2 ounces mezcal, like Del Maguey Vida Clásico

3/4 ounce orange juice, freshly squeezed

3/4 ounce pickling brine

1/2 ounce simple syrup

1/2 ounce lime juice, freshly squeezed

6 dashes habanero bitters

2 ounces Mexican lager, like Modelo Especial

Garnish: orange twist

Combine all ingredients except lager and garnish into a cocktail shaker filled with ice. Shake for 10–15 seconds until well chilled. Add lager to shaker, then strain the entire drink into a footed pilsner glass over fresh ice. Garnish with an orange twist.

1 oz. -or- 30 ml. Lime Juice

2 oz. -or- 60 ml. Reposado Tequla (Fortaleza)

Rim glass with Tajin. Add ice and shake. Strain into glass. Top with seltzer.

Misi’s Negroni Sour

3/4 ounce gin, preferably Beefeater

3/4 ounce Misi Bitter (see below)

3/4 ounce bianco vermouth, preferably Carpano

1/2 ounce orange juice

1/2 ounce lemon juice

1 small egg white

Combine all ingredients in a cocktail shaker then dry shake without ice to combine. Add ice, and shake vigorously. Strain into a coupe glass.

1 part Caffo Red Bitter

1 part Martini & Rossi Riserva Speciale Bitter

1 part Select Aperitivo

0.125 oz. (barspoon) absinthe

Add all ingredients to a mixing glass with ice. Stir well for 10 seconds (if using small ice) to 25 seconds (if using very large ice), strain into a cocktail glass or coupe, and garnish with a lemon peel.

2 dashes absinthe

1 dash orange bitters (optional)

Add all ingredients to a mixing glass with ice. Stir for about 10 seconds (if using small ice) or up to 30 seconds (if using large ice), until cold. Strain into a stemmed cocktail glass, express the oils of a lemon peel over the top and garnish with the peel and, if desired, a cocktail cherry.
