It's a drink AND an appetizer
Caprese Gin or Vodka
6 ripe cherry tomatoes, halved
Big handful of fresh basil (we didn't use enough)
1 cup gin or vodka
2 oz olive oil
Infuse for at least 48 hrs at room temperature.
Transfer to freezer overnight to solidify the oil.
Strain out solids.
Tip: muddle the tomatoes and slap the basil to release its flavor.
Martini
2 oz caprese gin or vodka
1 oz dry vermouth
Sprinkle of sea salt
1 bar spoon balsamic vinegar
Shake with ice, strain into chilled glass.
Garnish with mozz tomato basil skewer.
