Personally, I've always headcanoned that some horse families have more than a long lineage like the Apples and Pies, but perhaps due to something such as a curse or heightened magical power, they have little physical quirks.

This allows me to design characters that have, for example, moving coat patterns (think the pink/blue swirl dress in Sleeping Beauty, or Aurora Borealis. Some of them even just have simple designs, such as gentle waves moving along their fur at the edge of their hooves or a mane that constantly looks like it's burning), certain spikes in color due to something (such as some horse named idk Pear Deck getting super neon colored if they eat any pears, and it dies down the longer they go without it. Completely harmless if you don't count eyestrain), patterns or marks that change with natural order (something like an Apple who has a grey apple for their cutie mark, until zap apple season where it turns rainbow, changing seasons like a Deerling/Sawsbuck, or moon phases for Luna's mark), or even just how they speak being strange. I even have one lady named Memory Fields, who's cutie mark is a field of flowers. Whenever she reflects on her life, the flowers will bloom, bud, and even wilt depending on how she feels about those memories.

There's also the curses, such as my "crystal" pony who's based on Uranium, Ninety-Two. She looks entirely grey with slight green coloring, but glows green in the dark and makes people around her sick. A couple I use a lot for "curses" in a family, sometimes just passed genetically such as mutations or extreme cases of magic, are things like having so much magic in their system, they project their dreams while they sleep, magic seeps down into a fog and obscures them without their control, extreme lethargy at all times except a certain window of time such as sunrise/set, not being able to see magic auras, and manes and tails that grow uncontrollably related to emotions. (For this one, imagine an extremely shy horse who will get uncomfortable and then hide in their hair.)

It's extremely fun to use magic in ways like this honestly, it allows for a lot more creativity in design and character. You may not be able to get the same type of emotions when, say, you have a character with a lot of secrets and is at risk at all times. It may add more desperation to their situation to have them uncontrollably project thoughts when they lose focus. Or, just have a horse who's practically a living calendar. Sorry this got long, but I do hope you enjoy.
