What is this Ambarella saying?
Ambarella is a fruit that grows in the tropical climate of Sri Lanka. It is also known as the June plum. It is a small-sized green fruit. As I mentioned earlier, this Ambarella is special because of its sweet and sour mixed taste. Therefore, the food made from this Ambarella adds a very delicious and unique flavor. Like the Ambarella Curry that we make today, Ambarella can be used to make many delicious dishes like Ambarella chutney and Ambarella sauce.
Ingredients for making Ambarella Curry
Ambarella Fruit 200g
Suger 4 tbsp
Mustard Seeds 1/2 tsp
Fenugreek Seeds 1/2 tsp
Garlic
Onion
Green Chili
Cinnamon
Cloves
Cumin
Cardamom
Rampe
Turmeric Powder
Curry Powder 2 tsp
Chili Powder 1 1/2 tsp
Salt
Water
How to make Ambarella Curry step by step
First, peel the Ambarella and wash it.
Place a pan on the stove and add some oil to it.
Once the oil is hot, add a tablespoon of sugar to it.
After the sugar dissolves well, add Mustard Seeds and Fenugreek Seeds to it.
When it comes to fry, add garlic to it and temper it.
When garlic tempers, add Onion, Green Chili, Cinnamon, Cloves, Cumin, Cardamom, and Rampe.
When the mixture tempers, add Turmeric Powder, Curry Powder 2 tsp, Chili Powder 1 1/2 tsp, and Salt and mix.
Now add the chopped Ambarella and mix.
Now add about a cup of water to this Ambarella mixture and cook for about 10 minutes with a lid closed.
After 10 minutes, add the remaining 3 tablespoons of sugar and cook for another 5 minutes with a lid closed.

1 Sachet/7g Instant Yeast
1 tsp/6g Sugar
100g Flour (Ideally Bread Flour for better results)
100ml Water
50ml Whole Milk

1 Egg
200g Flour (Ideally Bread Flour for better results)
1 tsp/6g Salt
25g Unsalted Butter

How to make English Muffins step by stepHow to make Poolish
Add yeast, sugar, flour, water, and milk to a bowl and whisk well.
Cover with plastic wrap or a tea towel and leave to rise for about 1 and 1/2 hours.
How to make an English Muffin
After 1 1/2 hours add an egg to this poolish mixture.
Add flour and salt to a mixing bowl and mix.
Add the poolish mixture made earlier to that mixture and mix.
Add butter and mix
Mix the mixture until it becomes dough.
Place the dough on a floured surface.
Cut the dough into 8 equal parts.
Now make the broken dough into balls.
Now place the dough balls in a floured baking tray.
You can use pastry rings if you like. In this case, we place 4 Flour balls in pastry rings and 4 Flour balls as usual. You can customize it in either of these two ways.
Now sprinkle some flour on top of these flour balls.
Cover with a tea towel and leave to bloom for about 1/2 hour.
Now remove the tea towel and place baking paper over it. Place a baking tray on top of the baking paper to prevent the dough from rising during baking.
Bake in a preheated oven at 230 degrees Celsius for 15 minutes. Now eat this English Muffin any way you like. It can be toasted with butter and eaten with jam and ham.

Boiling the potatoes for the curry
Put well-cleaned potatoes in a large pan and add enough water to cover the potatoes500 g potatoes
Boil well for about ten minutes.
Once they’re done, peel the potatoes and cut them into pieces.
Do not add salt while boiling potatoes.
How to Temper
Place a pan on the stove and heat it by adding oil on medium heat.
After the oil is heated, add the curry leaves and the Pandan leaf, followed by the cinnamon, cardamom, and garlic.
Temper these ingredients for about 2 minutes.
Now add green chilies, chopped onions, and 1/2 teaspoon of turmeric powder and temper for another 2 minutes.
Let’s make potato curry
When the onions turn golden in the temperer, add the boiled potatoes.
Gently combine them together for 4-6 minutes on low-medium heat
Mix the potatoes in such a way that they are not crushed.
Add mustard seeds and mix and cook for a few minutes.
Add coconut milk and add salt to season.
Boil on low heat for about 15-20 minutes until the potatoes are soft.

500 g Potatoes
1 inch Cinnamon bark
8 cloves Garlic
1 Onion thinly sliced
½ tsp Turmeric Powder
2 tsp Red Chili Powder
2 tbsp Chili Flakes
1 tsp Aba (Mustard Seed)
1 sprig Curry leaves
2 tsp Lemon Juice
1 tbsp Oil
Salt to taste
INSTRUCTIONS
Boil the potatoes. Peel the skin and cut it into big cubes and keep it aside.
Grind the garlic. keep aside.
Put a pan on the stove and add a little oil.
Once the oil is hot add the cinnamon stick, mustard seeds, and curry leaves and let it crackle.
Add the crushed garlic. let it infuse the flavor into the oil. Add sliced onions and saute until it turns translucent.
Add the turmeric powder, red chili powder, and red chili flakes and mix well. Now, add the boiled and cubed potatoes,
season with salt and mix well. Let the potato mix slow cook with the spices for 10 minutes
Once the potatoes are fully coated with the spices and have come together, add in the lemon juice, mix well and turn off the heat.

INSTRUCTIONS
Finely chop the jackfruit pulp. Crush the jackfruit seeds and add to this.
Now add onion, turmeric powder, turmeric powder, chili powder, rumpe, curry leaves, cinnamon sticks, green chilies and a thin coconut milk and let it boil for a while.
When it boils well, add some milk. Add salt to taste, bring the thick coconut milk to a boil and remove from the heat
