Ingredients
Step 1
4 pounds fresh Loquats
2 1/4 pounds sugar
1 gallon of water
1 Campden tablet (crushed)
1/2 teaspoon Pectic Enzyme
1 teaspoon Acid Blend
1/4 teaspoon Grape Tannin
Step 2
1/2 teaspoon Super Ferment yeast nutrient
Wine yeast (one pkg. for up to 5 gallons – try Red Star Cote des Blancs or Lalvin 71B-1122)
 Equipment
Primary fermenter (carboy)
stirring spoon
hydrometer,
straining bag
siphon tubing kit
1 gallon carboy or jug
an airlock and bung
Sanitizer
(A thermometer and brewing belt may be used to monitor and control temperature.)

Make sure all equipment (i.e. stirring spoon, etc..) is sterilized you can bleach it or use . Contaminated equipment can let a stray yeast enter the wine and ruin it’s taste.
Instructions
Step 1
Wash the fruit in cool water and remove the seeds. Chop up the fruit into chunks and put into your primary fermenter.
Add the pectic enzyme, the tannin, the acid blend, the sugar, to off water to a gallon. and add the crushed campden tablet.
After 24 hours, add yeast nutrient and yeast.
Step 2
 Yeast Hydration and primary fermentation: in a large cup add 4 ounces of warm chlorine free water.
Stir the yeast into the water then let mixture stand in cup for 15 minutes, make sure it is bubbling and then you will add it to your wine.
Put in your acid.
Take your hydrometer reading and calculate all the measurements.
Attach your airlock and wait for your fermentation to be complete, let ferment with the pulp for 5-7 days gently agitate daily.
After 5-7 days when the foaming calms down you will siphon your wine off of the sediment into your secondary container which is usually your glass carboy.
(The sediment is the stuff that accumulates at the bottom of your container.)
Step 3
After you strained into your secondary carboy wait till the fermentation activity dies down (could be between several weeks to several months)
Final Step
Although yeast activity will decrease as the fermentation process proceeds, there will still be fermentation going on as long as you still see some foaming or bubbling.
then rack into a clean carboy.
(For a sweet wine, rack at three weeks. Add 1/2 cup sugar or maple syrup dissolved in 1 cup wine. Stir gently, and place back into secondary Carboy.)
Repeat process every six weeks until fermentation does not restart with the addition of sugar. Rack every three months until one year old.
When the wine has cleared and is inactive – taste and bottle.
Stage 4: Aging / Bottling
You can repeat the racking process several times to get the maximum clarity though I would wait in-between each time a day or to, so the sediment can settle. I personally don’t like racking multiple times because of the risk of oxidation meaning the air touching it will give it a funny taste.
Bottle using the siphon cork and let wine sit for 6-12 months before drinking. Some would even prefer waiting 2 years!

Random drinks and important coffee points to know
Starbucks cards accepted.
SBL- Strawberry blended lemonade- strawberry puree to bottom of cup then lemonade and pour into pitcher. Add ice and 234 creme base.
Dirty Chai-hot has only milk & 345 chai and both cold and hot have one shot for T,G,V. 
CAS Cinnamon apple cider- steam apple juice and cinnamon dulche syrup 3,4,5. Whipped cream and caramel sauce.
CDO Cordusio- whole milk steamed 2244 shots espresso 1122 mocha and swirl in cup the shots and mocha mixture.
Cotton Candy Frap- creme based frap with vanilla bean powder and rasp. syrup 234.
Trenta only goes with teas, tea lemonade, coconut teas, brewed coffee (BC), and iced coffee (IC)
Cold drinks have the shots go in first followed by the milk and ice except the CM.
Cold foams get nitro lids.
4 components of good coffee- quality of the water affects the taste, storage (moisture, light, air, etc), grind (too fine makes it stronger) and quantity (physically adding too much or too little affects the taste/quality)
45 mg caffeine in refresher bases so like an espresso shot (64 mg)
We don’t think the matcha has caffeine, but it does have sugar.
Espresso macchiato- shots on bottom of a small cup topped with spoonful of foam Nicole says like a half-assed cappuccino hahah.
Frap roast- one packet for every 1L in the BIG pitcher. Make 2L.
Grind on 12 for the coffee pots which are changed every 1/2 hour for half pots and 9 for the pour overs. 345 for pour over small rounded scoops. 2 rounded scoops for the coffee bean grinder for a half pot and 3 for a full pot.
Blonde is most caffeinated lightest roast smooth and mellow Veranda, Pike is nutty and rich, balanced flavor (you can tell by first smelling cupping hand and slurping to taste) and Verona is the least caffeinated and boldest, sweet tasting with depth. Ristretto is made with less water and the highest in caffeine out of espresso and followed by the Americano.
Iced coffee (IC) brew into pitcher on half batch setting and fill the rest up with 2 venti scoops of ice that’s what nikkole said but it wasn’t full so maybe three v scoops or 2 trenta scoops. Date it for 2 days so if you make it on the 20th date it for the 21st.
Iced teas (BT, GT, WT, PT) fill to 1 L line on the pitcher with hot water and leave the teabag steep for 5 minutes then fill with filtered water.
LFTL London Fog Tea Latte: earl grey 1122 half hot water half steamed milk with 345 Vanilla.
Mocha-skinny gets hot water to first line .5 liter? on that big pitcher whisked in while reg mocha gets hot water to the 2L line then is whisked in. Do half of the mocha first then dump the other half of the bag because it nearly overflows.
Redeye-coffee with a shot.
Temperature should be between 150 and 170 (65 and 77 degrees). kids 130 (54 degrees) press lower on mistrena and for XH up one.
Tic Tok drink- berry refresher base with 3 scoops berries and 3 scoops strawberries blended. Tea is double cupped and using tongs to touch the teabag. Add hot water.
Medicine Ball- jade mint and peach teabags with half hot water and 345 honey and steamed lemonade.
Making sweet creme: 11 oz 8 syrup pumps pour 2% to short line and hc to grande line then pour into carafe and swish. 18 oz 13 pumps V into carafe and 2% to tall line and hc to max swish into carafe.
Making lemonade-directions on carton (whisk .75 lemonade and add H20 to 2L to lemonade pitcher-labeled lemonade with yellow lid)
Shake PINK, VIOLET and DD extra to get the berries mixed.
Infusions and drinks with lemonade don’t get water added.
Tie-dye frap 7/10-7/14 only! (Superman Vanilla) 234 yellow powder then sprinkle the cup walls with red and add two blue stripes on either side. Top with vanilla whip and sprinkle all three colors voila!
Refills good for coffee, mistook, cold brew, iced coffee, tea except juice sweetened teas and tea lemonades.

  “Lieutenant” Y/N took her rag to clean her hands, lubricant covered her hands─ repairing a motor was a dirty business. She turned around and smiled seeing the tall droid handing her a metallic glass. “Captain Andor─” Y/N raised her hand and the droid only nodded extending its metallic arm. She took the glass and drink the water. It was cold─ perfectly as she liked it… “Was it of your liking, Lieutenant?”
 Y/N shrugged her shoulder and looked around the base to spot him. She smiled seeing him, ─Cassian Andor, the man was trying to appear that he was listening to the conversation lead by a new recruit pilot “I DIDN’T” she shouted, Y/N smirked seeing Cassian glancing at her direction. K2-SO metallic head moved side to side. “What?”
 “There is a 67% he is going to here, tell me to go away and blame the beverage on me”
 Y/N smiled at the preoccupied robot and pat its metallic arm. “Then you better go”
 She turned around to busy herself with the motor of her X-Wing─ or more like a piece of trash that she was trying to build from a burnt shell. “You’re not going to give up are you?” Cassian inquired to Y/N. “It looks the same to me, as a month ago” he added as Y/N continued to dismantle the motor─ putting the pieces in an ordered fashion in a black rag.
 “You have a co-pilot, Cassian. K2-SO, it’s a robot. No human errors, I am a nervous wreck in dangerous missions, trust me; this proves it” She said touching a loose wing on her left side. “I don’t want to be another variable on your missions, you better give up Cassian. I am not going to be your co-pilot. I fly solo” Y/N declared looking at Cassian. “Give up, even though the title of captain is tempting─”
 “What are you afraid of?”
 Y/N frowned, pursing her lips she narrowed her eyes─ what could she say? That she really like him and that she was going to be a nervous wreck being alone with him. No, she could stand the teasing of her fellow pilots about her crush on the Captain; but been with him in the same place for days just to recuperate information─ now her heart was fluttering against her chest or was she having a heart attack. “I am not an intelligence agent, Cassian. I like─” Cassian raised an eyebrow and a blush appeared on her face, he put his hand on his chest; waiting for her response. She bit her lip. Did he know how hot he looked in that position? ─No, get a grip; you’re a decorated pilot she thought. “─To shoot things?”
   Y/N smiled as her head submerged in the cold water, the moon tinted all the place of silver. The wildflowers expedite such an exquisite fragrance─ that she thought she had died and gone to heaven. “Lieutenant”
 She opened her mouth and water entered her respiratory system. Immediately she broke up to the surface and started to cough. Y/N hit her chest and looked up─ K2-SO with a pink towel layout on his arm. “Why the hell are you doing here?”
 “It’s cold, you’re trying to catch the flu” Cassian said in a serious manner looking at her naked shoulders.
 Y/N hands immediately flew to cover her uncovered shoulders─ she was not naked nor with skimpy clothes, she was just not presentable. A T-shirt and a short were not a suitable attire to be here on the night taking a dip into the blue lagoon. “Grease it’s not easy to remove, Captain Andor,” Y/N said with a smile─ she almost sunk into the water as Cassian started to remove his brown leather jacket. “Wh─ what… a─re you doing?” her voice trembled, whether it was her trembling body because of the cold climate or the fact that Captain Andor was only on his thin shirt looking at her─ not it was the cold air hitting her back. Yes, that was it.
 “Like you said, grease it’s not easy to remove,” Cassian said with a smirk showing her a stain of oil on the leather jacket. “You can go on with your activity. I only came to clean my jacket”
 Was he doing this on purpose? The way his arms flexed as he washed the leather jacket. No─ he was the always solemn and discreet Captain Andor. Not some teenage boy trying to seduce her. She scoffed audibly and Cassian gazed at her. Oh, his brown eyes, how beautiful they look with the contrast of the silver rays of the moon. “You’re red”
 Y/N though in the cold water─ felt a rush of heat out of her chest expanding to her cheeks scratched that it exploded all over her face. “The cold air,” she said faking a shudder─ she wanted to scream that it was him, with those arms; she wanted to be enclosed by them laying on the sand admiring the moon above them.
 “Take the towel. I don’t need it” Cassian said as he stood up looking at his jacket. “Let’s go K2-SO”
   And as Cassian predicted, she was in bed moaning─ more like rolling around the bed with a sore throat begging for dead to come for her. A knock on her door startled her out her stupor. “Come in,” she said, Y/N didn’t bother to ask who it was.
 “I brought you a soup and hot water”
 Y/N’s eyes widen at the sound of his voice, she hoped it was one of her squad pilots─ to verify the demise of their lieutenant. Or maybe K2-SO bringing her just what she needed it in that moment in time. She peeked under the sheets at Cassian who walked to the small metallic table by her bed. “I didn’t see you in breakfast and since─”
 “Thank you”
 “It’s nothing, do you need anything else? K2-SO it’s outside I can send him to fetch the doc─”
 “Not necessary, it’s just a simple cold. You should get out, I don’t want you to catch the flu because of me” Y/N blushed as Cassian laid a hand over the hand that was holding the sheet over her face. It incremented as he smiled at her and touched her forehead. “Cassian” his name came out as a whisper, she had never been so close to him─ was it the fever acting on her. Was it real or she was dreaming?
 “Don’t worry” Y/N felt her bedding sink a little to her left side. Cassian sat down taking the small bowl of soup on his hand with the other he took the spoon. “Someone has to take care of you”

Lalvin AC or 71B-1122 wine yeast
Instructions
 Equipment
Primary fermenter (carboy)
stirring spoon
hydrometer,

an airlock and bung
Sanitizer
(A thermometer and brewing belt may be used to monitor and control temperature.)
Walmart
Make sure all equipment (i.e. stirring spoon, etc..) is sterilized you can bleach it or use soap made for this purpose. Contaminated equipment can let a stray yeast enter the wine and ruin it’s taste.
Instructions
Step 1
Make sure your bananas are over ripe but make sure not starting to spoil or bruised.
Slice the bananas, peels and all, into 1/2-inch slices in a 3-qt pot. Add half the water and bring to a boil.
Reduce heat and simmer for 30 minutes. Remove scum from surface and set aside to cool some.
Put remaining water in another pot and bring to boil. Stir in sugar until dissolved.
Meanwhile, cut kumquats in half crosswise and put in nylon straining bag, removing any seeds cut during halving.
Save juice released during cutting and put in primary. Tie bag and squeeze in primary to release as much juice as you can. Leave bag in primary and pour sugar-water over it.
Strain bananas through nylon sieve, adding the water to primary. When cool, add pectic enzyme, yeast nutrient and tannin and stir to dissolve.
Add the campden tablet, pectin enzyme.
Wait 24 hours, then you will add your prepared yeast.
Step 2
 Yeast Hydration and primary fermentation: in a large cup add 4 ounces of warm chlorine free water.
Stir the yeast into the water then let mixture stand in cup for 15 minutes, make sure it is bubbling and then you will add it to your wine.
Take your hydrometer reading and calculate all the measurements.

After 5-7 days when the foaming calms down you will siphon your wine off of the sediment into your secondary container which is usually your glass carboy.

Chop fruit coarsely on tray that has an edge you want the juice then further crush the fruit as best as you can with your hands and place the fruit and the juice in a primary fermenter with all the other ingredients of stage 1.
Wait 24 hours, then you will add your prepared yeast.

 Yeast Hydration and primary fermentation: in a large cup add 4 ounces of warm chlorine free water.
Stir the yeast into the water then let mixture stand in cup for 15 minutes, make sure it is bubbling and then you will add it to your wine.
Take your hydrometer reading and calculate all the measurements.
Attach your airlock and wait for your fermentation to be complete, let ferment with the pulp for 5-7 days gently agitate daily.
After 5-7 days when the foaming calms down you will siphon your wine off of the sediment into your secondary container which is usually your glass carboy.
(The sediment is the stuff that accumulates at the bottom of your container.)
Step 3
After you strained into your secondary carboy wait till the fermentation activity dies down (could be between several weeks to several months)
Final Step
Although yeast activity will decrease as the fermentation process proceeds, there will still be fermentation going on as long as you still see some foaming or bubbling.
then rack into a clean carboy.
After fermentation has stopped completely any remaining sugar required to sweeten it to suit your taste.
When the raspberry wine has cleared and is inactive – taste and bottle.
Stage 4: Aging / Bottling
You can repeat the racking process several times to get the maximum clarity though I would wait in-between each time a day or to, so the sediment can settle. I personally don’t like racking multiple times because of the risk of oxidation meaning the air touching it will give it a funny taste.
Bottle using the siphon cork and let wine sit for 6-12 months before drinking. Some would even prefer waiting 2 years!

Ingredients
Step 1
3 lbs aronia berries
1/2 lb dark raisins, chopped or minced
2 lbs finely granulated sugar
1 tsp citric acid
1-1/2 tsp yeast nutrient
1 crushed Campden tablet
3/4 tsp pectic enzyme
water to 1 gallon
Step 2
Lalvin 71B-1122 (Narbonne) wine yeast
Instructions
 Equipment
Primary fermenter (carboy)
stirring spoon
hydrometer,
straining bag
siphon tubing kit
1 gallon carboy or jug
an airlock and bung
Sanitizer
(A thermometer and brewing belt may be used to monitor and control temperature.)

Make sure all equipment (i.e. stirring spoon, etc..) is sterilized you can bleach it or use . Contaminated equipment can let a stray yeast enter the wine and ruin it’s taste.
Instructions

After 12 hours stir in pectic enzyme, yeast nutrient and 2-1/2 quarts cold water. Recover primary and set aside additional 12 hours.
