Cranberry chutney
Sweet, tart, jammy cranberries evolve into the subtle aromatics of cumin, mustard, and bay leaf before rounding off into a smooth, even chili heat in this Anglo-Indian-style chutney. It's excellent in place of cranberry sauce on all kinds of roasts, meat pies, flatbreads, sandwiches, and charcuterie boards.
The cooked fruit-and-vinegar chutneys made by English cooks during the British colonization of India were inspired by the fresh and pickled Indian condiments that English traders and soldiers—including those in the East India Company's military arm—had acquired a taste for, but substituted locally familiar produce and cooking methods for Indian ones. "Indian" recipes began appearing in English cookbooks in the mid-18th century, inspiring and fulfilling a desire for the exotic and, effectively, advertising colonial goods. The domestic kitchen thus became a productive site for the creation and negotiation of colonial ideology: the average English housekeeper could feel a sense of ownership over India and its cultural and material products, and a sense of connection to the colonial endeavor desite physical distance.
This sauce, centered around a tart fruit that is simmered with sugar and savory aromatics and spices, is similar in composition to an Anglo-Indian chutney, but some Indian pantry staples that British recipes tend to substitute or remove (such as jaggery, bay leaf, and mustard oil) have been imported back in. The result is a pungent, spicy, deeply sweet, slightly sour topping that's good at cutting through rich, fatty, or starchy foods.

Ingredients:
1/2 cup dried cranberries (krainaberee), or 1 cup fresh or frozen
5 curry leaves (kari patta), or 1 Indian bay leaf (tej patta)
1/2 tsp cumin seeds (jeera)
1/2 tsp black mustard seeds (rai)
3 Tbsp jaggery (gur / gud)
1-3 small red chili peppers (kali mirch), to taste
1/2” chunk (5g) ginger (adarakh), peeled
1 clove garlic (lahsun)
1/2 red onion (pyaaj) or 1 shallot
1 Tbsp mustard oil (sarson ke tel)
1/3 cup (80 mL) water
Pinch black salt (kala namak)
Curry leaves can be purchased fresh at a South Asian grocery store. If you can't find any, Indian bay leaves can be used as a substitute (the flavor isn't per se similar, but it would also be appropriate in this dish). Indian bay leaves are distinct from Turkish or California laurel bay leaves and have a different taste and fragrance. They will be labelled “tej patta” in an Asian or halaal grocery store, and have three vertical lines running along them from root to tip, rather than radiating out diagonally from a central vein.
Instructions:
1. Pound onion, garlic, ginger, and chili to a paste in a mortar and pestle; or, use a food processor.
2. In a thick-bottomed pot, heat mustard oil on medium. Add curry leaves or tej patta and fry until fragrant.
3. Add cumin and mustard seed and fry another 30 seconds to a minute, until fragrant and popping.
4. Lower heat to low. Add aromatic paste and fry, stirring constantly, for about 30 seconds, until fragrant.
5. Add cranberries, jaggery, black salt, and water. Raise heat and bring to a boil. Reduce to a simmer and cook uncovered, stirring often, until thick and jammy. Remove from heat a bit before it reaches your desired consistency, since it will continue to thicken as it cools.
Store in a jar in the refrigerator for 2-3 weeks.

[I’ve covered purrloin before, so I’ll link that post at the bottom of this one! Oh, and how serendipitous! Alcremie is returning in The Indigo Disk, making this an apt post for this week!]
An alcremie would actually make an excellent pet (even if I’d constantly worry about them getting dirty)!
At only a pound in weight, alcremies Are tiny little creatures. Space won’t be an issue for caring for one, though you’ll want to keep in mind that they don’t appear to be super agile or quick-moving. You’ll definitely want to keep your alcremie away from animals and other pokémon that will want to eat them, because they may have trouble protecting themselves or getting away!
We don’t have a ton of data about wild alcremies’ behavior, but we do know that they get along well with humans. Once you earn an alcremie’s trust, they will happily give you gifts to show their gratitude and affection: they have been known to offer beloved owners berries that they have decorated with sweet cream (Sword - Vanilla Cream). If you can get past how (admittedly) gross it may be to eat the cream that alcremies produce from their hands, it is exceptionally sweet and tasty if coming from a content alcremie (Shield - Vanilla Cream). The flavor of an alcremie’s cream is impacted by the conditions in which they evolved (Sword - Ruby Cream, etc.), ranging from tart (Shield - Ruby Cream) to aromatic (Shield - Matcha Cream) to sour (Shield - Lemon Cream) and beyond. The berries they carry on their bodies vary as well! It’s pretty rare to see two alcremies that look exactly the same.
As previously mentioned, alcremies aren’t the greatest at defending themselves. In fact, in a pinch, they are much more likely to try and distract enemies with tossed sweet cream rather than fighting them. Alcremies aren’t capable of using very dangerous moves, relying on fairy-type staples like Draining Kiss and Dazzling Gleam in tandem with disarming moves like Sweet Scent and Sweet Kiss. Altogether, alcremies just aren’t that dangerous to humans, and are unlikely to attack. They even know some beneficial moves that allow them to heal themselves and others, like Aromatherapy and Recover, which is a huge plus!
Earlier, I mentioned that I would be worried about an alcremie getting dirty. What I mean by that is that, if their bodies have the consistency of cream as they appear to, they’d pick up all manner of dirt and particles just by exploring their environment. How do you clean an alcremie? Would they be okay getting wet, or would they dissolve? I’m a little concerned about the lack of clarity about just how cream-like this species’ bodies are! But hey, that might just be me.
Overall, alcremies appear like they’d be the perfect pet. They are small, friendly, not-too-dangerous, and will even offer you some delicious sweet cream on top of all of that. There’s certainly a reason that this pokémon is a highly favored companion by pastry chefs all over the world! For those who like unique and pretty pets, the variety of colors, flavors, and adornments that can be found in alcremies are a total plus. Just don’t let them play anywhere too dirty, please!

Tonight’s side by side was Green Zebra & GZ Peach from Founder’s Brewing out of Grand Rapids Michigan. First up was the original Green Zebra, a Gose style ale with watermelon & sea salt. This is one of my favorite sour beers, smooth & an excellent flavor. Next up was Green Zebra Peach. A gose with peach & sea salt it has a hint of sweetness upfront & a tartness on the finish. I liked this one a lot but overall preferred the original.

Trader Vic created the Mai Tai in 1944. It's since become the most famous Tiki drink,and my personal favorite. Normally you would need five ingredients to make one,but Trader Vic has products that will let you do it with only three. Rum,lime juice,and one of their mixers.
The first is Trader Vic's Mai Tai Mix. Now,all respect to the Trader's,but this really isn't worth getting unless you mean to mix a bunch of drinks for a cookout with non-Tiki people. If Mai Tais are pizzeria pizza,then this is Hot Pockets pizza. It makes Mai Tais that are a bit on the sour side and just aren't that great. Skip this.
Next is Trader Vic's Mai Tai Concentrate. This is actually pretty good. Two ounces of rum(two dark or one each of dark and gold),three quarters of an ounce of concentrate,and an ounce of lime juice and you have a passable Mai Tai. Not as good as a scratch made one,but pretty good. Think of it as frozen pizza. If you're going camping this would be an excellent way to have Mai Tais without dragging along five bottles. The concentrate has also been used to make other Tiki drinks,and here's a couple that I've made.

Mix #3 TV's Guava Tai
1oz gold rum 1oz light rum 3/4oz Trader Vic's Mai Tai Concentrate(not mix) 1oz guava juice 1/2oz lime juice.
Shake with ice and pour into Mai Tai glass.
A guava-flavored Mai Tai. If you like guava,you'll like this.

This Trader Vic creation is basically a tequila Mai Tai. If you like tequila,give it a try. They even have a Cinco de Mayo glass just for it.

Flash blend with ice and pour into Green Marine Tumbler.
Tart and citrus-y,this would be a good drink for a hot day.

1.5oz 151 rum 1/2oz sloe gin 3/4oz Trader Vic's Mai Tai Concentrate 1.5oz cranberry juice 3/4oz lemon juice 1/4oz lime juice 2 dashes Angostura bitters
Flash blend with ice and pour into mug.
Woof. With an ounce and a half of 151,your head will beat like a drum if you have more than two of these. This is slightly tart with the cranberry juice coming forward and a Mai Tai finish. Quite good but very strong.
So concentrate on your mixings. It may not help you to find enlightenment,but you'll have some stories to tell.

Ranking of Heirloom Apple Varieties I’ve tried
Yes this is happening.

Fuji (technically not heirloom fight me): good all around apple. Excellent crunch and good flavor. My usual go to apple. It doesn’t give me up or let me down.
Ashmeads Kernal: I will preface this with saying I am very biased to all russet varieties of apple. But. But. I have good reason. This apple has a great dense texture and a vey muted sweet flavor that’s like. Nutty? Almost? Reminds me a bit of pear almost but that’s the only way I can think to describe it. Either way 11/10. Superb apple.
Pippins: partially cause its delicious. Partially cause it shares the name of my favorite Lord of the Rings character. Fun and crisp a really nice subtle sweet flavor.
Egremont Russet: another russet! This apple is another excellent variety. The skin is rough but the flavor is a a really nice mix of sweet and sharp. Nice and dry too.
Hudson’s Golden Gem: yup. Another russet. Probably the largest of the russets tbh. This one’s juicer than most of the russet varieties but still has that fantastic nutty flavor. Love this apple.

Belle de Boskoop: everything I love about russet varietals of apple but with the added bonus of a fun name. This is a more tart variety of russet apple. The Belle de Boskoop variety also has the coolest color scheme going: mottled yellows, reds, and greens with streaks of that muted russet brown at the poles. A work of art you can eat. And again. THE NAME.
Arkansas Black: the deep red color and shiny smoothness makes the Arkansas Black one of the most striking apples. And the beauty is more than skin deep. This apple has a thin skin, dense texture and wonderfully complex flavor. However, this apple does best after being in cold storage off the tree for a bit. Helps the flavors develop more. Why is this? Great question. No idea. I’m just happy to eat them.
Grey Pearmain: the outside of this apple is a nice pale yellow. This apple is sweet and almost pear-like in flavor. Great snacking apple.
Swaar: swaar apples are dull yellow-green with some russeting the the top. They are sweet and rich and DENSE. Like, this is a hearty apple. Another variety that gets better when you let them cure a off the tree in cold storage for a couple weeks.

Honey-crisp (also not an heirloom): crisp, crunchy, and sweet. What more do you want. I sometimes fine the intense crunch on honeycrisps to be a bit overwhelming sometimes (especially when the apple is MASSIVE) but it’s in the name so…it does what is says.
Pink Lady (not an heirloom): probably one of the more tart apples. The flavor is sharp and the color is striking. Good crisp texture.
McIntosh: this dude is TART. An early apple season variety. If you like sour apples, McIntosh is your friend. Nice and small too so easy to carry around.
Pink Pearl: this apple likes pink so much both the skin and the flesh have taken on the bright hue of its name. Kid you not the inside of this apple is bright pink. Almost obnoxiously so. The apple is nice and crisp and very VERY tart.
Bethel: awesome mid tier apple. Good crunch, beautiful deep red color, and the taste is sweet and rich with low acidity.
Knobbed Russet: looks funky. Tastes amazing. The Knobbed Russet has a very rough, warped, muddy brown exterior. Despite appearances, the flesh has a nice, smooth texture with that signature russet nutty sweet flavor. These are very dry apples.

Granny Smith (not an heirloom): the go to sour apple. These apples are just very VERY sour.
Baldwin: just a good apple. Crisp and sweet-tart. Not much else to say. Gets a couple extra points cause it’s good to cook with.
Golden Delicious (not an heirloom): nice and crunchy. Good go to. Good sweet flavor and color. The apple does exactly what it advertises.
Kandil Sinap: loooooooooong apple. Like. The shape on these dudes is insane. The color dynamic splashes of bright green and red. The texture is crisp and the flavor is nice and tart with a hint of sweet. Also these keep for MONTHS.
Winter Banana: another apple with a fun name. The winter banana is smooth and crisp, but it does bruise easy. It’s pleasantly tart and almost has some notes of pineapple.

Burgundy: the color on these is in the name, and the color of the skin almost melts into the flesh; a cross section of this apple is a sight to behold. Flavor wise it’s a more tart apple and its crisp but can soften quickly.
Gala (not an heirloom): good but not great. Will do if nothing else is around.
Gravenstien: good flavor. A more sour variety than sweet. Texture is meh.
Jonagold (maybe not an heirloom): Jonagolds are…fine. Just fine. Good for eating and cooking.
Cortland: good for cooking. Eating…ehhhhh
Winesop: tends to be a bit soft for my liking but if that’s what your into that I guess. Lovely color. The flavor is sweet with a nice little bit of sharp.

Today’s side by side by side was Lemon beers. First up was Camp ShandyShore Lemon from Toppling Goliath Brewing out of Decorah, IA. The only one of the 3 I had had before, this was even better than I remembered it. Lemony with a sweetness in the background, this is very crushable. Next up was Lemon Slice from Prairie Artisan Ales out of McAlestar, OK. A sour ale brewed with lemon zest, lemon juice & vanilla this was excellent. Crisp & lemony, I didn’t really pick up on the vanilla, but this was great regardless. Last up was Lemon Bomb Tart ‘n Juicy from Epic Brewing out of Denver, CO. Lemony & tart with a bright flavor, this was a nice way to round out the three. The first two tied for my favorite but lemon bomb came in a very close second. I’d gladly enjoy any of these again.

So Milk & Cheese aren't the only gin fans out there,there's a good number of Tiki drinks that use gin instead of rum. So in keeping with the gin roll I'm on,here's some more to pleasure your pallet.
Mix #60 Passion Cocktail
2oz gin 3/4oz passionfruit syrup 3/4oz lime juice
Shake with plenty of ice.
A simple concoction from Trader Vic's,this has a sweet taste similar to a Saturn,but only requires three ingredients. An excellent drink to whip up for snooty G&T friends you're trying to bring over to Tiki.
Mix #61 Bermuda Hundred
1.5oz gin 1.5oz pineapple juice 1/2oz Campari 1/2oz orgeat 1/2oz lime juice
Shake with ice.
So this is interesting. I'm not generally into Campari because of its bitterness,but this drink carries it well. It's sweet with a Campari finish. I was surprised how much I liked it.
Mix #62 Garden Party
2oz gin 1oz blanc vermouth 3/4oz lemon juice 1/2oz agave nectar 1/4oz lime juice
Shake with ice and pour into double rocks glass.
Another interesting drink in how the flavor bounces back and forth between sweet and tart. As the name suggests,it would make for a good party drink.

H-whatever-alphabet is the Hawaiian name for the rectangular triggerfish,the state fish of Hawaii. No,I can't pronounce it either. I'm sure the bartenders in Hawaii will get it if you ask for 'the gin drink named after the state fish'(they're used to Haoles). This is a tart drink,pretty much the opposite of the Saturn. Not really my thing,but if you like sour you'll like this.
So go ahead and add some non rum liquors to your home bar. Just be careful;gin has a reputation for blistering hangovers if overused.

Newly opened, Azizam started as a pop-up a few years ago. The owners are Persian and the casual restaurant features homestyle food, including housemade bread, desserts, and Persian staples (mazeh/small cold dishes), hot dishes (khoresht, kofteh), and sandwiches (beef tongue, kuku). They offer a few housemade shrubs, natural wine, and beer. You can also buy a whole loaf of barbari bread ($12).
The desserts looked amazing. Persian cream puff with rosewater and pistachio. Napoleon cake with Persian flavors.
Braised beef tongue sandwich ($12): thick slabs of tender warm beef tongue, house pickles (crunchy and sour), fresh herbs, fresh onion, fresh tomato slice, tucked in a housemade barbari bread sprinkled with sesame seeds. On the smaller side but the best in town, thanks to the housemade bread (like a flatbread), generous amount of tongue, and the fresh veggies. Everything’s warm and comforting, but the crunchy pickles add bright flavor and crunch.
Cherry limeade: Made in house, very nice, sweet and tart, with fresh mint
Mazeh plate ($18): your choice of two mazeh (I picked wild shallot yogurt and shirazi), house pickles, feta, fresh herbs, & two small pieces of house barbari bread. It’s meant for sharing but very small. Everything was excellent though. The yogurt was thick and creamy, the shirazi had bigger pieces of tomato and cucumber with onion and mint, and the pickles were crunchy. Wish they doubled the amount of bread.
Ash-e-jo ($8 cup): a hearty soup of barley, bean, and mixed grain with fermented why, mint oil, and fried onions. Thick enough to be considered a stew. Lots of veggies, beans, and grains. Very good.
The space is very cute (green and white theme with colorful stools and plants) with a good-sized covered outdoor patio and some indoor seating. It has a very casual sidewalk café feel. Service was very friendly.
