Cover and cook on low for 4-6 hours or until chicken is cooked through and vegetables are tender. In the last 30 minutes of cooking, add rice noodles and chicken broth to the slow cooker. Instructions: Prepare all the ingredients and set them aside. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water and rotate it for about 10-15 seconds or until it becomes soft and pliable. Place the softened rice paper wrapper on a clean surface or a damp kitchen towel. In the center of the wrapper, place 2 cooked shrimp, lettuce leaves, bean sprouts, cucumber, carrot, cilantro, mint, and basil leaves. Fold the sides of the wrapper over the filling, then fold the bottom of the wrapper over the sides and roll tightly to encase the filling. Repeat with the remaining wrappers and filling. Arrange the cauliflower florets on a parchment paper-lined baking sheet. Bake for 15 to 20 minutes, or until tender and lightly browned. Heat the coconut oil in a big skillet over medium heat. Add the red pepper flakes, grated ginger, and minced garlic. Saut for one to two minutes, or until aromatic. After adding the sauce to the skillet, simmer it. Cook until the sauce thickens, about 2 to 3 minutes. When the cauliflower florets are baked, add them to the skillet and toss to coat in sauce. Cook the cauliflower for a further two to three minutes, or until it is thoroughly heated. Before serving, garnish with sesame seeds and sliced green onions. Put some broken up feta cheese and chopped fresh mint leaves on top of the beef. Add a little extra olive oil and serve with vegetable sticks or pita bread to dip.
