2. Braise-A method of cooking meat slowly in a bit of liquid after browning.
3. Julienne-Cutting vegetables into thin, matchstick-like strips.
4. Mise en place-French term meaning "everything in its place"; preparation and organization of ingredients before cooking.
5. Emulsify- Combining two liquids that normally don’t mix, like oil and vinegar, into a stable mixture.
6. Reduce- To thicken a liquid by simmering to evaporate some of the water content.
7. Blanch- Briefly boiling food, then plunging it into ice water to stop the cooking process.
8. Zest-the outer peel of citrus fruits, used for flavoring dishes.
9. Deglaze -Adding liquid to a pan to dissolve browned bits after cooking meat for added flavor.
10. Garnish -An item or substance used to decorate or enhance the appearance of a dish.
SUATÉ
To enhance the flavor of the dish, you should suaté the garlic and onions in olive oil until they're golden brown.
BLANCH
To enhance the color and texture of the vegetables, you should blanch them in boiling water for a few minutes before transferring them to an ice bath.
ZEST
