This is another salad I like to throw in the mix! It's amazing with cilantro lime dressing!!  Mexican Salad! Tomato Frozen Corn Shredded Cheese Rotisserie Chicken Spinach and Romaine Lettuce  (Top with chopped avocado when serve.) Cilantro Lime Dressing: 1 cup packed cilantro 1/2 cup extra-virgin olive oil 1/4 cup lime juice 1/4 cup orange juice 1/2 teaspoon salt 1/2 teaspoon pepper Pinch of minced garlic Puree in food processor until smooth!

Lunch Swap #3 I'll be honest. I've never attempted to make this one before. But with the weather changing and getting colder I need something WARM to eat. I can't get enough salad, but it's SO COLD! You won't hurt my feelings if you only give this one a rating of a ....1 I just might be right there with ya! Butternut Squash Quesadilla! 1 whole grain tortilla 1/2 cup shredded cheese 1/2 cup cooked butternut squash, blended smooth with a bit of honey to taste. Simply spread some squash over the tortilla, top with cheese, and pop it in the oven at 350 degrees F. until the cheese is melted. Note: You could put it in the microwave, but trust me.
