A recipe for Tah Chin, an out-of-this-world delicious, artistically colorful and healthy Iranian crunchy saffron rice Souffle’ cake consisting of rice, yogurt, saffron, and eggs, often filled with chicken, vegetables, fish, or red meat stuffing. Tahchin is composed of two different parts: The thin Tah-Dig part which includes the crunchy layer at the bottom (TAH) of the cooking pot (DIG) and the second part which is the white rice.
