And the whole thing, it would, um-- It would start to happen all over again.
Marcus: So, like a family tree or something?
Carmy: [looks to Syd who has her back to him, closing her locker] Yeah. Yeah, exactly.

Most folks understand ancestry to refer to our family or genetic lineage. When I was in university, I learned about intellectual ancestors or genealogy: where one can trace your intellectual lineage - the thinkers and creators that have shaped your understanding of the world and/or your chosen profession. I think its useful to take this concept and apply it to The Bear to help understand what the show is saying about legacy. I wouldn't limit the concept to "intellectual" ancestry though. It might be more helpful to talk about culinary ancestors in this context because the process of creating food - crafting dishes - isn't solely an intellectual exercise. It engages our intellect yes, but also each of our senses, our memories (recall that chocolate banana from 2x10 The Bear), and the need to nurture and be nurtured.
Culinary Ancestors
Carmy's culinary ancestors are varied given his work history. We know he's cooked under some of the best chefs in the culinary world of The Bear, including: Daniel Boulud (of Daniel), René Redzepi (of NOMA), Thomas Keller (of The French Laundry), David Field (a sociopathic Joel McHale, of Eleven Madison Park), and Andrea Terry (a sublime Olivia Colman, of Ever). I'd also include here Mikey, Donna and Natalie Berzatto. I'd include cousins Richie Jeremovich and Michelle Berzatto as well. These are the home and line cooks Carm grew up with, watched in his mother's kitchen and at The Beef. He took his lessons - the good and the bad, learnt voluntarily and involuntarily - from all of these people, incorporated them into his working self and transmuted them into his food.
In particular, I've talked here about Chef Terry and the valuable lesson of "every second counts" that she carried with her as she mentored waves of chefs through her restaurant, Ever. That post also talks about the parallels between Terry and Syd (which were even more evident in season 3), the latter of whom I'd argue is also one of Carmy's culinary ancestors ("you make me better at this").
I wish we had more information about Sydney and her influences. We know that prior to The Beef, she worked at restaurants Smoque BBQ, Alinea and Avec. We meet at least one of her mentors, Chicago restauranteur Donnie Madia in 2x03 Sundae and 2x10 The Bear, as well as Nayia at the fictional Verdana French Bistro (which ends up closing by 2x09 Omelette). They each offer up small insights into Sydney: that her food is amazing and that she is always "trying to be the best." Carmy is also undoubtedly one of Sydney's culinary ancestors, as infuriating and withholding as he can be. I'm also certain that Sydney's parents and the cultural history/ies that she's inherited through them are part of her culinary lineage as well. I really, really hope that we get much more insight into this side of her next season.
Respect, mentorship and lineage
One of the things that first drew me to The Bear was the respect that the show gave its characters of colour. In particular, the opportunity and support given to people of colour from a working class operation like The Beef to continue into the fine dining world of The Bear. I've spoken a bit about this here.
I haven't seen a dynamic on television before, where folks from the backgrounds like the POC characters in The Bear are from, are backed in the way they are on the show. Where there are mentors who will invest in them to train them up, and who will take those folks with them as they move into more elite and skilled spaces. Hell, I have barely seen this happen in the roughly two decades that I've been in wage-earning employment myself. Lets be clear, capitalism does not incentivise this kind of shit. Its why certain industries, including the world of fine dining, remain largely if not completely exclusive, demarcated by gender, race and class.
Yes this season was fucked in terms of which characters were getting prioritised for screen time over key Black characters like Sydney and Marcus (the Faks can genuinely go fuck). The lack of care given to Marcus, in particular, whose mother's passing was treated almost perfunctorily in comparison to a wholly unnecessary conversation amongst the entire crew about Cl@ire in 3x02 Next (quoting Richie: "who cares?!"), was also fucked. I would have preferred to have spent more time with Syd, Marcus, Tina, Ebraheim, Sweeps, Manny and Angel than listening to Neil, Ted and fucking Sammy (?!) Fak blather their way through precious minutes during this show.
But even with the above, The Bear regularly manages to floor me with beautiful moments of mentorship, leadership and love featuring characters of colour on the show. This is particularly the case in the relationships between culinary ancestors Carm and Sydney with "descendants" Marcus and Tina.
Birth of the The Bear lineage
Recall 1x08 Braciole where Sydney tells Marcus that after she finished culinary school, she spent all her money eating her way through New York. She says that she had the best meal she's ever eaten while she was there. With Marcus' gentle prodding, we find out that the person who created that meal, was Carmy.
Its not until the first episode of season 3 when we see how this actually played out, for both Carmy and Syd. I won't rehash the details of this scene because it is truly beautiful filmmaking to behold. Please if you haven't already, go watch 3x01 in its entirety. Have tissues nearby.
I will say, that in the best meal Syd ever had, Carmy literally served up his heart and lifeblood (check the cut of the fish, the crimson of the blood orange decoction).

That meal - that seed of inspiration from Carmy - birthed something in Sydney, something that would push her to find Carmy much later, working at his brother's sandwich shop.

Together these two incredibly talented chefs started their own lineage, taking what they knew and investing it into The Beef and eventually, The Bear:

This is why the visuals in 3x01 Tomorrow, with Syd sitting in quiet contemplation of Carm's dish, are so poignant. From 1x01 System, Carm and Syd have been growing their branch of their shared culinary family tree, nurturing it alongside those of their respective ancestors:

In 3x01 Tomorrow, we see that tree literally emerging from the moment Sydney meets Carm, on a plate.
It all starts when Sydney leaves culinary school and decides to make the most of her time in New York, eating at every place she could think of including, at Eleven Madison Park. And when Carmen, after losing Mikey, decides to make a few seconds count, taking ownership of a dish that he knows is going to be stolen from him and bastardized otherwise. The rest is history, or legacy.

Ramy Youssef directing 2x04 Honeydew under the guidance of Storer who had previously directed him on and produced Ramy. The fucking force of nature that is veteran Liza Colón Zayas being directed by Ayo. Jeremy describing the filming of 2x06 Fishes as akin to watching masters at work. Of course any television production is a collaborative effort and there are countless names I'm not familiar with who have put their precious time and energy into making this beautiful thing. I just thought it worth mentioning that at times, this show glimmers with truths, and I think thats because, in some way, they're in the marrow of the thing.

Moments on Film: Carmy and Sydney’s Michelin Star Talk

This is another one of my favorite scenes between Carmen and Sydney. It’s in S2E2, and they are at his apartment, working on the new menu.
Sydney asks Carmy about the moment he got the 3 Michelin stars call when was the CDC at the restaurant in New York, the highest honor for any restaurant in the world.
What struck me about this scene, apart from the playful banter into this moment, was how Carmy immediately gushes out his answer after Sydney asks him this question. She’s genuinely interested and, literally, a little star struck, and he in turn seems like he’s so unburdened to finally be able to talk to someone about this major moment in his life.
We know that when Carmy was the CDC at Eleven Madison Park, he was horribly abused on a daily basis by his boss, the Executive Chef. Carmy had the completely arduous task of leading the kitchen while under extreme duress, and to such a degree that he was able to retain the highest honor in his industry. The stress of it all we know, made him physically sick, everyday. We also know at this time, Michael wasn’t speaking to him, and it’s unlikely his family understood what he was going through in this moment. He was going through monumental highs and lows, without any support, and completely alone.
He probably has never had the chance to process it or think about it, let alone talk about it.
When Carmy comes home for Christmas in the flashback of S2E6, we see almost everyone, and especially his mom, give him guff and make fun of him for being a “big time chef….too fancy for us.” Carmy was in Copenhagen at the time and not in New York yet, but he’s going through exciting, transformative, life changing moments which no one in his family bothers to ask about or talk to him about. It must have been incredibly painful to not only not be able to share and talk about it, but to be made fun of for it, instead of being told, “good job”, which, as he shares in S1E8, was one thing he wanted to hear from his brother, so badly.
Sydney asks him about his experience because she genuinely wants to listen to him speak about this moment. She doesn’t just ask what it was like, she asks him, “how did it feel?” He immediately pours out his answer in such a way that made me think, my gosh, probably no one has ever asked him about it before. It’s terribly sad that until now no one has cared enough to show interest, and it must have made him feel so lonely to not be able to express himself or what this moment meant to him.
Now Sydney is here though, and she allows him the space in this moment to be vulnerable and heard. His answer perhaps isn’t what she thought it would be, but it’s honest.
Sydney understands the high level of the restaurants where Carmy has worked and what he has achieved professionally, and she admires him for it. She also understands on a much deeper level because he unknowingly fed her while he was the CDC in New York and she was his guest. Sydney’s eaten Carmy’s 3 Michelin star award winning food, and it was the best meal she’s ever had. He just doesn’t know it yet.
In S1E2, when the staff is cleaning the kitchen and Carmy mentions Noma, Marcus says “Noma’s the shit, huh?” Both Carmy and Sydney say “the best”, at the exact same time.
In terms of being understood, this contrasts starkly with Carmy’s conversation with Claire in another kitchen—the kitchen of the party house in S2E5. She mentions he was in France, he gently corrects her and says Copenhagen. She says, “go to Noma?”, he says, “worked at Noma.” Claire says, “I heard it’s alright” and he responds with “it’s pretty good”. This exchange stuck out to me when I first heard it. Is she sarcastically joking about Noma being just “alright”, or does she not know about its exceptional reputation? Either way she doesn’t ask Carmy any questions about it and then changes the subject.
After Carmy tells Sydney about his Michelin star call and the moment that immediately followed when he had to prepare to serve the U.N. Security Council, his face holds onto the memory of the moment and you can see it felt so good for him to express himself and talk about it. He probably hasn’t thought about it in a long time. He looks reflective and dare I say, proud. He then looks at Sydney, and they smile at each other. It’s quick, but he looks so grateful to her for allowing him to talk about this moment and also that she really, truly listened.
It’s these sweet little moments between the two of them that really make an impact because in these moments, they allow each other to share experiences that only a few people in the world would actually understand. Just like their sign language, the way they understand each other creates a form of communication and expression that is just between them.
I don’t think she realizes it, but Sydney asking Carmy this question, and by genuinely listening to and caring about his answer, she fed and nourished a part of him that had been starved for so long, just like he fed her.

slow dance - carmen berzatto

carmen never thought he’d end up here. at a ballet, dressed in a suit, and not cooking in europe. he especially never imagined that he’d actually enjoy the performance. he’d thank her for that when he remembers to. he’ll think of her late at night, when he has nothing to think of but the rocking and swaying of the boat he lives on. thinking about her slow dancing up on stage. 
later in the evening, he’ll be at a bar with whomever he went to the ballet with (he was so mesmerized by her he doesn’t even remember - he thinks it was luca) and suddenly he hears applause coming from the door, and turning around, he sees her again. carmen never believed in love at first sight, and always thought people were lying when they said that when you see the person you love that everything stops around them - they’ll be the only thing that you will see. but now, he knows he was so incredibly wrong. he turns back around towards the bar, until -
“hi,” he turned to look in the direction of where he heard her voice.  
“hey,” he’s trying to be as nonchalant as possible, it’s not working. 
“were you at the performance, i think i saw you in the audience.” 
“um- yeah i was, you were great, by the way.” his heart was beating so fast he was almost certain she could hear it, the way it was so close to bursting out of his chest and onto the bar. 
“thank you, i really appreciate that.” the silence afterwards was comfortable, unlike any silence he’d ever been in before, and ever since. now, he was really working up the courage to ask her if she wanted to get out of here. and go where? he wasn’t sure yet, but he knew he didn’t want this to be the last time he saw her. 
“do you wanna get out of here?” he was shocked at the boldness at which those words were spoken, but not at his boldness, hers. 
“yeah, that’d be nice,” he took a couple bills out of his wallet, finished his drink, and stood up to leave with her. 
“where do you want to go, then?” she looked up towards him. 
“i dunno, where do you want to go?” 
“do you wanna go dancing?”
“with you? you’ll laugh at me, you’re a professional and i have two left feet.” she smiled at his remark and he realized that he wanted the one to make her smile, always. the two walked out of the bar into the chilly winter air, saying -  
“i won’t laugh at you, i promise,” she leaned against his arm, sealing her promise to him. “it’s not like it’ll be ballet, just dancing at a club.” 
“i dunno… you’ll be dancing with me the whole time?” he looked back down at her.
“if you want me to.” she looked up at him. 
a breeze rustled through the trees, both suddenly realizing how cold copenhagen got in the winter. 
“so, what do you do?” she asked, snuggling into his arm again, holding onto his bicep like it was a lifeline. 
“i’m a chef, up at uh- noma.” she stopped walking. 
“at noma? isn’t that like, the best restaurant in the world?” 
“i guess so.”
“you guess so?!” she smiled at him. “never told me you were a master at your craft.” he shrugged.
“takes one to know one, i guess.” he whispered in her ear, wrapping his arm around her shoulders, keeping her close to him. 
opening the door for her,  they walk into the club together, immediately being enveloped by the warmth that the people inside were radiating. 
“you ready?” she asked. god, he could get used to the sound of her voice in his ear. 
“are you? might step on your feet a couple times.” she giggled at that, and he smiled too. 
after being there for awhile, the DJ at the club finally played a slower song to dance to. and gently, she pulled carmen closer to her, and leaned up against him. he wrapped his arms around her, holding her closer than he could’ve imagined.

You meet Carmen in Copenhagen through a mutual friend and bond over shared experiences. After following his rising career from afar, you reconnect in Chicago when he renovates his late brother's restaurant. As an editor, you can't miss an opportunity to find out more about the comeback of this chef prodigy.

THE WORST DAY
The first time you meet Carmen, you are both a little over twenty and in Copenhagen. He is staging at Noma, and you are interning at a design studio where everyone is very “green.” From one of your conversations with Carmen, you learn that Pop-Tarts and Cheetos are illegal here. In Europe. Most of the sodas that stained your tongue crazy colors when you were a kid are banned too. He lectures you on Scandinavian agriculture and food production.
Carmen is skinny and short—still a bit taller than you, though—with sharp, high cheekbones and bulging eyes. You don't know enough about each other to be “friends,” but he is a good companion. Your high school friend Becky knows Carmen’s older sister; that’s how you found each other in Denmark’s capital.
On two rare occasions, you get drunk together, and that happens only when he is stressed from work. Like, stressed STRESSED. You'd think he only drinks special natural wine from Lofoten or something, but his choice of poison is canned Budweiser. Maybe he misses home as much as you do. Maybe that’s what leads you to almost kiss him the second time. Carmen lives on a boat, and he takes you there, where you drink vodka mixed with herbs and licorice that Carmen concocts, his tongue peeking out between his lips as he concentrates. The drink tastes good. Weird. You don't hide your grimace. Neither of you comments on the alcohol ratio. It's more vodka than anything else, that's for sure.
Carmen is not your type, physically or character-wise—you are an introvert yourself, so you need someone to bring you out of your shell. Obviously, doing an internship on a different continent is a huge step, one that is only on you. He also smokes a lot and probably doesn't wash his hair. You've heard about his crazy mother and bonkers family from Becky, so you understand why Carmen is Carmen. Why he’s run off to Europe. It's just—his face—his eyes, when he's telling you about his dream job at Noma or Alchemist—they glow, and he becomes so animated, the quiet excitement seeping to the surface, and there's fondness blooming in your chest. He also knows a thing or two about sports, as you do, the subject bringing you back to Chicago, and the longing for “home” and “familiar” is terribly strong in the moment, enhanced by the alcohol. And Carmen, the boy sitting opposite you, with burns on his hands and ripped jeans, is both of those things put into one.
Nothing happens between you two, but the urge to press your own lips against his lingers after you leave in a taxi, not brave enough to ride a bike under the influence.
You try to stay in touch after Copenhagen, messaging Carmen on his empty Facebook profile, sending a text once in a while, mainly at Christmas, and when you have some terrible junk food, just to make fun of him. When he FaceTimes you, he’s in Paris, and you’re in Dublin. The next time, he’s in California.
He rarely ever answers messages on the phone. Usually, it's an emoji, sometimes a word or two. Soon, there are no answers, and you can't be bothered. You carry on with your life in Chicago, and it doesn’t take long before you start seeing Carmen Berzatto in the paper, on the internet. The young prodigy chef, everyone says. Reluctantly, you read the articles, thinking about the Copenhagen Carmen, smiling at his photos. He's grown up, filled out. His hair is curlier, his shoulders wider, his biceps stronger. He looks good. Good and sad, you think to yourself, and decide not to text him to congratulate him on his star career. Carmen is not one to care about what you think of it.
It's only when you hear from Becky that Mikey Berzatto has died, that you think of Carmen properly, after years full of work in the magazine office, one shitty almost-boyfriend, and summers spent in Europe, writing about sustainable travel and solo adventures. Becky says that he's inherited a restaurant from Michael. You decide against sending him condolences—too personal.
But about ten months later, there's whispering that a fancy restaurant, The Bear, is replacing The Beef of Chicagoland, and it's actually your boss who tells you that you should go check the place out.
You are not into that whole haute cuisine thing, to be honest. You never understood those tiny little portions and strange ingredients and their combinations. You prefer good pasta with Bolognese sauce or roasted chicken with mashed potatoes. Sometimes you wonder if Carmen's strange relationship with his family is what's keeping him away from his Italian roots and forcing him to work in pristine, starched whites in sterile kitchens, cooking intestines and antlers, making it art.

Becky gives you Natalie Berzatto’s phone number to get in touch with her to try to schedule an interview for the magazine feature. Your boss, Rob, hopes that Carmen could even make it to the cover soon when The Bear takes off. You’re not sure how you feel about bypassing Carmen completely and going straight to his sister.
So one Thursday, in early May, you decide to walk there, unannounced. You corner the building, passing a big glass window, and before you make it to the main entrance, you nearly collide with a very wonky wooden stepladder. With Carmen Berzatto on top of it, fiddling with a screwdriver or a similar tool, and a signboard.
The second you make contact with the ancient stepladder, Carmen shouts, "Fuck!"
“Sorry,” you yelp, and one glance at the man high up confirms that you are indeed dealing with the Chef himself.
“Could you watch out?” he says angrily as he makes his way down, measuring every step carefully.
“I’m sorry,” you apologize again, waiting anxiously for Carmen to—hopefully—recognize you. To anyone walking by, you must look like an idiot, standing still in the middle of the sidewalk, waiting motionless and stiff for a guy to climb down a ladder.
You don’t know what you had been expecting but definitely not Carmen staring at you with his huge, bloodshot eyes for seconds that feel like minutes. You nearly turn around and walk away, no joke.
He looks—
“You look—” you start. Terrible. But also, like, gorgeous. Terribly tired but hot. Is it awful of you to think that?
“Hi,” Carmen says, one hand going into the big mess of his hair, the other one into his pants pocket. He's avoiding your eyes, which makes you even more nervous, makes you think it was not such a great idea to come here.
“Hi!” you say, probably overly enthusiastically. “You're back in Chicago,” is the first thing you can think of.
He nods. “Yeah, yeah.”
“Well, congrats on the new place,” you say, gesturing to the building behind him, newspaper covering the windows. “I'm really sorry, I thought it was already open,” you explain, tugging on the hem of your lilac sweatshirt nervously. Can he tell you’re lying? “Becky mentioned something about it.”
“No, we’re opening next week,” Carmen says, holding a cigarette between his fingers.
“I'm really curious,” you smile carefully, testing the waters, wondering how he's going to react. You haven't seen each other in more than five years, and Carmen's never been exactly friendly. Not like mean, but definitely not easily approachable. “I work for this magazine, and we would love to do a feature on this,” you say, leaving out that it's you who would be writing it. Who wants to write it. Not only about the place but about Carmen, the enigma, the quiet boy, the excellent chef.
He only nods, clearly not sharing your enthusiasm. “Maybe later,” he taps the cigarette against the palm of his other hand. “When we're ready for this kind of thing.”
“Of course,” you agree quickly.
“Might be a while.”
“So what is the big plan?”
Carmen looks at you, measuring you. Like he thinks you have some ulterior motive. He lights up the cigarette, taking a long drag from it, and you fight not to scrunch your nose in disgust. The older you get, the more you hate the smell. Especially when someone is blowing out the smoke aimlessly—almost—in your face.
“My partner—Sydney, she’s hung up on the stars. So I guess a fine dining kinda place,” Carmen says, flicking the cigarette butt in the general direction of the gutter. The second sentence comes out more like a question than a statement, but you are still processing the first one.
“You run a business with your girlfriend?” you swear you don’t mean it to sound so accusing.
Carmen takes a step back, physically—bumping into the stepladder behind him—and mentally, too. “No! She—Sydney’s my business partner.” The defensive tone tells you exactly how your words sounded though. You wince. “We’ve been working on the new concept together with Nat, and the whole crew, actually. It’s—it’s a family business, I guess—uhm. We had only like three months to finish, and—”
You can see he’s really flustered. He’s starting to stutter, hand nervously scratching his neck. You hate the sight, hate that you’ve made him feel like this.
“I’m sorry!” you interrupt him. “It came out all wrong. I shouldn’t have said that,” you say urgently, hoping to see him relax back to his non-caring, nonchalant, tired-looking self. How could you mess up so quickly? Is that your special ability or a curse?
“‘s fine,” Carmen says, and he does relax a bit, shoulders dropping an inch. He doesn’t look friendly though. Or in the mood for a chat. “I just—she’s a business partner,” he repeats obstinately, face red.
The moment grows awkward. In your coat pocket, you touch a pack of chewing gum and start fiddling with it. “I—my office is nearby so I thought I could come around and see the progress,” you say into the void, trying not to cringe too much. “Maybe I would take a few colleagues for dinner.”
“The reservations aren't open yet,” Carmen says in a flat voice. You can’t call him out because it’s probably true anyway. Plus, you just lied again—the offices are not close; you had taken the L—and you feel bad about it.
There’s not much left to say, you realize. He’s not giving you any space to turn this “accidental” meeting into a proper conversation. You shuffle your feet nervously, feeling stupid.
“Alright. It was nice seeing you!” you say, as it’s about time to end this. “Hope everything’s gonna work out great!” you add in a cheerful tone, already setting to walk back to the station.
“Yeah. Thanks. Bye.” Carmen says back, lighting a second cigarette.
What a nightmare, you think as you walk through the busy streets.
In the following weeks, you almost forget about The Bear. Rob complains about the nonexistent article on the new, already hyped-up restaurant and wasted opportunities, but what can you do? The not-at-all-accidental meeting with Carmen had been a disaster you actively try to erase from your mind. Working on your regular column and material for the website keeps you busy. Then Becky calls out of nowhere, and you two arrange lunch at The Marq. You end up swapping hilarious stories from the last two months you hadn’t seen each other, and you secretly pray she doesn’t ask about Natalie Berzatto or her brother. You're out of luck, because she does—of course she does—and you have to lay the cards on the table.
“You did contact Nat first though?” is the first thing Becky asks.
“I didn’t,” you shake your head. “I didn’t want to exclude Carmen right at the very beginning,” you admit.
“Oh god,” Becky rolls her eyes at you, taking a small bite of her salmon cake sandwich.
“I knooow,” you quickly stop her, feeling like ordering something stronger than the simple soda you’ve been drinking.
“I think you should still call Natalie,” Becky says, pointing at you with a determined frown. “I went to see her and her new baby just last week. She asked about you.”
“Really?”
“Yeah,” she nods. “Apparently they could really use some help getting the word out about The Bear. A good excuse to talk Carmen into an interview maybe? An exclusive one?” She wiggles her eyebrows, knowing how cool it would be for you to come up with this.
“Maybe,” you muse, playing it cool. Inside, you are already hyped up about the possibility of scoring the first interview with the former best chef in the world. Is he still good at all? Why did he disappear? Why is he back?
The anxiety of the following days forces you to actually text Natalie. You’ve been checking online websites and Instagram accounts apprehensively, worried that a medium might publish something about The Bear before you get a chance. Rob isn’t a dick, but you wouldn’t want to look incompetent in his eyes. So far, you’ve been able to steer away from conversations about the new Carmen Berzatto restaurant at work. Your work ethic makes it difficult for you to let The Bear go without a fight.
That’s how you find yourself in front of Natalie’s door. When she opens it, she doesn’t hide her fervor.
“Oh, finally! Hi! Please come in.” She ushers you inside. You’ve never seen her in person, only on Becky’s Instagram, maybe, and even though the exhaustion is apparent on the woman’s face, you can spot the similarities with Carmen in her features right away.
From the dark hallway, she leads you to the sitting room. When you look around, it’s hard to find a clutter-free space. Every surface is covered with baby clothes, baby diapers, baby wipes—clean and dirty—bottles—full and empty.
“Sorry for the mess,” Natalie appears next to you, snatching away a baby muslin from the sofa. “Have a seat, please,” she nods. “The baby’s asleep. Hopefully for the next—” and she checks her watch, “another twenty minutes.”
As you sit down, Natalie collapses into an armchair, not minding what appears to be a pile of freshly washed newborn onesies and other clothes underneath her.
“Thank you so much for stopping by,” she says sincerely, and you notice the many stains on her purple t-shirt.
You smile. “No problem.”
“Becky said that you know stuff about Instagram and social media and marketing and all that?” Natalie’s eyes are wide and hopeful.
“I would say so,” you nod.
“I’m not sure what Becky mentioned already,” Natalie says as she starts pulling the baby clothes from under her and folding them absentmindedly. That definitely says something about the state she’s in, without Becky describing the situation to you—not only with The Bear but also Nat herself. “Carmy’s putting so much into the restaurant—we all are—so much hope,” she babbles, “none of us have slept properly in weeks—months! And now the baby...” Natalie’s gaze becomes unfocused for a moment before she blinks rapidly. “The timing’s not so great,” she forces out a weak laugh, and you smile again, already feeling bad for her, not wanting to make her uncomfortable.
“I understand. It’s hard,” you empathize, feeling genuinely bad—not for The Bear—but for Natalie.
“I’m not a marketing guru, but I can research things,” she carries on, more confident now. “But I can’t be there all the time, y’know? It’s just not possible. If—if someone could help with keeping the place afloat and spreading the word—” she stops talking and folding, looking directly at you. “That would be just so awesome,” she finishes quietly, her bottom lip wobbling.
You know that Nat’s not trying to emotionally blackmail you, even though the situation kinda feels like it, and you do feel for her.
“I can help, yes.”
“I’ll talk to Carm and Sydney, and we’ll figure out how much we can offer you!” The relief and excitement are apparent in the way Nat jumps up from the armchair.
“That’s alright, really,” you say calmly, putting a hand on her arm now that she’s closer. “We can discuss this later,” and you give her another encouraging smile.
The unmistakable sound of a baby crying comes from somewhere in the house. Poor Natalie freezes, her hand going to touch her chest. She takes a deep, steadying breath.
“Thank you. Thank you,” and she takes a hold of your hand, squeezing it. “I’ll tell Sydney to get in touch with you—or you can actually just go to the restaurant; they know about you.”
That makes you slightly uncertain as you remember your first attempt at an unannounced visit to The Bear.
“Alright,” you nod with a polite smile. After all, you’re getting something out of this too.
Sydney texts you exactly 22 minutes after you leave worn-out Natalie and her baby behind and invites you to come to The Bear the next day. To make yourself appear more untouchable, you reply that the soonest you’re available is next Monday. Make them wait.
It gets you on edge, though, and more than once you think of Carmen in his tiny Copenhagen kitchen, how things used to be. How easy it is to grow apart. Not that you’d been friends exactly. Hard to be anything like that with a person as closed off as Carmen Berzatto.
On the agreed Monday, you dare to finish early at work and take the train to The Bear. Your stomach is in knots, even though you’ve been pretty brave about the whole thing. It’s just—you’re not sure how Carmen’s gonna react when he sees you, and you’re already thinking about the worst possible scenarios. Just stop! you tell yourself resolutely, forcing yourself to concentrate on the simple but well-thought-out marketing plan you prepared to present. Without being asked. If Carmen sees that you actually KNOW things, he might change his opinion about you. Not that you KNOW his opinion, but—maybe he would actually acknowledge you finally.
It’s just after the family meal when you arrive. A tall man who introduces himself as Richie lets you in instantly, and he’s clearly been informed about your arrivall. As soon as Sydney is notified of your presence, she rushes to you from the kitchen in the back, wiping her hands on her apron. You notice right away that she’s friendly and calm, and it relaxes your nerves. There’s no doubt she loves the restaurant and her job, and you see that she worries as much as Natalie does, or even more.
“We’re opening in two hours, so it’s a bit wild in the back, but maybe you wanna see the kitchen?” Sydney offers as she’s showing you around the newly restored restaurant, opening the heavy door. “A quick peek,” she adds as a loud cracking noise comes out of the exact door.
You’ve been to a couple of kitchens, and you must say that this one’s definitely on the chaotic side of the scale. People in white aprons run here and there, no one’s still, not even for a second. There’s a good amount of shouting and a huge amount of swearing. In the middle of everything, there’s Chef Carmen Berzatto. He looks like a character from Cartoon Network. His wild hair is sticking out in all directions, dark tattoos covering his arms and hands, face sweaty, eyes ready to pop out of his head. He’s shorter than most people you see circling the kitchen, but the loudest one. He shouts orders, and you notice the vein on the side of his neck—it sure is ready to burst. You wonder how far he is from having a heart attack.
“Or maybe next time,” Sydney mutters, gently pushing you out of the way and shutting the door again. She leads you to one of the brown wooden tables where you settle again.
“Is he always like that?” you ask Sydney, actually glad that you’re not in the room where the storm’s currently happening.
“Only when he’s stressed,” Sydney explains shortly, an apologetic smile on her lips.
When it comes to money, it’s obvious The Bear doesn’t have much to spare, that much is clear. Sydney is extremely apologetic and sweet about it.
“There’s a marketing budget—previously non-existent—that we’ve set aside and can offer. It’s just not much, I’m afraid,” she tells you, jittery.
You want to reassure her, to tell her that you're doing it for Carmen, for an old "friend." But from what you've gathered, Sydney doesn't even know that Carmen knows you.
So you just smile and reassure her anyway. "I'll put it on my resume. I can use more cases with social media for hospitality," you lie.
Nodding, Sydney clarifies, "Yes, just Instagram. Please. Carmy doesn't want to put anything in the press. Yet."
When a curious Richie joins you at the table, you present the Instagram plan to both of them. Even though Richie can't help making a few rather stupid remarks that only he finds funny, they both listen carefully. You see a lot of skepticism on Richie's face, probably because he doesn't understand some of the big words, you guess, but Sydney seems to be really into everything from pictures of the food and the weekly specials, to quick reels showing potential customers a little bit of behind-the-scenes action.
"Oh, I'm sure Cousin will be thrilled to have people sticking their noses into his business," Richie says, and you're not sure how serious he is. But Sydney shushes him, and you carry on, showing her the mock-up of the possible Instagram feed to set the mood for the profile.
For the next three weeks, you go to The Bear twice a week to gather some content—photos and videos. You talk to the crew and film those who are okay with it. Your presence is met with mixed emotions, but Sydney's gratitude and kindness make up for every suspicious glare and exasperated sigh when you find yourself in someone's way. Besides the restaurant, you take your neighbor's dog for a long walk every Saturday morning, call your mom and dad to check in, scroll Instagram instead of finally starting an actual book, and often wonder why Carmen is so hostile towards you.
Generally, you try not to hang out in the kitchen directly, especially not when Chef Carmen is present. Being uncomfortable in a new environment makes you positively anxious, causing you to go through a whole pack of your favorite cinnamon Simply Gums a day.
You also remember to always tie your hair up—not that the staff there wear hairnets or anything, but you don't want Carmen to find another reason to frown at you. He's been basically only frowning or ignoring you. Hard to tell which one is worse.
You always clean your hands super thoroughly, like during COVID, singing the "Happy Birthday" song to time it before daring to even stick your finger in the restaurant. Sydney offers you an apron to protect your work clothes, which you refuse. You sense from some people there that you're not entirely welcome.
But the more you avoid Carmen, the more likely you are to bump into him. You know Murphy's Law. So one morning, he just appears from around the corner, carrying a tray of mushrooms.
For a second, you're actually horrified that he's going to introduce himself. Before that can happen, you blurt out, "Uh—do you remember me? Copenhagen?"
Carmen stops and looks at you, wiping his wet hands on the towel attached to the string of his white apron. "Yeah," he confirms, "yeah, I do." He says your name, all soft and correct, along with your surname, and with his eyes fixed on you, you're frozen to the spot, affected whether you like it or not. Then he leaves to taste Tina's roasted peppers.
Obviously, your mind can't let the episode slip away. As you type copy for the upcoming Instagram posts, you pause every so often to cringe at how embarrassing you behaved. Of course, he remembers you, for fuck's sake! You're working in his restaurant—kinda.
"Hey! Copenhagen! You wanna see this?" Carmen yells a bit later from the other side of the kitchen, and you falter, deciding whether you're really going to answer to him calling you that.
You bite your tongue and trail hesitantly to the station where Carmen is with Tina and Ebraheim, gathered around a saucepan.
"Tina, chef, this is excellent. Well done," Carmen says to her as you approach, then turns to you.
"This is what we wanna share with the world. Perfect red pepper sauce. Simple but delicious."
"Okay," you respond, taking in the expectant way all three of them are looking at you. Like you're some kind of magician. Or a fraud.
"Just," Carmen adds before he sets off, "no recipes leave this kitchen," and he waits for you to confirm.
"Right."
Slowly, you start to question why you're helping The Bear. Is it because two years ago you thought of Carmen and what you might have felt for him? What could have been? More than the chef himself, you find yourself growing fond of the place and the employees—some of them! Seeing the Instagram followers number increase fills you with pride and satisfaction. Fuck Carmen.

Mornings are usually the only time when Carmen isn’t around, and you try to time your visits so your paths don’t cross.
Wanting to snap photos of the new tableware and make a quick, fun video reel, you head into the kitchen. There's no one around—Sweeps is probably hiding somewhere, and Sydney might be in the office. Not wanting to bother anyone, you set your always-heavy handbag on a chair and start looking for everything you need. There's no reason for you to feel like you're sneaking around, but you can't help feeling nervous. That’s when your clumsiness strikes, and you manage to knock over a glass of water. Rolling your eyes, you get on your hands and knees to wipe the spilled water with a rug that you hope is meant for cleaning, as you’re very aware of every item having its particular function here.
You straighten up and stretch to get one more plate from the shelf. Then you lose your footing on the still-wet tiles. Your foot slips, and the top plate falls to the countertop with a loud cracking noise. You react quickly, trying to break the fall, but there's no use. The plate shatters to pieces.
Of course, it’s Carmen himself who emerges from the door leading to the office, and you wince—both physically and mentally—preparing yourself for a very unpleasant collision.
“What’s going on?” he asks as he approaches you, eyebrows pinched. He’s not wearing his chef whites, just a simple white t-shirt and dark jeans.
“Sorry, I—” you start apologizing as Carmen stands next to you, assessing the damage.
“What—what’re you doing here?” he asks in a very flat voice, staring at the pieces of ceramic.
“I’m sorry, I’m going to tidy this and also pay for the plate, obviously,” you ramble, reaching down for the shards.
“Don’t,” Carmy barks, stopping you by grabbing your shaking hands in his. His hands are big, the tattoos making them look harsh and crude, even though the touch is gentle. “Don’t cut yourself,” he adds quietly, holding you until you relax your arms and then a second longer.
He must sense your nervousness. “It’s fine, I’ll get it,” Carmen assures you, catching your eye. “Hey,” he lays a soft hand on your arm, “step away, I’ll clean this.”
Nodding, you step back and wait patiently, disconcerted, watching as Carmen carefully handles and discards the shards, then checks the floor for any tiny fragments. He turns back to you.
“Are you okay?” he checks.
“Yeah.” And you’re more thrown off balance by having Carmen pay attention to you, all of a sudden, than by damaging the kitchen’s equipment.
He studies you for a moment, his face unreadable, and you’re the one to look away first. Which you hate, by the way.
“You wanna see some stuff I’ve been working on?”
“Sure,” you agree, taking a deep breath to relax further. “I’m sorry. The loud noise—” you wave your hand in the air vaguely, rolling your eyes at yourself. “Just scared the shit out of me, I guess,” you finish with an apologetic smile.
“You’re alright,” Carmen confirms and disappears for a bit. In the meantime, you have a small meltdown, shaking your head at yourself for being so, so very terribly lame. Luckily, before he returns with a tray of different dishes, you pull yourself together.
Carmen sets the tray down, revealing an array of colorful and sophisticated meals that instantly catch your curiosity.
“Any allergies?” he asks.
“Passion fruit—easily avoidable. Sometimes kiwi,” you list. “And grumpy chefs,” you add cheekily, feeling bold.
Carmen pauses. “I’m not grumpy. I’m focused.”
“You weren’t like this in Copenhagen,” you say softly, leaning a bit closer to him, your body language signaling that once you had been comfortable around each other.
“I’m more focused now,” Carmen retorts, stubborn and maybe a bit offended. “Back then I—uhm—I felt comfortable around you. It was easy.”
“And now?” you almost whisper.
But Carmen ignores the question, pushing the first bowl closer to you. “Here, taste this… or take a picture and then taste it.”
And you understand that the re-bonding is over.

Soon, you drop the habit of visiting the restaurant only in the mornings. One reason is that spending time with Carmen, talking to him or watching him cook and explain things, makes you late for work twice in a row. That usually never happens as you take pride in being on time at the office. You don’t work at The Bear for money, but you hardly think about it that way. When you decide to pop in during the morning, Carmen shares his deadly strong black coffee that he mills himself with you. It’s bitter but heavenly. Secretly, you like drinking it while chewing your favorite cinnamon gum, which somehow makes the taste even better—smoother and richer.
The second reason—you discover that Carmen is much calmer in the evenings after service. Less jittery, more relaxed. His blood flows slower, you think. His heart pumps with more ease. Sydney and he share thoughts and plans for the restaurant with you while you all sit at an empty table. It’s nice, you think, while watching Carmen’s hands play with a napkin. His hands are especially nice.
It’s Saturday and raining as you find yourself sitting in Gordon Ramsay's Burger. Nothing could’ve surprised you more than Carmen asking you to go out eat together. Had he felt bad for ignoring you at the beginning? You’re watching the rivers of raindrops on the big glass window, waiting for Carmen. As usual, you’re ten minutes early, and after you order a Life’s a Beach, the first thing on your mind is you're just early, he didn't stand you up, and then: this is not a date, babe! Which instantly startles you into sitting up straight and looking around, as if someone could see your embarrassing thoughts. Why are you even thinking about this?? Then Carmen arrives, wet patches on his shoulders and jeans that cling to his thighs. He chooses the Chicago hot dog and three different burgers with a bunch of sides. While he only nibbles on them and writes down notes on his phone, you feel bad for wasting the food and eat more than you should. Carmen studies the buns very carefully and asks you a lot of questions about the food, some of which you find amusing and actually—endearing. When you go to bed that night, your belly’s uncomfortably full. You dream that you’re pregnant and about to go into labor, and you’re pretty sure that Carmen’s the father. And, honestly, do you need a book of dreams to explain the meaning? Fuck.

All goes to hell next week when Carmen sees you eating a sandwich from the corner shop down the street. Instead of having your regular lunch with Becky, you’ve chosen to run to The Bear so you could see Marcus unveil his new dessert. But before that, you popped into the nearby deli to order a mozzarella and sundried tomato sandwich. No one at The Bear had ever explicitly invited you to the family meal, and you would never dare to have free food there. But the way Carmen looks at you while you sit on the step by the back exit, eating the rather dry sandwich, is indescribable. The stern look on his face is back, with a closed-off facade. His eyes are cold. Before you take it all in, you wave at him awkwardly, chewing. Carmen retreats back inside wordlessly, leaving you confused and a little hurt.
Unfortunately, the atmosphere surrounding you doesn’t improve when you return to work, the stupid sandwich sitting in your stomach like a heavy stone. You have a big argument in the meeting room while planning the next month's issue. Then one of your co-workers makes a nasty remark about your single life. The afternoon drags on painfully slowly, which forces you to message your cousin—an astrologist extraordinaire—to check what the heck is going on with the universe.
Tuesday morning is rough. The second you wake up, you know you’ve overslept because you never get up without the alarm ringing angrily. A single glance at your phone proves it to be true. Right after, you notice three missed calls from Sydney and two from Nat. There are no text messages, though.
At first, you intend to call Rob to beg for a home office day, something you rarely ever use. But as soon as you check your calendar, you’re reminded of the big conference happening from 11 a.m. until 5 p.m. You rush to work, finishing your makeup on the train, then enter the office building to quickly run through notes with your colleagues. The first time you have a chance to make a quick phone call is when you finally go to the bathroom. It’s Natalie who you manage to reach first, as the lunch rush at The Bear is just unfolding. Over the cries of Natalie’s baby, you hear half-sentences about a recipe, Carmen, and a leak. It’s hard to put it all together. At 4 p.m., Nat finally sends you a text. It says: “Recipe’s published in Taste of Home. Carm’s mad. Says someone leaked it.”
It contains a link to the Taste of Home website, with Carmen’s perfect Berkswell Pudding recipe in the Top Recipes of the Week, marked “Chef’s tip.” You check it again to make sure, and surely—it’s one of the dishes Carmen introduced to you just last week. You didn’t dare to photograph it, much less taste it. You remember concentrating on the way his lips moved when he explained the preparation process, not much on the cooking itself.
What’s clear to you is that the "Someone" from Nat’s message is actually you.
A gloomy dread settles in your stomach as the meeting goes on and on. You barely pay attention, which makes everything even worse. You’re scared of what’s happened in the restaurant, and you’re worried that you’re going to miss something important in the meeting.
When you run for a second quick bathroom break, instead of peeing, you think of your next step. You could try to call everyone in the restaurant, try to find out what the hell is going on. But you don’t want to be seen as hysterical. You check Instagram and possible messages to find traces of a catastrophe. There’s nothing. Again, you open the website with the recipe. The photos are pretty sloppy, definitely not something Carmen would prepare. As you check the ingredients, you notice there are some major differences from Carmen’s dish. All in all, the only thing that stops you from texting Carmen is your pride. And true fear.
Absolutely dreading facing Carmen, you make it to The Bear during dinner time. Which, obviously, is the worst possible timing. You’re only praying that he’s not in the kitchen but hiding in his office, deep in paperwork.
It’s Sydney who you meet first as you sneak into the restaurant through the back door. She grabs your arm.
“Don’t go to talk to him now! He’s in a really, really bad mood. Natalie and I were trying to call you.” There’s genuine worry on Sydney’s face, her eyes big and honest.
“I don’t understand what happened,” you frown. You can feel a headache approaching from the intense day in the office. “I think he should tell me himself if there’s a problem.”
“I’ve been trying to work it out with him, to explain—”
“Explain what?” you question, more sternly than you usually are around Syd.
She falters. “It’s just this stupid thing—and we love having you—don’t let Carmy upset you,” Sydney half-explains. It doesn’t make much sense, and you shake your head, heading to the office. You’re more mad than afraid now.
You don’t wait for an invite after you knock shortly. Closing the door behind you, you find Carmen leaning against the desk, a bottle of water in his hand.
Everything inside of you drops the second he lays his eyes on you. There’s no doubt he’s angry.
“Didn’t Natalie tell you you don’t have to come here again?” Carmen asks curtly. “I’m surprised you think it’s okay to be here.”
Not expecting Carmen to be this harsh from the beginning, you swallow instead of answering.
“I hope that you’re happy now,” he says meanly, putting the bottle down on the desk.
“I don’t—I don’t know what you’re talking about,” you croak out, sincerely meaning it.
Carmen straightens up, watching you like a feline. “The recipe. It’s out. One fucking thing I asked not to get out, and now the whole of America can see and fucking even cook it at home.”
You’re frozen to the spot. From the very beginning, you knew that Carmen is not a person to mess with, hoping that you would never experience his anger directed at you. Now it’s happening.
You want to say something about no one being able to cook the way he does, but it’s pointless. Instead, you’re fighting off the flush on your face from embarrassment. You feel like a child being scolded, but you don’t want to look like one.
The muted but still loud kitchen noises bleed through the closed door. A shout, clattering. Not loud enough to stop Carmen from piercing you through and through with his ice-cold eyes.
“I promise I didn’t do anything like that,” you say, desperately wanting the chef to believe you. “I swear!”
Carmen pinches the bridge of his nose, one hand propped on his waist. You wait, breathless, for his next move, scared to death. The shirt you have on is wet with your sweat. The really badly smelling kind—the one your body produces when you’re stressed or scared. And you’ve been stressed since the very morning. You flinch when you move your arm and the odor hits your nose, hoping that Carmen can’t smell you. You would be mortified. The strap of your tote bag is digging into your shoulder painfully, but you don’t dare to move to put it down to relieve your arm.
“This all doesn’t—it doesn’t make any sense,” Carmen starts pacing, looking down at the floor and not at you anymore. You’re not sure if it’s better this way. “You come here, wanna do a fucking interview with me, or some shit, then you show up again—this time wanting to work here. For free! So, please, tell me—how does it sound, huh?”
Petrified, you realize how exactly it all sounds. When Carmen says it like this, it makes you look like a fraud. Like a terrible, terrible person. A liar. Your mind goes weeks back, back to the moment you actually thought of maybe digging some scoop in here, maybe convincing Carmen to do the interview after all. But it’s far from how he’s making the situation sound.
“Carmen,” you start without knowing what you want to say. Carmen’s stopped walking around the tiny office like a caged animal, and he’s again looking at you. There’s so much tension in his face, back hunched. “It sounds bad, but may I explain—”
“You may not,” he cuts you off briskly. His neck—normally a place you find sexy—is all red, and the thick vein there is getting more and more prominent by the second. “No one fucks with my business, you understand?” Oh—and he’s shouting now.
The natural defense, you didn’t know existed, is to make yourself smaller. Somehow, anyhow. You hang your head, avoiding looking at his face. You just can’t meet his eyes, even though Carmen’s bowing and tilting his head to force you to.
“It’s like I have to start asking the staff to sign an NDA,” he carries on.
Carmen’s getting slowly closer and closer to you, pushing you against the wall by the door. He’s not touching you but only because you’re not allowing it. You’re sick with humiliation. Lost for words, probably for the first time in your life.
“—and Nat fucking leaves me here—us, all of us—and that’s just not fair. I would expect so, so much more from my sister. Not that my brother was much better,” he chuckles humorlessly, but you see it’s more like an effort to catch his breath. “Lousy fuckers… Do you think you do your job well here, chef?”
He’s scaring you now. The hair by his temples and above his forehead is damp, and his gesticulation is wild and weird.
“Do we disgust you here, is that right, hm?” Carmen probably finally sees your frightened expression because he adds, “Why would you buy food somewhere else and then come here to eat it?!” You understand that he’s referring to the day he saw you eating the sandwich by the rear exit. Unsure whether he expects you to reply, you decide to stay quiet. Your knees are starting to shake, from exhaustion after the long day and perhaps, from Carmen’s current behavior.
“It made ME sick,” he says, his face just inches from yours when one of his hands slams into the thin wall right next to your head. The noise echoes in the room, and you’re desperately hoping it’s not loud enough for the others to hear from outside. You would die on the spot if they knew what’s going on here.
“Who do you think you are?” Carmen shouts some more, loud, by your ear. It vibrates through you and never stops. You’re shivering all over, you notice. It’s not okay, not okay!
At last, you raise your head, chin jutting out. “No one’s going to talk to me like this. No one,” you spit out in the chef’s face, taking him by surprise. “Don’t you ever shout at me again,” and you jab him right in the middle of his chest, instead of punching him there like he deserves.
When you’re leaving his office and rushing to the back exit, you hear Carmen yelling.
Everything feels tense and your hands are shaking. Your jaw is set so hard your teeth could crush from the pressure. The fresh air hits your face, and you focus on breathing deeply through your nose. The sounds remind you of a steam engine. You walk for about a minute, mind blank with the shock. Only when you turn a corner do you allow yourself to stop, which causes the first tears to fall. You’re so mad at yourself. Why the fuck are you crying?! There’s so much frustration in the crazy mixture of emotions you’re feeling. You’re completely overwhelmed with it, not knowing what to focus on at first.
Out of habit, you look for your phone in your handbag to check the screen. The fucking heavy bag that’s been killing your shoulder. Frustrated, you let it slide off your arm and down to the sidewalk.
