Hey fellow foodies!
As a proud Cuban-American woman, there are many dishes that I love from my island. One of my all time favorites, however, has to be chícharo.
Chícharo, or the cuban twist to green split pea soup, is packed with flavor, vitamins, protein, and iron! This delicious meal is the perfect way to soothe your soul, give your body nutrients, and make your tummy happy! It’s like a warm hug from abuela. The special ingredient is lacón, which is a dried ham that re-hydrates while making the chícharo. Every family has their own recipe and way of making it, but my family makes it thick enough that you can spread it over rice.

Hi guys!
So, as many of you know, cooking really is a science, and, in science, there are often many experiments. Sometimes, those experiments fail...my attempt at making baked Mac and cheese was one of those times. 😅
Allow me to rephrase, it wasn’t that the food itself was a failure because it tasted GREAT, it’s just that as soon as I took it out of the oven it fell on the floor. All of my hard work was for naught. I’ll admit it — I sat on the floor and cried. The past two hours of my life had been wasted. However, I wiped my tears, cleaned up the mess, and ordered a pizza, because, sometimes, life is too much and pizza always helps.

Good morning foodies!
A few weeks back I want to Cracker Barrel with my dad and had the yummiest breakfast. Ever since I was a little girl, we’d always have breakfast there together. It’s been a few years since we’ve gone there, so we decided to ball out and revive the tradition on a gorgeous Saturday morning. Check out the link below for the Cracker Barrel menu!
Pictured above is what we ordered:
I ordered breakfast casserole that started with a cheesy hash brown casserole as a base, then layered with a slice of melted cheddar cheese, fluffy scrambled eggs, topped with bacon bits, scallions, tomatoes, and crispy fried onions. It was served on beautiful China platter with two biscuits.
My dad ordered his usual: two eggy-in-the baskets, crispy bacon, and a hash brown casserole.
We spilt some delicious fried apple pancakes that were to die for! 😋

I myself am guilty of binge eating, snacking, and pigging out on food even when I’m not hungry. To combat that, I decided to start making healthy snacks that leave me super full and guilt free! These keto-friendly air-fried creamed spinach stuffed bell peppers are the PERFECT snack, lunch, or dinner. They’re creamy, savory, crunchy, and oh so yummy! These stuffed bell peppers are SO incredibly easy to make and so versatile. All you need is some bell peppers, spinach, shredded cheese, half a block of cream cheese, butter, and garlic salt!
