The ultimate comfort food is this Crockpot Bacon Celery Soup. It's flavorful, savory, and creamyperfect for a cosy lunch or dinner. Celery and vegetables offer a cool counterpoint, and the bacon adds a delicious smokiness.
Ingredients: 6 slices of bacon, chopped. 1 cup of celery, diced. 1 cup of onion, diced. 2 cloves of garlic, minced. 4 cups of chicken broth. 2 cups of potatoes, peeled and diced. 1 cup of carrots, diced. 1 teaspoon of dried thyme. Salt and pepper to taste. 1 cup of heavy cream. 2 tablespoons of chopped fresh parsley.
Instructions: In a skillet, cook the chopped bacon over medium heat until it becomes crispy. Remove bacon from the skillet and set it aside. In the same skillet, add diced celery, onion, and minced garlic. Saut them in the bacon drippings until they become tender. Transfer the sauted mixture into your slow cooker. Add chicken broth, diced potatoes, diced carrots, dried thyme, salt, and pepper to the slow cooker. Stir everything well. Cover the slow cooker and cook on low heat for 6-8 hours or until the vegetables are soft and tender. Use an immersion blender to puree the soup until it's smooth and creamy. Stir in the heavy cream and half of the crispy bacon bits. Let it cook for an additional 15 minutes on low. Serve the bacon celery soup hot, garnished with the remaining crispy bacon bits and chopped fresh parsley.

Ingredients: 1 bag of tortilla chips. 1 cup cooked black beans. 1 cup vegan cheese shreds. 1 avocado, diced. 1/2 cup diced tomatoes. 1/4 cup sliced black olives. 1/4 cup chopped cilantro. 1/4 cup sliced jalapeos. 1/4 cup diced red onion. 1/4 cup vegan sour cream. 1/4 cup salsa.
Instructions: Preheat oven to 350F 175C. Spread tortilla chips on a large baking sheet. Sprinkle cooked black beans and vegan cheese shreds evenly over the chips. Bake in the preheated oven for 5-7 minutes, or until cheese is melted. Remove from oven and top with diced avocado, tomatoes, black olives, cilantro, jalapeos, and red onion. Drizzle vegan sour cream and salsa over the nachos. Serve immediately and enjoy!
