Persian Wedding Rice #Sikandalouscuisine My adaptation of Presian wedding rice - it's golden , glistening and so pretty! Flavours laced with butter and spices , piled with nuts and gem colored fruits. In Iran, it is typically served at weddings or other celebrations and I am told the crust should be a bit more burnt ,and each guest gets a bit of that burnt crust too for added flavour . I was planning on making the recipe from ZAHAV but found it a bit bland , so brought in more elements from David Tanis's recipe and together the recipes worked beautifully. 2 Cups Basmati rice Kosher Salt 6 Tablespoons Unsalted Butter. 1 Large Onion Diced Small. ¼ Teaspoon Saffron - Crumbled and soaked in 1/4 cup hot water. A large Pinch EACH of ground cinnamon , ground cardamom , ground allspice, black pepper , ground cumin. ⅓ d Cup EACH chopped dried apricots,dried prunes and date along with blanched slivered almonds , chopped pistachios. PREPARATION 1. Bring 3 quarts water to a boil in a large pot with 2 tablespoons of kosher salt. Add the rinsed rice and boil, stirring occasionally, for 5 minutes, then drain well in a colander. 2. Heat 1 tablespoon butter in a small skillet over medium heat. Add the onion, season lightly with salt and cook until softened and lightly colored . Moisten with 1 tablespoon saffron water and stir in the cinnamon, cardamom, allspice, black pepper and cumin. Cook for 1 minute more. Stir in the apricots, raisins (or currants) and barberries (or cherries or cranberries). 3. Melt 4 tablespoons of butter in a Dutch oven over medium heat. Spread half the par-cooked rice over the bottom of the pot. Spoon over the onion-fruit mixture, then the remaining rice. Leave the pot on the flame, uncovered, for 5 to 8 minutes to gently brown the rice. (Do not stir or move the rice — you will need to rely on your nose to tell if the rice has browned.) 4. Drizzle the remaining saffron water over the rice and put on the lid. Adjust the heat to very low and leave undisturbed for 30 minutes. Fish Green Masala #sikandalouscuisine I had made this and a prawn dish just before lockdown , but did not post it as that Time we all were running around trying to get organised and most like me didnt have fish etc at home. Things are better now - and here is what I had cooked a few weeks back Fish Green Masala #sikandalouscuisine Easy and delicious - fish cooked in banana leaf done two ways . 1 Tablespoon Yellow Mustard Seeds. 1 Tablespoon Black Mustard Seeds. 4-5 Green Chillies - Adjust. 4 Tablespoons Chopped Green Dhania. 1 Heaped Teaspoon Garlic Paste. 1 Teaspoon Lemon Juice. 1 Teaspoon Hung Curd. Salt. Make a chutney , set aside for 20 minutes for flavours to develop then taste and adjust .The flavours should be on the sharper / stronger side . Apply this chutney on fish of your choice . I used it on a whole pomfret wrapped in a banana leaf and cooked 6-7 minutes on each side on a lightly oiled non stick pan . Taka Pole / Buttermilk Pancakes Tomato Chutney #sikandalouscuisine Recipe Credits KARWAR CUISINE This is a lovely pancake from a small coastal town knows as Karwar in Karnataka . This book is a gem and is written to preserve and promote the cuisine of this town which is near extinct due to migration. 2 Cups Rice. 1/2 Cup Sour Buttermilk. 1/4 Cup Jaggery. Salt Soak rice overnight in some water , drain and grind to paste with buttermilk. Add jaggery and salt , some buttermilk if needed to get a dropping consistency. Pour some batter onto an oiled pain , in 15 seconds you will see some bubbles , flip , cook another 10 seconds and serve with a spicy chutney. The author served these pancakes with a ginger , coconut and green chili chutney. I used tomato chutney , recipe shared below. Golbhenda Ko Achaar ( Nepali Tomato Chutney ) 4 Red Tomatoes. 3-4 Flakes Garlic. 3-4 Dried Red Chillies. A pinch of Timur Powder. ( Make w/o if you don't have it ) 5-7 Green Chilies ( With Slits ) 80-100 Ml Mustard Oil. 1. On a hot tawa / pan dry roast the red chilies till they change color , for that smokey flavor you can char one . Set aside for later use. Roast the tomatoes on the tawa till the skin shrivels and they break . Charred skin is an asset her ! Retain all pulp and juices. 2. On a sil grind the red chilies and garlic , then mash the tomato pulp into it , make a semi lumpy paste .Add salt and timur powder. Place the chutney in a bowl . 3. Next heat the oil , when smoking add the green chilies and keep for a few seconds on the flame and pour it all over the chutney . Mix and eat with just about anything , it's delicious ! Easy Orange Pound Cake #sikandalouscuisine Preheat Oven 180C Bake 35-40 Minutes. Recipe adapted from Dels Cooking Twist. This is the easiest cake ever, super moist and delicious. 160 Grams Flour. 160 Grams Castor Sugar. 3 Large Eggs. 150 Grams Butter - I used 100 grams butter + 4 Tablespoons Olive Oil. 1/2 Teaspoon Baking Powder. 1 Large Orange - Juice + Zest. 3 Tablespoons Chopped Walnuts - Optional In a large bowl, beat the eggs and sugar until pale and fluffy. Sift in the flour with the baking powder, stirring well. Melt the butter in a saucepan add oil if using and pour it into the batter.Juice and zest the fresh orange and incorporate. Macaroni Dil Khush #sikandalouscuisine Sikandalous Cuisine crossed 38000 members today and what better way to celebrate other than with some crazy ChatPatta fooD ? We junked the rules let our imagination go wild and ended up with a very satisfying MACARONI DIL KHUSH ! No fixed recipe or ingredients , go with what's at hand and cater to your taste buds. We made 1Kg macaroni , recipe for 2 cups shared. 2 Cups Macaroni - boiled al dente. 1 Cup Milk. 1 Cup Hot Water. 1 Tablespoon Butter. 1 Tablespoon Oil. 2 Maggi Soup Cubes. Britannia Cheese To Taste. 2 Teaspoons Bolst's Hot Curry Powder - Sambar powder would be perfect ! Chilli Powder. Dried Herbs. 3 Tomatoes Chopped. 1 Onion Chopped. 10 Cloves Garlic Chopped. Green Chillies. Herbs. Salt. 1. Boil macaroni is plenty of water to which 1 teaspoon oil and salt is added , drain , reserve the water. 2. Saute tomatoes onions chillies , garlic together add in chopped veggies if you like , season. 3. Heat oil and butter , add maida and cook a minute , slowly build up the sauce adding milk , allow it to thicken , add in macaroni water and soup cubes , mix . 4. As white sauce thickens tip in all masalas , grated cheese , allow it to gently bubble. Taste , flavours should be on higher side. 5. When ready to eat slide in boiled macaroni , mix and simmer 2 minutes adjusting consistency with more milk / water and flavours too. Macaroni Dil Khush seriously makes the dil very khush ! Soft Whole Wheat Bread #sikandalouscuisine Recipe Credits Bakingamoment 475 Grams / 3 & 3/4 Cups Whole Wheat Flour - May need more. 1.5 Cups Warm Water. 1 Packet / 7 Grams / 2 Teaspoons Dry Yeast. 85 Grams / 1/4 Cup Honey 3 Tablespoons Butter. 1/4 Teaspoon Salt. Place warm water in a bowl , sprinkle yeast , set aside a few minutes till its frothy then add in butter and honey. Add in 2 cups of flour till its moistened beating on medium for 3 minutes , and slowly add the rest of the flour until dough pulls away clean from the sides of the bowl. You may need to add in a another 1/4 to 1/2 cup flour and knead for another 5-7 minutes till your dough is smooth and elastic. Place dough in a greased bowl lightly covering it with plastic / damp cloth for 45 minutes till it rises and doubles , this time will vary according to the weather. Meanwhile prepare a 9X5 loaf pan lightly oiling it . When dough has risen punch it and shape it into a loaf placing it in the prepared pan , covering again. Wait another 35-45 minutes for it to rise. Solar Baked Potato Almond Flour Bread #sikandalouscuisine OR Preheat Oven 180 C Bake 35-40 Minutes* Loaf Tin 20 X 10 cm Loaf Tin Prepared. 50 Grams Rolled Oats. 1 Teaspoon Herbs - I used chopped rosemary leaves. 1 Heaped Teaspoon Garlic Paste. 50 Grams Pumpkin Seeds. 2 Teaspoons Caraway Seeds / Shahi Jeera. 2 Teaspoons Nigella Seeds / Kilonji 150 Grams Almond Flour. 50 Grams Wholemeal Flour - I used Whole Wheat Flour or Atta. 1 Teaspoon Baking Powder. 1 Teaspoon Baking Soda. 2 Large Eggs. 80 Ml Sunflower Oil. 1 Tablespoon Honey. 80 Grams Cream. 100 Grams Cheese - Finely Grated. 200 Grams Boiled Coarsely Mashed Potatoes Salt . Baking: 1. Mix oats , thyme , nigella , caraway and pumpkin seeds in a bowl , set aside. 2. Mix flours and baking powder along with baking soda in a separate bowl , mix to ariate. Add potatoes and the oats mixture. 3. In a separate bowl whisk eggs , garlic paste , cheese , oil and cream , pour over the flour mixture and combine well , use hands or spatula . 4. Karela Pyaz Ki Sabzi #sikandalouscuisine Recipe Inspired by Kalpana Talpade 's Karelas. These karelas in all their simplicity were super delicious ! 250 Grams Karelas/Bitter Gourd 2 Large Onions - Cut medium pieces. 1/2 Teaspoon Haldi. Broken Red Chillies. Juice of 1/2 Lemon - Adjust at end. 3 Tablespoons Oil. Salt As Needed. 1-2 Sprigs Curry Patta Leaves Cut karelas in roundeld , salt and set aside for an hour , gently squeeze and wash out the salt. Heat oil , fry curry patta and broken red chillies ,10 seconds later tip in karelas cook uncovered till karelas are half done. Now add in onions and haldi ,continue to cook uncovered till done. Tamatar Aur Kaddu Beej Ki Chutney #sikandalouscuisine This yum chutney was made by my help and son by other parents Gautam Kunwar - totally his initiative - this is an outstanding chutney . The best part was he sun dried kaddu seeds at home which often get discarded when cooking kaddu. 250 Grams Tomatoes. 40-50 Grams Pumpkin Seeds. 1 Teaspoon Garlic Paste. 1/2 Teaspoon Adrak Paste. 4 Green Chillies. Salt. Juice of 1 lemon - Added after chutney is made. Bhuno / roast tomatoes till charred on a tawa . Roast pumpkin seeds on a tawa . Grind all ingredients together to a chutney , add lemon juice and adjust flavours . Rustic Atta Besan Biskut #sikandalouscuisine Preheat Oven 180 C - Bake 15-17 minutes We all have " accidents " in the kitchen - undercooked / overcooked / Burnt ! Well my desi atta besan biscuits were a mix of baked and a bit over baked. While these biskuts won't win any biskut beauty contest trust me they tasted awesome . 1 Cup Atta. 2 Tablespoons Besan 20 Almonds Coarsely Chopped - Optional. 60-70 Grams Grated Jaggery / Gur. 40 + 40 Grams Chilled Butter and Ghee - You can use both or either. 3-4 Tablespoons Milk - If needed. 1/2 Teaspoon Elaichi / cardamom Powder. Pinch of Crushed Black Peppercorn. Mix besan and atta add in spice and using your finger and thumbs work in butter and ghee to get a breadcrumb consistency . Next add jaggery and almonds if using and bring together the mixture , you aren't making atta for roti so no kneading , just bring it all together. Try forming small balls , if they hold well and good , if not add in milk and make balls. You can lightly flatten them or leave them as they are and set them to bake. I overbaked mine -17 minutes , I guess the perfect even look would be 15 minutes. Vegetable Korma #sikandalouscuisine Recipe Credits Arati Sikand Rao 250 gms boiled mixed vegetables (carrots,cauliflower, beans,potatoes) 1 Onion Finely Chopped. 1 Teaspoon Ginger Chopped. 1 Teaspoon Garlic Chopped. 1 Finely Chopped Tomato. 3 Cloves. 1" Cinnamon. 5-6 Black Peppercorn. 1 Tej Putta. PASTE: 1 Heaped Teaspoon Dry Roasted Chana Dal. 1 Heaped Teaspoon Dry Roasted Khus Khus. 1 Green Chilli. 2 Tablespoons Freshly Grated Coconut. 1 Teaspoon Sauf. 1 Teaspoon Jeera. 10 Almonds ( original recipe uses cashew ) Grind the above into a fine paste. Method: In a bit of oil, add the tejpath,cloves,peppercorns, cinnamon , when aromatic tip in onions, ginger garlic and saute for 2-3 minutes , now add tomatoes and cook till tomatoes are mushy. Add the PASTE cook for 3-4 minutes , and then add vegetables , cook covered splashing water if needed till vegetables are done.
