A delightful recipe for chutney that pairs the sweetness of crystallized ginger with the tartness of cranberries, ideal as a side dish or condiment for holiday meals.
Ingredients: 2 cups fresh cranberries. 1/2 cup crystallized ginger, finely chopped. 1 cup granulated sugar. 1/2 cup water. 1/4 cup orange juice. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon salt. Zest of 1 orange.
Instructions: Cranberries, crystallized ginger, sugar, water, and orange juice should all be combined in a medium saucepan. Over medium-high heat, bring the mixture to a boil while stirring often. After the cranberries pop and the mixture thickens, reduce the heat to low and simmer for 15 to 20 minutes. Add orange zest, salt, ground cloves, and cinnamon. Simmer for a further two to three minutes. Take it off the stove and allow it to come to room temperature. Spoon the chutney into an airtight jar or sterilized jar. Allow to cool for a minimum of two hours prior to serving. Savor your homemade crystallized ginger chutney and candied cranberries!

Ingredients: 8 oz spaghetti noodles. 1 lb shrimp, peeled and deveined. 2 avocados, sliced. 1 cup cherry tomatoes, halved. 1/4 cup grated Parmesan cheese. 2 tbsp olive oil. 1/4 cup Caesar dressing. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Follow the directions on the package to cook the spaghetti noodles. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. It will take about two to three minutes on each side for the shrimp to turn pink and opaque after you add them. Add pepper and salt. Add the cooked noodles, shrimp, avocado slices, cherry tomatoes, and Parmesan cheese to a large bowl. Add the Caesar dressing to the noodle mix and gently toss to coat. Put the noodle mix into bowls for serving. If you want, you can add more fresh parsley and Parmesan cheese as a garnish. Serve right away and enjoy!

Ingredients: 8 oz pasta of your choice. 2 chicken breasts, thinly sliced. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 cup chicken broth. 1 cup heavy cream. 1/4 cup grated Parmesan cheese. 2 tablespoons lemon juice. 1 teaspoon lemon zest. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Cook pasta according to package instructions. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add sliced chicken and cook until no longer pink, about 5-6 minutes. Remove chicken from skillet and set aside. In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Ingredients: 2 cups gingersnap cookies, crushed. 1/2 cup unsalted butter, melted. 1 package 8 oz cream cheese, softened. 1 cup powdered sugar. 1 teaspoon vanilla extract. 2 cups whipped cream. 1 cup spiced apple compote. 1/2 cup caramel sauce. Ground cinnamon, for garnish.
Instructions: To make the crust, put melted butter in a bowl and mix in crushed gingersnap cookies. Fill glasses or jars with gingersnap crust and press it into the bottom. Cream cheese, powdered sugar, and vanilla extract should be mixed together until smooth in a different bowl. Add the whipped cream slowly and mix it in well. In the serving glasses, put the cream cheese mixture on top of the gingersnap crust. Spiced apple compote should be put on top of the cream cheese layer. Pour caramel sauce on top of the apple compote layer. Repeat the layers until the glasses are full. Add a dollop of whipped cream on top to finish. Add ground cinnamon to the whipped cream to make it look nicer. Put the parfaits in the fridge for at least two hours before you serve them. Ingredients: 1 lb ground chicken. 1/2 cup roasted Hatch chiles, diced. 1/4 cup breadcrumbs. 1/4 cup grated Monterey Jack cheese. 1/4 cup diced red onion. 1 clove garlic, minced. 1 egg. Salt and pepper to taste. 4 burger buns. Lettuce, tomato, and mayonnaise for garnish.
Instructions: In a mixing bowl, combine ground chicken, diced Hatch chiles, breadcrumbs, Monterey Jack cheese, red onion, minced garlic, and egg. Season the mixture with salt and pepper to taste. Form the mixture into four burger patties. Preheat a grill or stovetop skillet over medium-high heat. Grill or cook the burgers for about 5-7 minutes per side or until they are cooked through and have a nice char. Toast the burger buns on the grill or in a toaster. Assemble the burgers by placing lettuce and tomato on the bottom bun, followed by the cooked chicken Hatch chile patty. Spread mayonnaise on the top bun and place it on top of the patty. A filling and tasty lentil curry that is vegan, cheap, and great for making ahead of time. It's full of fiber, protein, and spices that make you feel good.
Ingredients: 1 cup dried green lentils. 1 onion, chopped. 2 cloves garlic, minced. 1 tbsp ginger, minced. 1 can 400g diced tomatoes. 1 can 400ml coconut milk. 1 tbsp curry powder. 1 tsp turmeric. 1 tsp cumin. 1 tsp paprika. Salt and pepper, to taste. 2 tbsp olive oil. Fresh cilantro, for garnish.
Instructions: Run cold water over the lentils to clean them. Put olive oil in a big pot and heat it over medium-low heat. Put in the ginger, garlic, and onion. Saut until the meat is soft. The turmeric, cumin, paprika, and curry powder should all be mixed in. Keep cooking for one more minute. Put in the lentils, coconut milk, and diced tomatoes. Add pepper and salt. Bring to a low boil, then turn down the heat. Put the lid on and cook for 25 to 30 minutes, or until the lentils are soft. Add fresh cilantro on top and serve over rice or with naan bread.

Cover the potatoes in the baking dish with half of the sauce. Put half of the cheese shreds on top of the sauce. Add more layers with the rest of the cheese, sauce, and potatoes. Put foil over it and bake for 45 minutes. Take off the foil and bake for another 15 minutes, or until the potatoes are soft and the cheese is brown and bubbly.
