Peach charlotte..has little pears at the bottom right after the imbibing sugar that is placed on the sponge gateau but it had peach puree….i used fold in method because the whisking of egg whites causes volume…….folding in the dry ingredients allows all the ingredients to be mixed….not making the mixture to collapse. Again an arm exercise if a mixer is unavailable!!

Mogador....chocolate mousse...with framboise(raspberry) jelly in the middle and at the top....sponge cake at the bottom via folding in method for both the mousse and the sponge gateau☺ Serious excercise with the arms....feel like your from a gym arm session!!but if you do have a mixer do not hesitate at all.lol!!

Roasted duckling with caramelized turnips and baby onions and drizzled with white wine jus….the duck jus was de glazed with white dry wine….but i used veal stick for reduction
