This isn't professional or academic just for fun
1. Kyo: can mean apricot and can symbolize hope for the future, he is looking at the bright light and holding his hand to it which could symbolize the future and tohru who is with sunflowers at the end and reaching out for kyo's hand, the bamboo can symbolize either enlightenment; the long future with tohru; or the prison he was supposed to be in
2. Hatsuharu: can mean new year and/or early spring, red moon behind him means a bad omen, he's holding a wilting flower believed to be a red rose which symbolizes deep love, the pine behind him also symbolizes a hopeful future, so to tie it all together even though things are tough with his relationship with Rin it will get better in the future, and is January
3. Kisa: comes from kisaragi or the changing clothes month/month of the tiger/month of plum/ February, the plum around her tells us spring is coming soon, the white scarf she wears love; ambtition; self esteem ( which she struggles with after what happened with Akito ), the zori she wears symbolize gaining attraction ( Hiro ), plum symbolizes perseverance as well as the ending of a deadly winter and beginning of a new spring, to tie it all together she's sprouting from the cold winter a.k.a her time of being mute and now is changing
Note: Kureno and Momiji's names were switched when Natsuki Takaya was making fruits basket
4. Kureno: kurenoharu/month of the rabbit/ month of late spring/ March, cherry blossom can mean renewal; kind; gentle; and fleeting life, kureno also holds a big red cloth probably referring to his whole relation to Akito as Akito later has a lot of red in the background, this could either symbolize how his connection broke off early; he's going to die soon; or has to leave soon
5. Hatori: konohatorizuki/ the month of taking leaves to silk worms/ the month of the dragon/ April, the wisteria symbolizes love ( his relationship with Mayu and Kana); support ( tohru, his love interests, and the madubachi trio); sensitivity; bliss; and tenderness as well as our expanding consciousness which is odd due to him being the one who erases memories through hypnosis, the gloves represent power and protection, the eclipse symbolizes amaterasu's( the sun goddess in japanese folklore) hiding which she is then taken out of the cave by a party with a mirror [( a mirror blinded hatori) & ( could also be kana's memories)], the eclipse seen can also symbolize what he was going through after his original relationship with kana ( the woman that he loved, memories wiped, said what comes after winter); that it will get better as he is later seen with Mayu ( the teacher who tried a relationship with Shigure that didn't work out well) who could be on the other side of the eclipse
6. Ayame: can mean iris, ayamizuki/ month of the irises/ month of the snake/ May, the iris symbolizes good news ( something he says he has often to Hatori or Mine); glad tidings; loyalty; wisdom; compliments; hope; eloquence; communication; faith; and could also symbolize him trying to purify himself from the past and through doing so talk to Yuki
7. Isuzu ( Rin ): means dependable bell which represents her personality and appearance, isuzukuretsuki/ month of cool closings(last full spring days)/ month of the horse/ June, the butterflies represent her love with Hatsuharu as she stares back at him walking away, peonies are known as the king of flowers and symbolize good fortune; bravery ( loving haru ); anger ( her past with her stinky family); shame ( possibly dealing with what happened and how her estranged family views her now ); honor; taking risks gives great rewards ( again loving haru ); and on tattoos it symbolizes a devil may care attitude as seen with her
8. Honda, Kyoko: means ( last name, first name order ) original rice paddy; child of today, the red spider lilies symbolize never to meet again ( possibly tohru as Kyoko is seen near a light possibly being tohru); abandonment( what she thought she had after losing her husband); hell; afterlife; and reincarnation, and the crimson butterflies ( the crimson butterfly her nickname ) symbolize guidance for death ( her husband and herself) and in japanese poetry star crossed lovers being together in death
9. Hiro: fumihirogetsuki/ month of publication/ month of the ram and or sheep/ July, the red clover could mean industry possibly relating to his month name and want to grow up ( a bit of a stretch, I know or his military esc. outfits), the zori he wears symbolizes gaining attraction ( Kisa ), the white clover symbolizes promise ( his promise to protect kisa as a princely figure for tohru and himself as well as kisa kind of), the Bush clover represent melancholy ( maybe what happened with kisa and akito ) and unrequited love( this really doesn't fit ), the pea plants symbolize blissful pleasure ( his time spent with kisa ); friendship ( tohru and kisa); kindness; and goodbyes ( his ties to the zodiac and tohru)
10. Ritsu: maybe means benefit ferry ( possibly referring to mediation between gods and humans that monkeys had and or his journey for confidence ), odakaritsuki/ rice harvest month/ month of the monkey/ August, the harvest moon could symbolize the inner joy when one helps others and/or the fruits of one's shared gifts, the fields of susuki grass which symbolizes something simple yet beautiful ( referring possibly to ritsu, his journey to confidence, his interactions with mitsuru and tohru, or his relationship with mitsuru ), the geese symbolize that a new season is coming; bravery ( going to see Shigure and Tohru); communication ( something he struggles with); and loyalty ( whatever god he worships)
11. Momiji: means maple tree, momijizuki/ autumn leaves/ month of the rooster/ September, the yellow part of the chrysanthemums symbolizes love; joy; fortune; neglected love( his mom and possibly tohru if it counts); and familial love (his father and secretly momo), and the red part of the chrysanthemum symbolizes feelings of deep love and passion( tohru); the big sakazuki cup again symbolizes deep love; and promises ( momo and dad) or it could be a tamadon bowl which can symbolize again promises and a ball and that can symbolize young femininity; celestial body ( Akito ); perfection ( doesn't fit ); eternity ( again his relationship to his mother or again Akito ), the kanzashi symbolizes the previous symbolism and protection ( maybe his father from his mother finding out he exists being "'the creepy rabbit creature'" or something along those lines that she called him when he was born ), the geta symbolize something light; strong; and flexible
12. Shigure: shigurezuki/ autumn showers month/ month of the dog/ October, the maple tree as a whole symbolizes (the first 3 are what he tries to be) elegance; beauty; grace; ( the rest are what shigure has, is, and does)balance; love; intelligence; offering; promise; and practicality which is kind of the opposite of the type of stuff he does
13. Kagura: kagurazuki/ month of shinto song and dance/ month of the boar, the willow symbolizes ghosts, the word for frog in japanese also means return, frogs symbolize people returning to places of origin, the frog also symbolizes change ( either her love for kyo or what she's going to do going on from now), the cherry blossom as you might of guessed symbolizes the fleeting nature of life; kind; and gentle ( kind of the opposite of what she is ), the boots symbolize protection ( what she thought she was doing for Kyo ); getting more grounded and/or natural and/or earthy to make her dreams become reality; and looking for boots can symbolize planning for a change, the river where she is near symbolizes the flow of life which eventually ends with death, now, putting all the pieces together you get her dying love for kyo and herself changing
14. Yuki: his name means a reason to hope and could also mean snow ( December and the Macchi relationship), December/ month of the rat, white symbolizes physical purity; death; morning; unlucky; cleanliness; innocence; peacefulness; emptiness; hope; cold; distant; and openness, the transparent hagoromo shawl/tenne/silk shawl/muslin shawl symbolizes high status; flying ( symbolizes: freedom either leaving the main house or his bonds ); and detached view ( possibly his time as child in that room and as well as at first the fanclub's Motoko Minegawa's feelings at first and later rejects her due to finding someone better named Macchi Kuragi); could refer to Tohru's guidance as her name relates to light; see through; clearness; or transparent, paulownia symbolizes the past ( Yuki's horrible history with his mom and akito) ; something favored by the gods; and loneliness, foxgloves represent communication; productivity; intuition; cooperation; confidence; ambition; pride( his brother); insincerity( about going to the family house and his mom when he really wanted his brother to go to the parent teacher conference ); poison(Akito and parents); and immortality( bond and Akito ) ( paulownia is a type of foxglove flower ), elite families would plant in for the birth of a princess (akito in this scenario) for it then to be turned into a dresser and given to the princess once wedded ( possibly the whole time spent with Akito during childhood), the white rose represents innocence; silence; and devotion, and he is facing akito

Akito: red is the theme and symbolizes life; lucky; health; religious fervor; revenge; aggression; anger; love; propriety; and prosperity of the family, the blood symbolizes repulsion ( from their mother and to tohru, kyo, and zodiac relationships); eternal life; curses; sicknesses; redemption; attraction; and massacre ( maybe them, their mom, and Shigure), the hagoromo shawl/ tenne/ muslin shawl symbolizes the same things for Akito just in a different way ( their freedom once they leave their mom and the curse/bonds; family head; and their detached view from their relationship with their cousins), the red camellia could symbolize the divine, camellias can mean either in love ( Shigure ) or perishing with grace ( connections to the original God of the zodiac and the animals within ), the camellia is something heavy in their relationship with Shigure, the camellia is also known as a flower of misfortune in japanese culture because when it dies the head of the flower falls off similar to beheading like the connections of all the zodiac members falling off
16. Honda, Tohru: means original rice paddy; transparent, could be the light in both Kyo's and Kyoko's image, amaterasu light symbolism, sunflowers represent radiance; respect; passionate love
