Today, I swam a legal 200M IM for the first time in my life – never swam long course as a kid. I can’t believe I thought it would be a fun challenge to enter this in a meet.
I did do a pretty good job estimating my seed time though. Dying now.

EASY BAKED PARMESAN ZUCCHINI
Ingredients Serves 4
6 medium zucchini, quartered lengthwise 8 tablespoons grated Parmesan cheese ½ teaspoon dried thyme ½ teaspoon dried oregano ½ teaspoon dried basil ½ teaspoon fine grain sea salt ¼ teaspoon garlic powder Pinch of ground black pepper 2 tablespoons olive oil
Directions
Preheat oven to 350°F (180°C) . Lightly grease a cooling rack and place it on a baking sheet. Set aside. In a bowl, combine Parmesan cheese, thyme, oregano, basil, garlic powder, salt, and pepper. Place zucchini onto prepared baking sheet. Carefully brush with olive oil (even and sprinkle with Parmesan mixture. Place into oven and bake for 15 minutes. Turn on the broiler and broil for 3 minutes, until crisp and golden brown. Serve immediately!

One serving yields 127 calories, 10 grams of fat, 6 grams of carbs, and 5 grams of protein.

Second try at no dough pizza was even better than the first. I didn't make the cream cheese too thin for the "crust" and it firmed up quite nicely. So filling too. I have leftovers for two meals, and my daughter even had a slice.
