Broccoi & Chickpea Rice Bowl
Broccoli Cooked Brown Rice Can of Garbanzo beans, drained, rinsed, patted dry Sliced green onions Sliced almonds Chopped cilantro
Dressing Ingredients: 1 Tbsp fresh lemon juice 1 Tbsp pineapple juice 2 Tbsp Dijon mustard 1 Tbsp olive oil 1 tsp Tamari (gluten-free soy sauce) 1 Small garlic clove, minced 1/4 tsp red pepper flakes Salt and pepper
Instructions: 1. Steam broccoli. Add broccoli, rice, chickpeas, green onions, and almonds to a large bowl.
2. Add dressing ingredients to a small bowl and whisk with a fork until well combined. Drizzle dressing over rice mixture and toss to coat. Season with salt and pepper. Sprinkle chopped cilantro and serve warm.
