It isn’t so much losing control as it’s getting to the point where you know them so well, you know exactly what they would say, how they’d feel etc. You know more about their interior lives than appears on the page. Writing them becomes a doubly subconscious process, because you’re using your own and theirs. In editing, you spot the false note, where your own subconscious offered something theirs wouldn’t have done. At the same time, you have to be able to step back and consider them as others would. That’s the place I’m usually in when I talk about characters in interviews, which is why it does indeed sound as though they’re people I know, on whom I’m taking notes. One of the reasons you’ll never find me teaching a creative writing course is that I find it unhelpful to try and analyse the subconscious part of my process, which I don’t think can be taught. It either happens or it doesn’t, and with luck you get better at harnessing it. I discuss this a bit in the On Writing videos on my website. If you’ve watched them you’ll understand when I say that I give interviews from the shed, not the lake.

Watched The Narrow Road to the Deep North, which as well as being skilfully told with wonderful performances had some scenes that were really breathtakingly well-created. I will never get over the car crash - I rewound it several times - and there were many scenes almost as good.
